SWEET POTATO SAUSAGE BALLS

1 pound smoked sausage, cut into ½-inch-thick slices (such as Conecuh)
1 tablespoon minced shallot
1 tablespoon seeded minced fresh jalapeño
1½ cups all-purpose flour
1½ cups plain yellow cornmeal
2¼ teaspoons baking powder
2 teaspoons kosher salt
¼ teaspoon ground red pepper
1 (15-ounce) can sweet potato purée
1 (8-ounce) package cream cheese, softened
2 cups shredded sharp Cheddar cheese
1½ pounds ground mild breakfast sausage
Pepper jelly, to serve

Steps:

  • Preheat oven to 375°. Line rimmed baking sheets with parchment paper. Set aside. In a medium skillet, cook smoked sausage over medium-high heat until browned, approximately 7 minutes. Using a slotted spoon, set sausage aside, reserving rendered fat in pan. Add shallot and jalapeño; cook until softened, approximately 5 minutes. Set aside. In a large bowl, stir together flour, cornmeal, baking powder, salt, and red pepper. Add sweet potato and cream cheese, stirring to combine. Add Cheddar, breakfast sausage, and shallot mixture, stirring to combine. Shape mixture into 1½-inch balls; place on prepared pans. Bake until browned and cooked through, 15 to 18 minutes. Serve with smoked sausage and pepper jelly.

Make a Taiwanese snack favourite, sweet potato balls. They're made with sweet potato and tapioca starch, rolled into balls and deep-fried until golden brown

Number Of Ingredients 4

175g sweet potato peeled and roughly chopped (prepared weight)
35g caster sugar
125g tapioca starch
vegetable oil, for deep-frying

Steps:

  • Steam the sweet potato in a steamer over a medium heat for 15-20 mins until soft enough to insert a cutlery knife into. Mash the sweet potato using a potato masher or a fork until smooth. Add the sugar, tapioca starch and a good pinch of seasoning, then mix well with your hands. Gradually pour in 1-2 tbsp water, then mix well until a pliable dough forms.
  • Divide the dough into four and roll each piece into a long sausage shape around 2cm in diameter. Cut each length of dough into 2cm pieces and roll them into balls in the palm of your hand. Don't worry if they crumble, just keep squishing them until they form a ball.
  • Half-fill a large, heavy-based saucepan with the oil. Heat over a medium temperature until a cooking thermometer reads 120C. Lower batches of the balls into the oil (you may need to cook them in two or three batches) and fry for 2 mins until they begin to float. When they are floating, turn down the heat slightly. Turn the balls in the oil using a slotted spoon until they expand in size, doing so every minute, for around 3-4 mins. Turn the heat back up and continue to deep-fry until golden brown.
  • Transfer the balls onto kitchen paper using a slotted spoon. Leave to drain and cool a little, then serve.

4 lbs bulk pork sausage
4 eggs, slightly beaten
1 1/2 cups soft breadcrumbs
3 cups catsup
3/4 cup light brown sugar, firmly packed
1/2 cup white wine vinegar
1/2 cup soy sauce

Steps:

  • Mix together sausage, eggs and bread crumbs.
  • Using the palms of your hands, shape into balls the size of small walnuts.
  • Saute in frying pan until browned on all sides.
  • Drain.
  • Combine catsup, brown sugar, vinegar and soy sauce in bowl.
  • Pour over sausage balls and simmer 30 minutes, stirring occasionally.
  • Serve hot in chafing dish with small container of decorative toothpicks for spearing.
  • Makes 150 cocktail sized balls.

2 red onions, peeled and quartered
2 corn cobs, cut into 4-6 pieces
1 mango, stoned and chopped
2 large sweet potatoes, cut into wedges
8-12 pork sausages
2 tsp ground cumin
2 tsp ground paprika
2 tsp fennel seeds
2 tsp dried oregano
2 tbsp barbecue sauce
2 tbsp vegetable, rapeseed or olive oil
chopped coriander
chopped chillies (for the grown-ups)

Steps:

  • Heat the oven to 200C/180C fan/ gas 6. Mix together the ingredients for the spiced sauce in a bowl. Tip the onion quarters, corn, mango, sweet potatoes and sausages into a roasting tin, then pour over the sauce and stir to coat. Add a pinch each of salt and pepper.
  • Bake for 45-50 mins, giving it a toss halfway through, until the sausages are cooked through and the sweet potato is soft. If freezing, leave to cool completely first. Can be frozen for up to one month. Defrost thoroughly before reheating in the oven at 200C/180C fan/gas 6 for 35-40 mins. Serve sprinkled with the coriander and chilli, if you like.

I made this up one day and it's the easiest thing to make, but everyone seems to really like it. I used Emeril's Chicken and Apple Sausage but you can really use whatever kind you want.

3 large sweet potatoes
2 lbs sausage (any is fine but Emeril's Chicken and apple is what I use)
1 onion
1 apple
1/4 cup olive oil
1 tablespoon sugar
1 teaspoon cinnamon
1 teaspoon garlic powder
1/2 teaspoon chili powder
salt and pepper

Steps:

  • Preheat oven to 375.
  • Leave peels on sweet potatoes and chop them and apple, onion and sausage into bite sized chunks.
  • Place potatoes, onions and apples into ziploc bag.
  • Pour in olive oil and all seasoning (more or less of these taste.).
  • Shake bag until everything is coated well.
  • Pour into 13x9 in pan and toss with sausage.
  • Bake uncovered in 375 degree oven for 1-1 1/2 hours until sausage is browned and potatoes are tender.

4 sausages
300g passata
1 tbsp tomato ketchup
1 tsp fennel seeds
½ tsp red chilli flakes
½ tsp dried oregano
2 baked sweet potatoes
50g grated cheddar or mozzarella
pinch of chilli flakes

Steps:

  • Squeeze out the meat from the sausages and roll it into eight balls. Fry the meatballs in a little olive oil until golden all over. Add the passata, ketchup, fennel, chilli flakes and oregano and bubble without a lid for 8-10 mins until the sauce thickens and the meatballs are cooked through. Season well.
  • Heat the grill to high. Split the baked sweet potatoes and place them in a small, foil-lined baking dish. Fill the potatoes with the meatballs and sauce, then top with the cheese. Grill for about 2 mins until the cheese melts. Top with the chilli flakes.

1 c. sharp cheddar cheese, shredded
2 c. sweet potatoes, cooked/mashed (not can)
2 lb. sausage (i use hot)

  • 1. combine all ingreds., well. Roll into balls and place on greased cookie sheet.
  • 2. Bake at 350 for 20 mins., or til lightly brown.
  • 3. When I'm mixing the ingreds., I wear plastic gloves and mix with my hands. Also I use an icecream scooper to scoop ount onto pan-all come out same size.
