Originally from VegNews magazine, this is a delicious cake for fall. The sweet potato taste isn't very strong, but gives the cake a subtle flavor and a beautiful color as well as adding a great texture without having to use a ton of oil.

1 cup water
1/4 cup canola oil
2 tablespoons apple cider vinegar
2 teaspoons vanilla

4 cups powdered sugar

With the beaters going, slowly add powdered sugar, milk, and vanilla and beat for 2 to 3 minutes until light and fluffy. Scrape down teh sides of the bowl and beat an additional 30 seconds. For the filling, transfer one-third of the frosting to a small bowl, add 1/4 cup each of the coconut and pecans and stir well to combine.
