Perfectly Baked Salmon with Lemon and Dill image

The trick to perfectly baked salmon is to gently bake the fish in a little liquid - such as wine, stock, or water. Then cover the dish and bake until just cooked through. You could call this oven poached salmon. It's practically no-fail. If your fish is quite thick, expect that the cooking time will be a few minutes longer than what we share below.

One 1 1/2-pound salmon fillet, or two 12-ounce fillets, preferably wild-caught
1 tablespoon olive oil
Salt and fresh ground black pepper
1 lemon, cut into slices 3 to 4 sprigs of fresh dill, plus more for serving
1/2 cup dry white wine, such as Sauvignon blanc (substitute: fish stock, chicken stock, or water)

Steps:

  • Heat oven to 325 degrees F.
  • Lightly oil and season both sides of the salmon with salt and pepper.
  • Arrange lemon slices and fresh herbs on the bottom of a baking dish large enough to fit the salmon, and then place the salmon, skin-side down, onto the bed of lemon and herbs.
  • Pour wine (or stock) into the baking dish, and then cover with aluminum foil. Bake the salmon until the fish flakes and white bubbles of protein appear on the surface, 12 to 30 minutes, depending on the thickness of the fillets. Check the salmon after 10 minutes to see its progress.
  • Checking the temperature of the salmon using an internal thermometer is the best way to prevent overcooking. You want the thickest part of the salmon to read 125 degrees F. Take the salmon out of the oven and loosely cover with foil for 5 minutes (the fish will continue to cook during this time). Serve, scattered with chopped fresh herbs on top.

¼ cup butter, melted
¼ cup white wine
1 lemon, juiced
5 cloves garlic, chopped
1 bunch fresh dill, stems trimmed
1 (1 pound) salmon fillet
½ cup toasted almonds

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Mix butter, white wine, lemon juice, and garlic together in a small bowl.
  • Pour a small amount of the butter mixture into an 8x8-inch baking pan until bottom is evenly coated; cover with a thin layer of dill. Place salmon, skin side down, into the baking pan. Sprinkle with remaining dill; pour remaining butter mixture over salmon. Cover tightly with aluminum foil.
  • Bake in preheated oven until fish flakes easily with a fork, 25 to 35 minutes. Sprinkle generously with almonds before serving.

Delicious! And simple. Takes some time to marinate, but it's worth it. I searched for the perfect grilled salmon recipe, but it didn't seem to exist. So, here is an excellent salmon recipe with all the flavors I wanted: lemon, white wine, garlic, and dill. I topped it with these yummy onions grilled in a foil packet and Caper Mayonnaise.

4 salmon fillets
salt and pepper
2 teaspoons dried dill
1 garlic clove, chopped
2 -3 tablespoons lemon juice
2 tablespoons olive oil, or up to 1/4 cup olive oil
1/4-1/2 cup dry white wine (I used Chardonnay)
2 -3 lemons, sliced
1 -2 onion, sliced (I used red, but it doesn't really matter)
3 garlic cloves, quartered
salt and pepper
olive oil

Steps:

  • Arrange salmon filets in dish. Season with salt and pepper. Cover filets with dill, garlic, lemon juice, olive oil, and white wine. Rub seasonings into the salmon (I rubbed it in after every ingredient).
  • Turn salmon over to marinate in sauce. Let marinate in refrigerator at least one hour before grilling.
  • Assemble lemons, onions, and garlic on a sheet of aluminum foil. Sprinkle with salt, pepper, and olive oil. Fold foil into packet.
  • Fire up the grill and put on the vegetable packet. Allow to cook 20 minutes before adding salmon.
  • Put vegetables on top tier of grill. Add salmon skin side down and grill 8-15 minutes, or until fish flakes easily.
  • Serve salmon topped with vegetables and Caper Mayonnaise. Enjoy!

Lovely served with steamed asparagus and crusty bread to soak up extra sauce. Using light butter and fat free half and half in the sauce will yield great results and lower calories.

1 lb salmon fillet
1/2 teaspoon dried dill weed
salt, to taste
pepper, to taste
cornstarch, for dredging (aka corn flour)
1 teaspoon extra virgin olive oil
1 teaspoon butter
1 teaspoon extra virgin olive oil
1/4 cup onion, chopped
2 cloves garlic, minced
4 ounces button mushrooms, sliced
1/2 teaspoon dried dill weed
1/2 teaspoon dried thyme
3 tablespoons fresh lemon juice
1/2 cup white wine
1/2 cup half-and-half or 1/2 cup light cream
1/4 teaspoon xanthan gum or 1 tablespoon cornstarch (used as a thickener)
fresh parsley
fresh dill weed
lemon slice

Steps:

  • PREP THE SALMON: Rinse and dry the salmon filet; divide into four portions; sprinkle with 1/2 tsp dill weed, salt and pepper to taste; then dredge in the cornstarch and set aside for 15 minutes while you prepare the sauce.
  • PREPARE THE SAUCE: Heat a nonreactive saucepan over medium heat and add 1 tsp olive oil; when oil is hot, add the onion and garlic and saute until onion is translucent.
  • Add the mushrooms, dill weed, and thyme, and saute until mushrooms have released their liquid.
  • MEANWHILE: Preheat oven to 400 degrees F; Heat a heavy, oven-proof skillet (cast iron preferred) over medium high heat.
  • RETURN TO SAUCE: Combine the lemon juice and wine (and cornstarch if not using xanthan gum), and add to the mushroom mixture; Bring to a boil, then simmer on low heat for 5 minutes; Remove from heat and set aside.
  • SEAR THE SALMON: Place 1 tsp each olive oil and butter in the hot skillet; Swirl around to coat the bottom; Place the salmon filets in the skillet (skin side up), and sear for about 3 minutes, or until a nice brown crust has formed.
  • Carefully turn the filets over so the skin side is now down; Then set the skillet in the preheated oven and roast for about 8-10 minutes, or until center is cooked through; remove from oven and set aside to rest.
  • FINISH THE SAUCE: Place the mushroom wine mixture in a blender or food processor along with the 1/2 cup of half and half and xanthan gum; blend until smooth and thickened; microwave as needed to re-heat but do not allow to boil.
  • SERVE salmon with sauce on the side; garnish with fresh parsley, slices of lemon, and dill weed, if desired.

1/2 teaspoon salt, divided
1 tablespoon olive oil
3 tablespoons cold butter (divided)
1 small shallot, finely chopped
1/2 cup white wine
1 tablespoon Dijon mustard
2 tablespoons roughly chopped fresh dill
1/8 teaspoon black pepper
1 cucumber, thinly sliced (for garnish)
fresh dill sprig (for garnish)

Steps:

  • Season salmon with 1/4 t. salt and place on broiler pan (I line my pan with nonstick aluminum foil). Broil salmon on high for about 10 minutes, until cooked throughout.
  • While salmon cooks, put oil and 1 T. of butter in saucepan and heat over medium-high heat until butter melts. Add shallot and cook for about 1 minute, until soft and opaque. Pour in wine and reduce by half, 3-4 minutes.
  • Turn heat down heat to low and stir in mustard, dill, pepper, and the remaining salt. Whisk until well combined. Remove from heat and add butter in pieces to the sauce until melted and blended inches.
  • Place the salmon on serving platter and spoon the sauce over the top. Garnish with dill and cucumber, if desired.

We love our salmon in the Pacific NW. This is a wonderful salmon dish from the RSVP section of Bon Appetit, from Kincaid's, Bloomington MN. You need to plan ahead because the salmon needs to marinate in a brine solution for several hours. Time does not include brining.

1 1/2 cups water
1 cup golden brown sugar, packed
3 tablespoons kosher salt
1 tablespoon liquid smoke
1 tablespoon gingerroot, grated
3 bay leaves
1 teaspoon whole allspice
32 ounces salmon fillets
1 1/2 tablespoons green peppercorns
1 1/2 tablespoons pink peppercorns, whole
1 1/2 tablespoons whole black peppercorns
8 teaspoons honey
1 cup dry white wine
1 shallot, minced
2 tablespoons white wine vinegar
1/2 cup whipping cream
6 tablespoons butter, pieces

Steps:

  • For salmon:.
  • Mix first 7 ingredients in heavy medium saucepan. Stir over medium heat until sugar dissolves. Simmer 10 minutes. Cool. (Brine can be prepared 3 days ahead. Cover and chill).
  • Place salmon in large glass baking dish. Pour brine over. Cover and refrigerate 6 to 8 hours, stirring occasionally.
  • Preheat oven to 350ºF. Remove salmon from brine. Pat dry. Arrange salmon on large baking sheet. Strain brine into heavy medium saucepan. Place all peppercorns in plastic bag. Using rolling pin, coarsely crush peppercorns. Add peppercorns to brine. Simmer over medium heat 15 minutes. Strain, reserving peppercorns. Discard brine.
  • Spread top of each salmon fillet with 2 teaspoons honey. Divide peppercorn mixture over honey, pressing gently to adhere. Bake salmon until cooked through, about 25 minutes.
  • Meanwhile, prepare sauce.
  • Combine wine, shallot, and vinegar in heavy small saucepan. Boil until liquid is reduced to 2 tablespoons, about 10 minutes. Add cream and boil until liquid is reduced to 1/4 cup, about 8 minutes. Strain sauce and return to same saucepan. Bring to simmer. Remove from heat. Gradually add butter, whisking just until melted. Season sauce to taste with salt and pepper.
  • Transfer salmon to plates. Pour sauce around salmon. Sprinkle with dill.

  • Rub the salmon steaks with lemon juice and brush them with melted butter.
