2 cups cubed peeled sweet potatoes
2 tablespoons butter
1 tablespoon olive oil
1 medium onion, chopped
1 small sweet red pepper, chopped
3 green onions, chopped
1 red chili pepper, seeded and finely chopped
3 garlic cloves, minced
2 cups cubed fully cooked ham
1/2 teaspoon pepper
1/4 teaspoon salt
4 eggs
1/4 cup shredded white cheddar cheese

Steps:

  • In a large skillet, saute sweet potatoes in butter and oil until crisp-tender. Add the onion, red pepper, green onions and chili pepper. Saute 4-5 minutes longer or until tender. Add garlic; cook 1 minute longer. Stir in the ham, pepper and salt., With the back of a spoon, make four wells in the potato mixture; add an egg to each well. Sprinkle with cheese. Cover and cook for 4-5 minutes or until egg whites are completely set.

6 potatoes, peeled and cubed
1 onion, diced
1/2 cup ham, shredded
1 -2 tablespoon olive oil
1 tablespoon butter
1/2 cup cheddar cheese, shredded
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon onion salt
1/4 teaspoon cayenne pepper
1/2 teaspoon garlic powder
1/2 teaspoon cajun seasoning

Steps:

  • Heat oil in large skillet over medium-high heat until sizzling.
  • Add cubed potatoes and the last six ingredients to pan.
  • Fry potatoes until golden brown and fork tender, stirring occasionally.
  • Then add the butter and diced onion. Mix.
  • When the onion has softened slightly, add the ham to the pan and mix again to combine.
  • Once heated through sprinkle the cheese over hash.
  • Serve when cheese has melted.

2 ham steaks
¼ cup packed brown sugar
1 (8 ounce) can crushed pineapple, drained
1 (15 ounce) can sweet potatoes, drained
1 cup miniature marshmallows

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Tear off two large sheets of aluminum foil. Place one ham slice onto each piece of foil, and sprinkle brown sugar on both sides. Spread a little bit of the crushed pineapple over the ham, then top with sweet potatoes. Sprinkle a little bit more brown sugar and pineapple over the sweet potatoes. Close the aluminum foil tightly around the ham, and place on a baking sheet.
  • Bake for 30 minutes in the preheated oven. Remove from the oven, and carefully open the packets. Sprinkle miniature marshmallows over the top, and return to the oven with the foil open. Bake for another 10 minutes. If you want the marshmallows really toasty, you could brown them under the broiler for a couple of minutes. You will end up with a sweet, juicy ham dish and very few dishes to wash.

2 tablespoons vegetable or olive oil
1 large onion, cut into 1/2-inch dice
1 pound ham cut into 1/2-inch dice
1 pound potatoes, cut into 1/2-inch dice
½ pound sweet potatoes, cut into 1/2-inch dice
2 tablespoons vegetable or olive oil
2 tablespoons ketchup
1 tablespoon Dijon mustard
½ teaspoon dried thyme leaves
2 tablespoons chopped fresh parsley
Salt and freshly ground black pepper

Steps:

  • Heat 2 Tbs. oil over low heat in a 12-inch non-stick skillet (so potatoes don't stick). While skillet heats, prepare onion and ham as directed above. A few minutes before cooking, increase heat to medium-high. When oil starts to send up wisps of smoke, add onion and ham; cook, stirring often, until golden brown, 7 to 8 minutes. Meanwhile, dice potatoes and toss with remaining oil. Transfer ham mixture to a bowl and reserve.
  • Add potatoes to empty skillet; cook, stirring only occasionally so they form a golden-brown crust, about 10 minutes. As potatoes cook, mix ketchup, mustard, dried thyme, fresh parsley and 2 Tbs. of water. (Recipe can be prepared to this point up to 2 hours ahead. Spread hot potatoes on a large lipped cookie sheet; cover when cool. Return skillet to medium-high; add potatoes and re-crisp.)
  • Return reserved ham mixture to skillet; stir in ketchup mixture, then season with salt and pepper. Cook, stirring frequently, until hash has nicely browned, about 5 minutes longer.

1 1/2 cups diced cooked sweet potatoes (slightly firm in texture)
2 medium onions (minced and sauteed in 2 tablespoons butter for 2 minutes)
1/2 large green bell pepper, finely chopped
1/2 teaspoon ground sage
salt
fresh ground black pepper
3/4 cup heavy cream
4 tablespoons butter
4 large eggs
minced fresh parsley leaves

Steps:

  • In a big bowl, combine the ham, sweet potatoes, onions, bell pepper, sage, salt, pepper, and cream; stir to blend.
  • With your hands, form into a large cake.
  • In a large skillet, melt half the butter over med-high heat; add the ham cake, and press down evenly with a spatula to form a compact oval cake.
  • Decrease heat to medium and cook the hash about 5 minutes or until the underside is browned and crusty.
  • Loosen the hash with the spatula and invert onto a plate.
  • Add the remaining butter to the skillet and increase the heat slightly; slide the other side of the hash into the skillet, decrease heat to medium, and cook about 5 minutes or until the other side is browned and crusty.
  • Transfer hash to a heated platter and keep warm.
  • Break the eggs gently into 1 or 2 saucepans of boiling water, poach for 2 minutes, and transfer with a slotted spoon to a clean cloth to drain.
  • Top hash with the poached eggs and sprinkle with minced parsley.

1/4 cup Dijon mustard with horseradish
2 cups coarsely chopped watercress tops plus 4 sprigs for garnish
4 large eggs

Steps:

  • Heat 3 tablespoons oil in large nonstick skillet over medium-high heat. Add yam cubes; cover and cook 5 minutes. Mix in ham, onion, and mustard. Cover and cook until yam is tender and bottom of hash begins to brown, about 8 minutes. Sprinkle with pepper. Using spatula, turn hash over in portions and press to compact. Cook uncovered until golden, turning and pressing occasionally, about 10 minutes longer. Stir in chopped watercress until wilted, about 1 minute.

3/4 pound cooked lean ham, cut into 1/4-inch dice
1 pound sweet potatoes, cooked, peeled and cut into 1/2-inch dice
1 small onion, peeled and cut in small dice
1/2 medium green bell pepper, stemmed, seeded, deribbed and cut in small dice
1/2 cup heavy cream
2 large eggs
1 tablespoon chopped fresh sage or 1 teaspoon dried sage
Freshly ground black pepper to taste
3 tablespoons unsalted butter

Steps:

  • In a large bowl combine ham, potatoes, onion and green pepper. In a small bowl, whisk together cream, eggs, sage and pepper and add to the ham mixture.
  • Preheat broiler. In a medium-sized skillet, melt 1 1/2 tablespoons of the butter over high heat. When almost brown, add the hash, reduce the heat to medium and cook for 4 minutes, gently shaking the pan occasionally to loosen the hash at the bottom.
  • To brown the top, invert hash into an overproof dish and place under broiler for 3 to 5 minutes.
