9 cups cubed peeled sweet potatoes (about 4 medium)
4 cups water
1 can (15-1/4 ounces) pear halves, drained
1/3 cup packed brown sugar
1/4 cup butter, softened
1/4 teaspoon ground cinnamon

Steps:

  • Place the sweet potatoes in a shallow 3-qt. microwave-safe dish; add water. Cover and microwave on high for 18-20 minutes or until tender. Drain and place in a large bowl. Add the remaining ingredients; beat until combined.

The original recipe called for 1/4 cup of butter, 3 T brown sugar, and 2 T honey. I thought that would be way too sweet and cut it down. I also used pears in their own juice instead of heavy syrup.

4 medium sweet potatoes, peeled, cooked, and mashed
3 tablespoons butter, melted
1 tablespoon brown sugar
1/4 teaspoon salt
1/4 teaspoon cinnamon
1 tablespoon honey
1 teaspoon grated orange peel
1 (16 ounce) can pear halves, juice reserved

Steps:

  • In a greased 1 1/2 quart baking dish, combine the potatoes, 2 T butter, brown sugar, salt, and cinnamon.
  • In a small saucepan, blend the honey, 1 T butter, orange peel, and 3 T of reserved pear juice; bring to a boil.
  • Arrange the pear halves over the potato mixture, then pour the honey mixture over the top.
  • Bake at 350 degrees 30-35 minutes.

1-3/4 pounds sweet potatoes (about 4 medium), peeled and cubed
1-3/4 cups water
1 teaspoon salt, divided
1/4 teaspoon ground cinnamon
2 large pears, peeled and sliced
1 large onion, chopped
2 tablespoons butter
1/2 cup white grape juice
1 cup half-and-half cream
1/4 teaspoon white pepper

Steps:

  • In a large saucepan, combine the sweet potatoes, water, 3/4 teaspoon salt and cinnamon. Bring to a boil. Reduce heat; simmer, uncovered, for 15-20 minutes or until tender. , Meanwhile, in another large saucepan, cook and stir the pears and onion in butter over medium heat for 5 minutes. Stir in grape juice; bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Stir into the sweet potato mixture. Cool slightly., In a blender, cover and puree soup in batches; return all to one of the pans. Stir in the cream, pepper and remaining salt; heat through (do not boil).

4 ounces Sweet Potato-Pear-Cinnamon Juice, recipe follows
2 ounces tequila
Cinnamon stick, for garnish
2 medium sweet potatoes, peeled
1 pear, peeled and cored
1/4 teaspoon ground cinnamon

Steps:

  • Combine the Sweet Potato-Pear-Cinnamon Juice and tequila in a cocktail shaker filled with ice. Shake vigorously for 8 to 10 seconds. Strain into a tall glass filled with ice. Garnish with a cinnamon stick.
  • Juice the sweet potatoes, then the pear, following your juicer's specific settings for each. Stir in the cinnamon. Serve the juice immediately over ice, if desired.

3/4 cup cane syrup
1/2 cup pear nectar
1 teaspoon vanilla extract
1/4 cup bourbon whiskey
1 tablespoon orange juice
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
4 large sweet potatoes, halved lengthwise, cut into 1/3-inch slices
4 large bartlett pears, crisp, peeled halved, cored & cut into 1/4-inch slices

Steps:

  • Preheat oven to 400 degrees F & butter a 13"x9" glass baking dish.
  • In a small saucepan over medium-low heat, stir butter, cane syrup, pear nectar, vanilla, Bourbon & OJ until butter melts.
  • Increase heat & boil until mixture is slightly reduced, about 5 minutes, then remove from heat & whisk in the cinnamon, nutmeg & salt.
  • Arrange1/3 of the potato slices in the prepared baking dish, then top with half of the pear slices, & then with another 1/3 of the potato slices. Finally, arrange the remaining slices of potato & pear on top & on their edge, alternating potato & pear, & overlapping slightly.
  • Sprinkle lightly with salt, then pour the cane syrup mixture over everything.
  • Cover the dish tightly with aluminum foil & bake until sweet potatoes are nearly tender, about 1 hour.
  • Uncover & bake until completely tender, basting occasionally with the syrup, for about 20-30 minutes longer, checking with a toothpick or knife point to make sure the potatoes are completely tender.
  • Spoon the syrup over the sweet potatoes & pears one last time & serve hot.

2 pears, peeled and sliced
½ cup dry white wine
¼ cup water
3 sweet potatoes, peeled and cubed
1 cup evaporated milk
¼ teaspoon vanilla extract
¼ cup brown sugar
2 tablespoons butter
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg

Steps:

  • Place the pears, wine, and water in a small saucepan and bring to a boil over high heat. Turn heat to medium-low and simmer until pears are soft, about 5-10 minutes. Remove pears from wine and reserve.
  • Place the sweet potatoes into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to potatoes to steam dry for a minute or two.
  • Stir the reserved pears, evaporated milk, vanilla, brown sugar, butter, cinnamon, and nutmeg into the sweet potatoes and mash until smooth. Transfer to a serving dish and serve hot.

5 pounds red-skinned sweet potatoes (yams)
6 tablespoons unsalted butter, room temperature
4 large firm but ripe Bartlett pears, peeled, cored, cut into 1/3 inch-thick slices
3/4 cup (or more) pear nectar
1/4 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon (generous) ground cardamom

Steps:

  • Preheat oven to 400°F. Butter 13 x 9 x 2 - inch glass baking dish. Pierce potatoes in several places with fork. Place on baking sheet; bake until very tender when pierced with knife, about 1 hour. Remove from oven. Reduce temperature to 350°F.
  • Meanwhile, melt 2 tablespoons butter in heavy large nonstick skillet over medium-high heat. Add pears; sautée until beginning to soften, about 5 minutes. Add 3/4 cup nectar; bring to simmer. Reduce heat to medium-low; cover and simmer until pears are very tender, adding more nectar if mixture sticks to skillet and stirring often, about 4 minutes. Transfer to processor and puree.
  • Peel sweet potatoes; place in large bowl of electric mixer. Add 4 tablespoons butter; beat until smooth. Mix in pear puree, sugar, cinnamon and cardamom. Season with salt and pepper. Transfer to prepared dish (Can be prepared 1 day ahead. Cover and chill.)
  • Bake potatoes uncovered until just heated through, about 20 minutes.

¼ cup vegetable oil
2 pounds sweet potatoes, peeled and sliced
2 tablespoons brown sugar
1 teaspoon ground cinnamon
¾ teaspoon salt
1 pinch freshly ground pepper
1 tablespoon fresh lime juice

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Pour the oil into a 9x13 inch baking dish, and place in the oven until hot, about 5 minutes.
  • Add potatoes to the oiled dish, and bake for 20 minutes in the preheated oven, turning after 10 minutes. In a small bowl, mix together the brown sugar, cinnamon, salt, and pepper.
  • After the 20 minutes is up, remove the potatoes from the oven, and sprinkle with the brown sugar mixture. Stir to coat. Return to the oven, and roast for another 10 minutes, or until potatoes are tender and golden brown. Stir potatoes as necessary to allow them to brown evenly.
  • Remove potatoes to paper towels to drain, then transfer to a serving dish, and sprinkle with lime juice.

This Christmas I was looking for a sweet potato recipe that did not have the melted marshmellow topping. We found this on gumbopages and have to thank "The Oregonian Food Section" for such a wonderful recipe. The bourbon cooks off and leaves a very rich flavor to complement the pears and sweet potatoes. YUMMY! NOTE: Cane syrup can be difficult to find; I made my own using 1-1/4 cup sugar and 1/4 cup water. Boil until syrupy.

  • Recipe can be made 1 day ahead. Cool, cover with foil and refrigerate. Reheat covered in a 350°F oven for about 30 minutes; spoon the syrup over the sweet potatoes and pears and serve hot.
