Steps:
- Preheat the oven to 350 degrees F.
- In a large bowl, toss the sweet potatoes generously with some olive oil, salt, cinnamon and cayenne. Lay the sweet potatoes out on a sheet tray, place them in the oven and roast until they are very soft and mushy, 30 to 35 minutes.
- Peel the apples and cut into 1-inch dice. Toss the apples with the lemon juice, some olive oil, salt and the rosemary. Lay them out on a sheet tray and place in the oven during the last 15 minutes of the cooking time for the sweet potatoes. When done, the apples should be soft and cooked through but still hold their shape. Sprinkle the walnuts over the apples during the last 5 minutes in the oven.
- Transfer the sweet potatoes to a large bowl and coarsely mash them with a potato masher. Stir in the cooked apples and walnuts. Taste and adjust the seasoning if needed.
- Serve immediately or keep in a warm oven and serve hot.

- Place sweet potatoes in a large pot with enough water to cover, and bring to a boil. Boil until tender, then cool, peel, and cut into 1/4 inch slices.
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
- Arrange half the sweet potatoes in the bottom of the prepared baking dish. Layer half of the apples over the sweet potatoes. In a small bowl, mix together brown sugar, salt, and mace, then sprinkle half of the mixture over the apple layer. Dot with half the butter. Repeat layers of sweet potato and apple, and top with remaining brown sugar mixture and butter.
- Bake in the preheated oven for 50 minutes, until apples are tender and top is golden brown.

- Wash and cook sweet potatoes in boiling water until just tender.
- Peel and cut into crosswise slices, about 1/4 inch thick.
- Butter a 2 quart ovenproof casserole.
- In a small bowl, mix together brown sugar, mace, salt, (pecans- if using them) and set aside.
- Arrange half the sweet potato slices in the bottom of buttered casserole, then half the apple slices on top of the potatoes.
- Sprinkle half the brown sugar mixture over all.

- Add the potatoes to a large pot and cover with water.
- Bring to a boil over high heat and cook until the potatoes are just starting to soften. You don't want them to cook until soft because they will continue to cook during the baking process.
- Preheat oven to 350°F and spray a 9x13" casserole dish with non-stick spray.
- Drain the potatoes and place them into the prepared baking dish.
- Add the apples to the casserole dish.

- Preheat the oven to 400 degrees F. Pull the leaves off the thyme stems. Discard the stems and roughly chop the leaves.
- Place the cream and cornstarch in a small bowl or pot. Whisk well. Add the butter, garlic, thyme, 1 1/4 teaspoon salt, and 1/2 teaspoon pepper. Heat over the stovetop, or in the microwave, just until the butter melts. Then turn off the heat and whisk again.
- Peel and slice each sweet potato one by one. Slice the potatoes into very thin rounds, 1/8-inch thick. Arrange each potato in a 9x13-inch baking dish, fanning it out in a pretty pattern.
- Before peeling and slicing the next sweet potato, pour a little of the cream mixture over the potato slices in the pan, so it does not brown while you work on the other potatoes.

- Toss sweet potatoes with 1 tablespoon oil in a large bowl until well coated. Divide between 2 large baking sheets and spread in an even layer. Roast, rotating the pans from top to bottom about halfway through, until tender and beginning to brown, 20 to 25 minutes.
- Meanwhile, heat the remaining 2 tablespoons oil in a large saucepan over medium heat. Add onion; cook, stirring frequently, until very soft and golden brown, 5 to 8 minutes. Add flour, salt and pepper; cook, stirring, for 1 minute more. This is the perfect side dish on a chilly Autumn evening. The apples give it just the right amount of sweetness, and it smells heavenly cooking. I actually cooked this in a smaller oval casserole dish and used 2 sweet potatoes and 3 apples, so obviously the amounts are very flexible. Just reduce the other ingredients and make sure you use enough OJ so that it covers about 2/3 of the sweet potatoes and apples. Yum! I got this wonderful recipe from my friend Shell Marr.

- Fill large bowl with cold water. Working with 1 Yukon Gold potato at a time, peel, then cut into 1/8-inch-thick rounds and place in bowl with water. Repeat with sweet potatoes. Combine cream, butter, and garlic in medium saucepan; bring to simmer. Remove from heat. Mix all herbs in small bowl. Mix sea salt and black pepper in another small bowl.
- Butter 13x9x2-inch glass baking dish. Drain potatoes, then pat dry with kitchen towels. Transfer half of potatoes to prepared baking dish. Use hands to distribute and spread evenly. Sprinkle with half of salt-pepper mixture, then half of herb mixture. Sprinkle with half of cheese. Repeat with remaining potatoes, salt-pepper mixture, herb mixture, and cheese. - Heat the oven to 350˚F. Thinly slice the sweet potato, ideally using a mandolin. I slice mine on the thinnest setting of my small tabletop mandolin. Thickly slice the apple into ¼” thick pieces using a sharp knife.
- Melt the butter, coconut sugar, cinnamon, cardamom, nutmeg, and salt together. (I zap mine in a microwave safe dish for 30 seconds, and stir.)
- Arrange two layers of thin sweet potato slices in the small casserole dish. Spoon over ½ of the spicy butter. Arrange the sliced apples and onions on top and dot with gorgonzola. Layer the remaining sweet potato slices on top. Pour the half and half over the layers.
