Super yummy & nutritious pancakes which are great for breakfast, lunch or dinner and kids will gobble them up! Double up the recipe so the whole family can enjoy them. Dress them up with fresh fruit, syrup, or jam! Pancakes can be frozen and reheated or toasted for a quick & easy breakfast or snack.

Number Of Ingredients 6

1 tablespoon butter, melted
1/2 cup cooked sweet potato, mashed
1 egg
1/3 cup all-purpose flour
1/2 teaspoon baking powder
1/4 cup milk

Steps:

  • Mix mashed sweet potatoes in a mixing bowl with egg.
  • Stir in the flour and add the baking powder.
  • Add up to 1/4 cup of milk while stirring.
  • Stir in 1 tbsp melted butter.
  • The mixture should have the consistency of thick, lumpy sauce like an "instant" pancake mix. Add more milk, if desired, for a thinner consistency.
  • Place a non-stick or heavy iron skillet over medium heat on top of the stove and add 1/2 tsp butter. Preheat skillet before cooking pancakes.
  • Spoon batter into the skillet and cook until bubbles rise to the surface of the pancakes and break (approximately 1 to 2 minutes).
  • Using a spatula, flip the pancakes and cook another 2 minutes.
  • Remove pancakes from the skillet and keep warm on a covered plate in the oven.
  • Freezes Well.

3 tablespoons ground flaxseed
1/3 cup hot water
1 cup firmly packed shredded unpeeled sweet potato
¾ cup Homemade Applesauce
2 tablespoons unrefined extra virgin olive oil
1 tablespoon freshly squeezed lemon juice
2 teaspoons dried sage
1 cup brown rice flour
¾ teaspoon baking soda
¼ teaspoon sea salt

Steps:

  • Preheat the oven to 400°F. In a small bowl, whisk the flaxseed with water and set aside for 5 minutes. In a medium bowl, mix sweet potato, applesauce, olive oil, lemon juice, sage, and the flaxseed slurry. In another medium bowl, mix the flour, baking soda, and salt. Add the wet ingredients to the dry ingredients and stir well to combine. Line a baking sheet with parchment paper and grease it with ghee or olive oil
  • Scoop out slightly less than ½ cup batter and roll it in your palms to form a ball. Place it on the baking sheet and press down to form a ¼- inch- thick pancake. Repeat the process. Bake for 20 minutes or until brown. Serve topped with a dollop of Coconut Yogurt or Whipped Coconut Cream, a drizzle of Grade B maple syrup, and a sprinkle of ground cinnamon.
  • Keep refrigerated in an airtight container for up to 3 days. Reheat in a skillet with a dash of ghee.

1 cup all-purpose flour
1 cup whole wheat flour
4 teaspoons baking powder
2 tablespoons brown sugar
1 teaspoons cinnamon
Pinch nutmeg
2 cups milk
4 teaspoons melted butter, plus more for greasing skillet
2 whole eggs
1 sweet potato, cooked until tender, peeled and pureed
Pecan butter, recipe follows
Maple syrup, for serving
1/4 cup finely chopped pecans toasted and cooled
1/2 pound butter, softened
1/2 teaspoon cinnamon
1 teaspoon vanilla
1 tablespoon brown sugar
1 tablespoon honey

Steps:

  • In a large bowl, combine all ingredients. Mix together and whisk until smooth. Cook batches in buttered skillet on medium high temperature until bubbles form on the surface, then turn over and cook until dark golden brown. Serve with pecan butter and maple syrup.
  • Mix all ingredients together (use rubber gloves). Roll in parchment paper and freeze. Cut into slices and top sweet potato pancakes.

1 pound sweet potatoes, peeled
½ cup all-purpose flour
1 teaspoon baking powder
2 teaspoons white sugar
1 teaspoon brown sugar
2 teaspoons curry powder
1 teaspoon ground cumin
2 eggs, beaten
½ cup vegetable oil for frying
½ cup milk

Steps:

  • Shred the sweet potatoes, and place in a colander to drain for about 10 minutes. In a large bowl, stir together the flour, baking powder, white sugar, brown sugar, curry powder and cumin. Make a well in the center, and pour in eggs and milk. Stir until all of the dry ingredients have been absorbed. Stir in sweet potatoes.
  • Heat oil in a large skillet over medium-high heat. Drop the potato mixture by spoonfuls into the oil, and flatten with the back of the spoon. Fry until golden on both sides, flipping only once. If they are browning too fast, reduce the heat to medium. Remove from the oil, and keep warm while the other pancakes are frying.

1 Tablespoon ghee (or coconut oil)
1/2 cup cooked sweet potato, cooled (I used a leftover baked sweet potato)
1/2 cup coconut milk
2 eggs
1/2 teaspoon apple cider vinegar
1/4 cup coconut flour
1/4 teaspoon baking soda
1/8 teaspoon garlic powder
1/2 teaspoon salt
1 1/2 Tablespoons fresh sage, chopped

Steps:

  • Melt the ghee in a pan over medium-low heat. The key to paleo pancakes is making them on the smaller side, and cooking them low and slow!
  • Add the cooked sweet potato, coconut milk, eggs and apple cider vinegar to your food processor. Pulse until combined. Add the coconut flour, baking soda, garlic powder and salt. Pulse again until combined, scraping down the sides if needed. Add the chopped sage and pulse again until combined. The batter will thicken as the coconut flour absorbs the liquid. **No food processor? No problem! Simply mix the dry ingredients in a bowl, and the wet ingredients in a separate bowl. Add the dry ingredients to the wet ingredients and mix until well combined.
  • Use a ¼ cup measuring cup to scoop the batter into the pan. Use a spatula to spread the batter into a small, 3" circle. Cook for 2-3 minutes, or until the bottom of the pancakes are lightly browned, then gently flip and continue to cook the other side until browned.
  • Top with ghee, grassfed butter, or really whatever you'd like - enjoy!

1 cup water
1/2 cup sweet potato puree
1/4 teaspoon cinnamon, spice (optional) or 1/4 teaspoon pumpkin pie spice (optional)
1 cup pancake mix
nonstick cooking spray
1 tablespoon canola oil, for skillet
pure maple syrup, for serving

Steps:

  • In a large bowl, mix the water, sweet potato puree, and cinnamon or pumpkin pie spice, if using.
  • Add the pancake mix and stir just to combine-the batter should be lumpy.
  • Coat a griddle or large nonstick skillet with cooking spray and set it over medium-high heat.
  • When the pan is hot, add the oil, and spoon the batter onto the griddle or pan, using 1/4 cup batter for each pancake.
  • Cook until bubbles form on top of the pancakes and the batter is set (2-3 minutes).
  • Then use a spatula to flip the pancakes and cook them until golden brown on the other side, 2 to 3 minutes.
