SWEET POTATO CAULIFLOWER CURRY (30 MINUTES!)

Sweet Potato Cauliflower Curry (30 Minutes!) image

A cauliflower sweet potato curry inspired by aloo gobi with sweet potatoes and roasted cauliflower! Simple ingredients and 30 minutes required for this delicious, hearty plant-based meal!

Provided by Minimalist Baker

Categories     Entree

Time 30m

Number Of Ingredients 19

1 head cauliflower, loosely chopped, large stems removed (~5 cups or 535 g)
2 Tbsp (30 ml) coconut or avocado oil (if avoiding oil, sub water)
1 Tbsp (3 g) curry powder
1/4 tsp sea salt
1 Tbsp coconut or avocado oil ((if avoiding oil, sub water))
2 medium shallots ((diced))
3 Tbsp fresh ginger ((minced))
6 cloves garlic ((minced // ~3 Tbsp as original recipe is written))
4 Tbsp red curry paste*
2 medium sweet potatoes ((peeled and chopped into small bite-size pieces))
1 tsp curry powder ((plus more to taste))
1/4 tsp sea salt ((plus more to taste))
1 28-oz can diced tomatoes ((if unsalted, you'll add more salt to the dish))
1 14-ounce can full-fat coconut milk ((sub light for less fat))
1-2 Tbsp coconut sugar
2 Tbsp lemon juice ((to taste))
Fresh cilantro
Naan or Flatbread
Rice or cauliflower rice

Steps:

  • Preheat oven to 400 degrees F (204 C) and line a baking sheet with parchment paper (or more baking sheets if increasing batch size). Add cauliflower and season with oil (or water), curry powder, and sea salt.
  • Toss to combine and bake for 15-20 minutes or until golden brown and slightly crispy on the edges. Set aside.
  • In the meantime, heat a large pot over medium heat. Once hot, add water or oil, shallot, ginger, and garlic. Sauté for 2 minutes, stirring frequently.
  • Add curry paste and stir to combine. Cook for 1 minute. Then add sweet potatoes, curry powder, and salt. Stir to coat and cook for 2 minutes uncovered.
  • Add tomatoes, coconut milk, and coconut sugar and stir to combine. Increase heat to medium high until it reaches a very low boil. Then reduce heat to low or medium low (until simmering). Cover and cook for 15-20 minutes or until sweet potatoes are tender. Stir occasionally.
  • In the last minutes of cooking, add lemon juice and stir. Then taste and adjust seasonings as needed, adding more salt for saltiness, curry powder or paste for intense curry flavor, coconut sugar for sweetness, or more lemon juice for acidity.
  • Remove lid and turn heat off so the mixture can thicken slightly. To serve, divide roasted cauliflower between serving plates and top with desired amount of curry. Fresh cilantro and lemon juice make an excellent garnish. This dish is great on its own, but it's also delicious with rice, cauliflower rice, or vegan naan.
  • Leftovers will keep covered in the refrigerator up to 4 days or in the freezer up to 1 month. Reheat on the stovetop over medium heat (or in the microwave) until hot and bubbly. Cauliflower and curry can be stored together.

Prep your veggies and let the slow cooker do the work with our filling sweet potato curry

Provided by Miriam Nice

Categories     Dinner, Main course, Supper

Time 8h50m

Number Of Ingredients 15

4 tbsp olive oil
2 large onions, halved and sliced
3 garlic cloves, crushed
thumb-sized piece root ginger, peeled
1 tsp paprika
½ tsp cayenne
2 red chillies, deseeded and sliced
2 red peppers, deseeded and sliced
250g red cabbage, shredded
1kg sweet potatoes, peeled and chopped into chunks
300g passata
400ml coconut milk
2 tbsp peanut butter
small bunch fresh coriander, chopped
cooked couscous (or gluten-free alternative)

Steps:

  • Heat 1 tbsp olive oil in a large non-stick frying pan and add the onion. Fry gently for 10 mins until soft then add the garlic and grate the ginger straight into the pan. Stir in the paprika and the cayenne and cook for another minute then tip into the slow cooker.
  • Return the pan to the heat and add another 1 tbsp oil along with the chilli, red pepper and shredded cabbage. Cook for 4-5 mins then tip into the slow cooker.
  • Use the remaining oil to fry the sweet potatoes, you may have to do this in 2 or 3 batches depending on the size of your pan. Cook the sweet potatoes for around 5 mins or just until they start to pick up some colour at the edges then put them in the slow cooker too.
  • Pour the passata and the coconut milk over the sweet potatoes, stir to mix everything together and cover the slow cooker with a lid and cook for 6-8hrs or until the sweet potatoes are tender.
  • Stir the peanut butter through the curry, season well with salt and pepper and serve with couscous and chopped coriander scattered over the top.

LENTIL SWEET POTATO COCONUT CURRY

Lentil Sweet Potato Coconut Curry image

This is my own recipe combining several of my favourite ingredients. This can be altered in a variety of ways, including adding different vegetables such as cauliflower or white potato, adding grilled chicken, paneer or a tin or two of chickpeas. This makes a substantial batch, which I usually portion out and freeze.

Categories     Curries

Time 30m

Yield 7 serving(s)

Number Of Ingredients 11

20 g oil (or butter)
4 garlic cloves, minced
75 g fresh ginger, minced
150 g white onions, diced
2 red chilies, seeded and chopped finely
1/4 cup curry powder (I use Schwartz)
1 teaspoon salt (or to taste)
350 g red lentils (dry, rinsed)
700 g sweet potatoes, peeled and diced
200 g courgettes, chopped
1 cup coconut cream

Steps:

  • Heat oil in a large pan over medium high heat.
  • Sauté the onions, garlic and ginger until onions are tender, but not browned.
  • Add the curry powder and stir through.
  • Add the lentils, sweet potato and courgette, stir and just barely cover with water (you can use vegetable or chicken stock if you prefer).
  • Reduce heat and simmer covered for about 20 minutes until the potatoes are tender and the lentils are tender. If there's quite a bit of liquid you can add more lentils. Add salt to taste.
  • Add coconut milk and simmer for a few minutes.
  • Serve over rice, with naan or just enjoy on its own.

  • Melt butter in oil in a 4.5 Dutch oven (or larger) over medium heat. Add onions and carrots and cook for 6 minutes. Add bell peppers, ginger, garlic and all spices/seasonings (up to tomatoes) and cook for 2 minutes.
  • Stir in all remaining ingredients up to "add later.” Cover and bring to a boil. Once boiling, reduce to a gentle simmer over low. Cook, covered, for 15 minutes, stirring halfway through and recovering the pot. After 15 minutes, stir in sweet potatoes, cover and cook for an additional 15 minutes, stirring halfway through.
  • Add the cauliflower and simmer, UNCOVERED, for an additional 5-10 minutes, stirring occasionally, OR until the lentils and potatoes are tender and the curry is thick and creamy. If the curry is too thick, add some broth, if the curry is too thin, continue to simmer uncovered until thickened.
  • Stir in the cilantro. Taste and season with additional salt, cayenne or sugar to taste (I like 1/4 tsp more salt and 1/2 tsp more sugar). Serve over basmati rice with a dollop of yogurt.
