2/3 cup shortening
2 2/3 cups sugar
4 eggs
2 cups canned pumpkin
2/3 cup water
3 1/3 cups flour
2 to 3 teaspoons baking powder
1 teaspoon cinnamon
1 teaspoon ground cloves
1 1/2 teaspoons salt
2/3 cup nuts
Spray inside jars with food release spray

Steps:

  • Cream together shortening and sugar, beat in eggs, pumpkin and water. Sift together flour, baking powder, salt and spices. Add to pumpkin mixture. Stir in nuts. Pour mixture into greased wide mouth, pint jars filling 1/2 full. Bake at 325°F for 45 minutes. When done, remove one jar at a time, wipe sealing edge with paper towel or cloth, and screw cap on tightly. The heat will vacuum seal the jar and the bread will keep up to 1 year. VARIATIONS: Substitute for pumpkin, one of the following: 1 bag whole ground fresh cranberries plus 1 can whole berry cranberry sauce 1 3/4 cup applesauce plus 1/4 cup pineapple 1 3/4 cups applesauce plus 1/4 cup raisins 2 cups mashed bananas 2 cups apricots 2 cups shredded zucchini 2 cups chopped fresh peaches

2/3 c water
3 1/3 c all purpose flour
1/2 tsp baking powder
2 tsp baking soda
1 1/2 tsp salt
1 tsp ground cinnamon
1 tsp ground cloves
2/3 c pecans, chopped

Steps:

  • 1. Cream shortening and sugar until fluffy. Beat in eggs, pumpkin, and water. Sift together flour, baking powder, baking soda, salt, and spices. Add to pumpkin mixture. Stir in nuts. Pour into greased wide-mouth pint jars, filling them half full of batter.
  • 2. Bake at 325F degrees for approximately 45 minutes or until a wooden skewer inserted in the middle comes out clean. Remove jars from the oven and cool. When cool, add canning lid.
  • 3. If you are freezing, leave the pumpkin bread in the jars, add lid, and place in the freezer.

2/3 cup shortening
4 eggs
2/3 cup buttermilk
1 teaspoon vanilla
3 1/2 cups flour
1/2 teaspoon ginger
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
2 cups mashed ripe bananas
2/3 cup chopped nuts, your preference

Steps:

  • Preparation: set up 7 wide-mouth pint-size canning jars, metal rings and lids.
  • Don't use any other jars.
  • Sterilize jars, lids and rings according to manufacturer's directions.
  • Grease inside, but not the rim of jars.
  • Preheat oven to 325°F.
  • In large bowl cream sugar and shortening with electric mixer.
  • Add eggs and mix well.
  • Add buttermilk and vanilla and mix well.
  • Place dry ingredients in a separate large bowl and blend with a whisk.
  • Add creamed ingredients to dry ingredients and mix with whisk and spoon.
  • Gently stir in mashed bananas and nuts.
  • Pour one cup of batter into prepared jars.
  • DO NOT use more than one cup of banana bread recipe batter or it will overflow and jar will not seal.
  • Place banana bread recipe filled jars evenly spaced on a cookie sheet.
  • Place in a pre-heated 325F oven for 45 minutes, or until a toothpick inserted in center comes out clean. **Yield amount is pint jars.
  • Remove banana bread recipe jars from oven one at a time keeping remaining jars in oven.
  • Working quickly, wipe rim, place lid and ring on jar and secure.
  • Jars will seal quickly.

Cute little pumpkin cakes baked right in a jar. Great for gifts or to make and store around the house. They last up to 6 months once baked and sealed. If you like this, I will be posting many more so check them out. Special Equipment: 8 pint size canning jars with lids and rings (smooth sides and wide mouth only so the cakes will slide out).

2/3 cup shortening
2 2/3 cups sugar
4 eggs
2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/8 teaspoon ground ginger
2/3 cup water
2 cups canned pumpkin (not pumpkin pie mix)
3 1/2 cups flour
2/3 cup pecans (chopped) or 2/3 cup walnuts (chopped)

Steps:

  • Cream the shortening and the sugar together. Add the eggs, baking powder, soda, salt, and spices. Add water alternately with flour. Stir in nuts and pumpkin. Wash the 8 pint size jars in hot soapy water and allow to dry. Next grease them using a brush dipped in melted shortening.
  • Fill each jar 1/2 full of batter and wipe the rims clean. Bake on middle rack on cookie sheet at 325°F for 35 to 45 minutes.
  • Meanwhile bring pot of water to boil. Once it boils turn it off. Place the lids and rings in the water and let sit in water until ready to use. When the cakes are done, remove the jars one at a time and place the lid on (don't worry about wiping away the water, the added moisture will not hurt the cakes). Add ring and screw the lid on tightly. Let rest until cooled completely. Jars will seal on their own as they cool. Makes 8 pint size jar cakes that will last up to 6 months.
  • If giving as a gift, cover lid with pretty fabric and attach a card giving name of cake, date made, and expiration date.
  • If not for a gift, just write the info on lid with a marker.
  • When ready to eat, if cake does not come out easy just run under hot tap water for a few seconds or place in microwave with the lid removed for 2 seconds. Eat within 2 days after opening and store in refrigerator after it is opened.

Steps:

  • To prepare the layered mix:.
  • In a large bowl, combine the flour, pumpkin pie spice, baking powder, baking soda and salt, stirring until well blended.
  • Place mixture into a 1 quart jar.
  • Pack down this layer.
  • Add the brown sugar to the jar, firmly packing down.
  • Layer the white sugar on top of the brown sugar, firmly packing.
  • Layer the pecans and then the dried cranberries into the jar.
  • Makes base for one recipe of Layered Pumpkin Cranberry Bread.
  • For gift giving, place cap on jar and attach a ribbon and card with the following instructions:.
  • Preheat oven to 350°.
  • Grease and flour two 7 x 4 inch loaf pans(or 4 small loaf pans).
  • In a large bowl, combine the pumpkin, oil and eggs, stirring until well blended and set aside.
  • Place contents of jar into a medium bowl and mix until well blended.
