Sweet Potato Salad image

This sweet potato salad is best served cold but can also be enjoyed warm. Perfect side dish to make ahead for holidays like Thanksgiving and Christmas.

2 large Sweet Potatoes (peeled and cut into 1 to 1 1/2 inch cubes)
1 tablespoon Olive Oil
1/2 of a teaspoon each of Paprika (Oregano and Cayenne Pepper (optional))
1 Shallot (diced)
2 Scallions/Spring Onions (ends removed and diced)
small bunch of Chives (chopped)
3 tablespoons Red Wine Vinegar
2 teaspoons Olive Oil
1 tablespoon Pure Maple Syrup
Salt and Pepper to taste

Steps:

  • Preheat oven to 390F (200C) and line a baking sheet with parchment paper.
  • Toss sweet potato chunks with 1 tablespoon of olive oil and optional spices. Spread on lined baking sheet and bake in oven for 25-35 minutes until roasted.
  • Remove sweet potatoes from oven and cool at room temperature.
  • Meanwhile, prepare dressing by mixing shallots, scallions, chives, vinegar, olive oil, and maple syrup.
  • Toss sweet potatoes with dressing, garnish with chives and serve. I suggest refrigerating salad for an hour before serving to allow for all the flavor to seep into the potatoes. Enjoy!

3 tablespoons olive oil
3/4 teaspoon salt
1/4 teaspoon pepper
1 medium apple, (chopped)
1/2 cup chopped pecans
1/3 cup dried cranberries
1 tablespoon olive oil
2 teaspoons apple cider vinegar
1 tablespoon pure maple syrup
1 tablespoon stone ground mustard
1 tablespoon dijon mustard
2 tablespoons chives or green onions, (minced)

Steps:

  • Preheat oven to 425°F. Spray two baking sheets with nonstick cooking spray. Divide sweet potatoes between the baking sheets. Divide olive oil, salt, and pepper between the two sheets. Toss to combine.
  • Spread sweet potatoes in a single layer so they aren't touching. Bake for 25 minutes. Toss and flip sweet potatoes, then bake for 15 minutes more. They should have a crispy, caramelized exterior and soft interior.
  • Meanwhile whisk together dressing ingredients in a small bowl. In a large bowl place slightly cooled sweet potatoes, apples, pecans, and dried cranberries. Gently toss with dressing. Serve warm, room temperature, or cold. If serving cold, let sweet potatoes cool completely before tossing with other ingredients and dressing.

2 1/2 lbs sweet potatoes (2 large)
1 tablespoon Dijon mustard
4 teaspoons white wine vinegar or 4 teaspoons apple cider vinegar
1/4 teaspoon salt
1/4 cup olive oil
4 scallions, thinly sliced

Steps:

  • Peel potatoes and halve lengthwise. Cut lengthwise into 3/4-inch-thick wedges, then cut wedges crosswise into 1-inch pieces.
  • Steam potatoes in a steamer over boiling water in a large pot, covered, until just tender, 10 to 12 minutes or boil which ever you prefer.
  • While potatoes steam, whisk together mustard, vinegar, and salt in a large bowl, then add oil in a slow stream, whisking until emulsified.
  • Add hot potatoes to dressing and gently toss to combine well. Cool salad to room temperature, about 15 minutes.
  • Add scallions and salt to taste and gently toss.
  • Salad (without scallions) can be made 2 hours ahead. Toss in scallions just before serving.

3 tablespoons olive oil
1 teaspoon salt
1 teaspoon cumin
1 teaspoon ground ginger
3 tablespoons balsamic vinegar
2-1/2 tablespoons mango chutney
1 tablespoon Dijon mustard
1 tablespoon honey
1 medium garlic clove, minced (about 1 teaspoon)
2 tablespoons olive oil
1/2 cup dried cranberries
1 cup chopped scallions, white and green parts
1/2 cup sliced almonds, toasted

Steps:

  • Preheat oven to 425°F. Line a baking sheet with aluminum foil. Toss sweet potatoes with olive oil, salt, cumin, and ginger directly on baking sheet. Roast, stirring occasionally, until sweet potatoes are tender, about 30 minutes.
