SWEET POTATO & BANANA MASH

Sweet Potato & Banana Mash image

A bit different way of serving sweet potato, not as sweet as usual with the taste of buttered pecans being the perfect offset.

Provided by Steve_G

Categories     Yam/Sweet Potato

Time 2h20m

Yield 1 batch, 12 serving(s)

Number Of Ingredients 10

5 lbs sweet potatoes
3 ripe bananas
4 ounces unsalted butter, melted
1/4 cup granulated sugar (more or less)
2 tablespoons honey
salt and pepper
2 tablespoons unsalted butter, in a skillet
16 ounces pecans
8 ounces dark brown sugar
2 tablespoons of cold butter, cut into small chunks

Steps:

  • Wash sweet potatoes and roast in a in a 375°F preheated oven for 75-90 minutes, or until soft and starting to release some juice.
  • Add bananas during the last 15 minutes of cooking.
  • While the potatoes are cooking melt the 2 tablespoons of butter in a skillet and toast the pecans over a medium heat, tossing often.
  • All the butter will be absorbed and the nuts will be slightly fragrant.
  • Add a bit of salt and toss again.
  • After roasting let the potatoes cool enough to just handle them, peel and mash with bananas, melted butter, granulated sugar and honey.
  • Season to taste and add more sugar if desired (it will depend on your taste and how sweet the veggies are to begin with) In a small bowl mix the 2 tablespoons of cold butter into the brown sugar with your fingers, it'll be lumpy, but that's OK.
  • Spread the mashed mixture in a buttered baking dish, cover with pecans and sprinkle with brown sugar/butter combination. Bake at 350°F for 20-30 minutes until the topping is partially melted.

ROASTED SWEET POTATO WITH BANANA WALNUT CRUMBLES

Roasted Sweet Potato with Banana Walnut Crumbles image

Feeling a little down? This sweet snack not only hits the spot, but the vitamins and nutrients in it can improve your mood. Sweet potatoes contain vitamin B6 and walnuts contain omega-3 fatty acids, both of which help the body ward off sadness. The tryptophan in bananas helps your body make the happy hormone serotonin.

Categories     side-dish

Time 1h15m

Yield 4 servings

Number Of Ingredients 8

1/2 cup rolled oats
1/4 cup chopped walnuts
4 teaspoons packed light brown sugar
1/4 teaspoon kosher salt
1/2 banana, mashed (2 tablespoons)
2 teaspoons unsalted butter, at room temperature and cut into bits
Two 12-ounce sweet potatoes, halved lengthwise
1 tablespoon honey

Steps:

  • Preheat the oven to 375 degrees F. Place a rack in the middle of the oven and another in the lower third.
  • Combine the oats, walnuts, sugar, salt and mashed banana, then cut in the butter. Spread the mixture on a parchment-paper-lined baking sheet. With damp hands, pat the mixture into an even 1/4-inch layer. Place the sweet potatoes, cut-side up, in a baking pan and place on the bottom oven rack.
  • Place the topping on the upper rack. Bake the topping until the edges are lightly browned, 15 to 18 minutes. Cool the topping, but leave the potatoes in the oven to continue cooking until a knife inserted in the center comes out easily, about 1 hour total.
  • When the topping is cool enough to handle, break into pea-size crumbles. Use a fork to scrape and fluff the insides of the potatoes. Sprinkle the potatoes with the crumb topping, then drizzle each with some of the honey and serve immediately.

BANANA MASHED POTATOES

Banana Mashed Potatoes image

Sounds strange, right? Actually, they're delicious! The subtle hint of banana doesn't really add sweetness, only an exotic taste. You must try this! This makes about four normal-people servings, or two hungry people servings.

Provided by SilverOpera

Categories     Potato

Time 35m

Yield 4 serving(s)

Number Of Ingredients 6

7 medium potatoes, peeled
1 medium banana
3 tablespoons butter
1/2 cup half-and-half
salt
pepper

Steps:

  • Peel potatoes. Place in a large pot of salted cold water. Bring to a boil.
  • Boil 25 minutes, or until tender. They should provide no resistance when poked with a fork.
  • During the last five minutes of boiling, peel your banana. Take a bite (a whole banana is a little overwhelming, but a banana with a big bite taken out does just right). Drop the rest of the banana in the water with the potatoes and let it boil with them for the last five minutes. This softens it.
  • Drain the potatoes and banana and place in a large bowl.
  • Add the butter and a little half and half and cream with a hand mixer. Add half and half as needed to get a creamy texture.
  • Add salt and pepper to taste. These are great with lots of fresh cracked black pepper.
  • Enjoy!

5-INGREDIENT SWEET POTATO BANANA PANCAKES

5-Ingredient Sweet Potato Banana Pancakes image

Banana, sweet potato, nut butter, eggs and cinnamon are all you need to make these simple, real food pancakes come together!

Provided by Danielle

Time 25m

Number Of Ingredients 5

2/3 cup sweet potato, cooked and well mashed
1 banana, well mashed
2 eggs
2 tablespoons any nut butter, warmed
1/4 teaspoon ground cinnamon

Steps:

  • Mix all ingredients in a medium mixing bowl until well mixed with no large clumps. The consistency should be perfect for pancakes, but if it seems too thick for you, add a couple tablespoons of water or almond milk.
  • Heat a large skillet (or griddle) over low-medium heat. Wait about 2 minutes for the pan to heat up and then coat with non-stick cooking spray.
  • Spoon approximately 1/3 cup of batter on to skillet or griddle for each pancake. I cook my pancakes two at a time since I don't have a griddle. Let the pancakes cook for approximately 3-4 minutes. Flip when bubbles form on the surface and do not fill with batter, and the edges are no longer shiny. Cook for another 2-3 minutes, checking the bottom for golden brown color.
  • Repeat until your batter is gone, spraying the pan between each set of pancakes.
  • Top with warm nut butter and maple syrup. Store in a sealed container in the fridge for up to 4 days.

CINNAMON HONEY MASHED SWEET POTATOES AND BANANA

Cinnamon Honey Mashed Sweet Potatoes and Banana image

I love to serve this all fall, but it also makes a wonderfully sweet Thanksgiving side. If you are cooking for a baby, you can optionally leave out the honey and add an additional tablespoon of dark brown sugar or scald the milk with honey it in to cook the honey so it is baby safe. My youngest is 11 months currently, and he had this last week, without consequence. Prepared in the above mentioned way.
