Simple Lemon, Shrimp, and Prosciutto Pasta image

Salty, umami-packed prosciutto complements the sweet shrimp and tomatoes in this streamlined 20-minute main.

Provided by Robin Bashinsky

Time 20m

Yield Serves 4 (serving size: 1 1/2 cups)

Number Of Ingredients 10

8 ounces uncooked vermicelli or angel hair pasta
2 ounces thinly sliced prosciutto
1/4 cup extra-virgin olive oil, divided
4 garlic cloves, thinly sliced
2 cups multicolored cherry tomatoes, halved
1/2 cup thinly sliced fresh basil, divided
1/2 teaspoon kosher salt
1/4 teaspoon crushed red pepper
12 ounces peeled and deveined tail-on raw large shrimp
2 lemons

Steps:

  • Cook pasta according to package directions, omitting salt and fat. Drain, reserving 1 cup cooking liquid.
  • Cook prosciutto and 2 tablespoons oil in a large skillet over medium-high, stirring often, until prosciutto is crisp, 3 to 4 minutes. Transfer prosciutto to paper towels to drain. Add garlic to pan; cook, stirring often, until golden, 1 to 2 minutes. Add tomatoes, 1/4 cup basil, salt, and red pepper. Cook until tomatoes begin to release their juices, about 4 minutes. Add shrimp; cook until opaque, 3 to 4 minutes. Stir in up to 1 cup reserved cooking liquid to thin sauce to desired consistency.
  • Halve 1 lemon; squeeze juice from both halves into sauce. Stir in pasta and remaining 2 tablespoons oil. Cut remaining lemon into wedges. Divide pasta evenly among 4 plates; top with prosciutto and remaining 1/4 cup basil. Serve with lemon wedges.

Lemon Spaghetti with Shrimp image

Provided by Giada De Laurentiis

Time 30m

Yield 6 servings

Number Of Ingredients 13

1 tablespoon extra-virgin olive oil
3/4 pound large shrimp, peeled and deveined
1/4 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
1 pound spaghetti
1/2 teaspoon kosher salt, plus more for the pasta water
2/3 cup extra-virgin olive oil
2/3 cup grated parmesan cheese, plus more for topping (optional)
1 tablespoon grated lemon zest (about 1 large lemon)
1/2 cup fresh lemon juice (about 2 large lemons)
1/4 teaspoon freshly ground black pepper
1/3 cup chopped fresh basil
2 tablespoons capers, fried

Steps:

  • Make the shrimp: In a medium saute pan, heat the olive oil over medium-high heat. Season the shrimp with the salt and pepper; add to the preheated pan in a single layer. Cook for 2 to 3 minutes per side, or until pink and cooked through. Set aside.
  • Make the pasta: Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally to prevent sticking, about 8 minutes. Drain, reserving 1 cup pasta water. Meanwhile, whisk the olive oil, parmesan and lemon zest and juice in a large bowl to blend.
  • Toss the pasta with the lemon sauce, shrimp and the reserved cooking liquid, adding it 1/4 cup at a time as needed to moisten. Season with the salt and pepper; stir in the basil. Garnish with the fried capers and more parmesan, if desired.

This takes no time at all to prepare. It looks like you've cooked all day! So easy, so basic, so fragrant This works well with chicken also. I sometimes prepare this with both the chicken and the shrimp, but I make a little more sauce, and I will add a little chicken broth to the sauce.

PEA & SHRIMP PENNE WITH BASIL

Pea & Shrimp Penne with Basil image

Not only do peas announce the arrival of spring, but they're also sweet, tender, and take only a few minutes to cook, particularly when they're very fresh and young, which makes them a perfect ingredient for fast weeknight dishes or busy weekend meals. We recommend penne for this dish, but you can use other short pastas like rigatoni or ziti if you like.

Provided by Annie Wayte

Categories     Main Course

Yield 4

Number Of Ingredients 12

1-1/2 lb. shrimp (21 to 25 per lb.), peeled, deveined, and cut in half lengthwise
1/2 cup chopped fresh basil
5 Tbs. extra-virgin olive oil
1 Tbs. finely grated lemon zest
Kosher salt
1-1/2 cups fresh shelled peas (about 1-1/2 lb. unshelled) or frozen peas
3/4 lb. dried penne
Freshly ground black pepper
1/3 cup finely diced shallots
1 tsp. minced garlic
3/4 tsp. seeded and minced hot fresh chile, such as Thai bird or serrano
2 oz. arugula, trimmed, washed, and dried (about 2 lightly packed cups)

Steps:

  • Toss the shrimp with half of the basil, 2 Tbs. of the olive oil, and the lemon zest. Cover and refrigerate for about 30 minutes. Bring a large pot of well-salted water to a boil over high heat. Put the peas in a large metal sieve and dip them into the boiling water. Cook until just tender, 2 to 4 minutes. Lift the sieve from the water, let the peas drain, and then spread them on a baking sheet in a single layer to cool. Add the pasta to the boiling water and cook, following the package directions, until al dente. Reserve 1/2 cup of the cooking water and drain the pasta. Meanwhile, take the shrimp out of the fridge and season them lightly with salt and pepper. Heat the remaining 3 Tbs. oil in a 12-inch skillet over medium heat. Add the shallots, garlic, chile, and a pinch of salt and cook, stirring occasionally, until the shallots are soft and lightly browned, about 2 minutes. Add the shrimp and continue to cook, stirring, until the shrimp have turned pink and are almost cooked through, 2 to 3 minutes. Stir in the peas and remove from the heat. Return the drained pasta to its pot and add the shrimp mixture and 2 Tbs. of the pasta water. Cook over medium heat until the shrimp are completely cooked through, about 1 minute more. Toss the arugula and the remaining basil into the pasta. Add more pasta water as necessary to keep the pasta moist and continue tossing until the arugula is wilted, about 1 minute. Season to taste with salt and pepper and serve immediately.

  • Preheat the pan over medium-high heat. Add the olive oil and the shrimp. Cook them a minute per side without moving them around so that they can become golden. Don't overcrowd the pan, so they don't boil instead of getting golden. If you're making plenty, work in batches. Season them with salt and pepper and remove them from the pan.
  • Lower the temperature to low and add more oil if needed. Add the zest and garlic and cook them until just starting to become golden.

  • Prepare the leeks, cut off the end of and then right before the dark green part of the leek starts. Next cut in half lengthways so you have two long pieces. Flip them over so both flat parts are lying face down on the cutting board. Thinly slice through the leeks. Place all sliced leeks into a bath of cold water and swirl leeks around a little bit. (leeks tend to hide a lot of dirt in them so let them sit for a while, the dirt will fall off and gather in the bottom of the cold water bowl.) Remove leeks from the water after dirt is removed.
  • Next add garlic cloves, salt, pepper, 1 teaspoon of fresh thyme, and lemon zest to the pan. Saute for 2 minutes, stirring the whole time. Remove from heat and set aside.
