Categories     side-dish

Time 1h20m

Yield 6 to 8 servings

Number Of Ingredients 10

1 tablespoon unsalted butter, plus more for the dish
1/4 cup breadcrumbs
1/4 cup crushed gingersnap cookies
2 cups heavy cream
1/4 cup pure maple syrup
2 teaspoons fresh thyme
1/4 teaspoon ground allspice
Kosher salt
Pinch of cayenne pepper
3 pounds sweet potatoes (6 to 8 medium), peeled and sliced 1/4 inch thick

Steps:

  • Preheat the oven to 375 degrees F. Melt the butter in a small skillet over medium heat. Add the breadcrumbs and gingersnap crumbs and cook, stirring, until lightly toasted, 3 to 5 minutes; set aside.
  • Combine the heavy cream, maple syrup, thyme, allspice, 1 1/2 teaspoons salt and the cayenne in a medium saucepan. Bring to a boil, then remove from the heat.
  • Butter a 3-quart baking dish. Spread a single layer of sweet potatoes in the bottom of the baking dish and pour about one-third of the cream mixture on top. Repeat to make 2 more layers of potatoes and cream. Cover with foil and bake 40 minutes. Uncover and continue to bake until the cream is bubbling and the potatoes are lightly browned and tender when pierced with a knife, 40 to 50 more minutes, sprinkling the breadcrumb mixture over the potatoes during the last 5 minutes of baking.

SWEET POTATO GRATIN

Sweet Potato Gratin image

Provided by James Briscione

Categories     side-dish

Time 2h

Yield 6 to 8 servings

Number Of Ingredients 8

3 pounds sweet potatoes (about 6 medium)
1 tablespoon minced garlic
1 tablespoon kosher salt
1 teaspoon ground black pepper
2 tablespoons unsalted butter
1 cup grated Parmesan, plus more for topping
1 cup grated Gruyere, plus more for topping
2 cups half-and-half

Steps:

  • Preheat the oven to 375 degrees F.
  • Peel the sweet potatoes, and then slice them into even rounds (1/8-to-1/4-inch thick). A mandoline or the slicing attachment on a food processor is the best way to do this.
  • Place the sliced sweet potatoes in a large mixing bowl. Add the garlic, salt and pepper. Toss well to coat.
  • Coat the inside of a 3-quart baking dish with the butter. Arrange an overlapping layer of sweet potatoes on the bottom of the dish in a clockwise pattern. Sprinkle around some of the Parmesan and Gruyere cheeses. Continue layering the gratin, going in a counter-clockwise direction (this will keep the gratin from falling over on your plate after it is cut). Again, add some of the cheese before adding the next layer. Continue alternating layers until the gratin is full.
  • Bring the half-and-half to a simmer on the stovetop and pour it over the potatoes. Cover the baking dish with aluminum foil and place a heatproof dish on top of the foil. Place in the oven to bake for 20 minutes.
  • Remove the foil from the baking dish and cover the top of the gratin with some extra grated cheese. Continue baking until the top is golden brown and bubbling, 20 to 30 minutes more. Remove from the oven and cool 20 minutes before serving.

SWEET POTATO AND GRUYèRE GRATIN

Sweet Potato and Gruyère Gratin image

This rich, cheese-laden gratin is a more savory take on the usual Thanksgiving sweet potato casserole, with sage and rosemary giving it an herbal bite. If you'd like to make it partway ahead, you can peel and slice the potatoes the day before; store in a sealable plastic bag in the fridge. You can also simmer the cream mixture (don't add eggs) and grate the cheese the day before as well, storing them covered in the refrigerator.

Provided by Melissa Clark

Categories     casseroles, side dish

Time 1h30m

Yield 12 servings

Number Of Ingredients 12

3 tablespoons unsalted butter, softened, for pan and foil
1/3 cup grated Parmesan
2 cups heavy cream (or half-and-half)
3 tablespoons fresh sage, chopped
1 tablespoon fresh rosemary, finely chopped
3 fat cloves garlic, grated or minced
1/4 teaspoon freshly grated nutmeg
1 1/2 teaspoons kosher salt, plus more as needed
3 large eggs, lightly beaten
3 pounds sweet potatoes (about 4 large or 5 medium), peeled
Freshly ground black pepper, to taste
1 2/3 cups/6 1/2 ounces grated Gruyère

Steps:

  • Heat oven to 400 degrees and generously butter a 9-by-13-inch baking pan or shallow gratin dish. Butter a piece of foil large enough to cover top of pan. Sprinkle Parmesan all over bottom of pan.
  • In a medium pot, bring cream, sage, rosemary, garlic, nutmeg and a pinch of salt to a simmer. Simmer until reduced by 1/4, about 10 minutes.
  • In a large, heatproof bowl, whisk eggs just enough to break them up. Slowly pour hot cream into eggs to combine, whisking while pouring, and reserve the mixture.
  • Meanwhile, using a mandoline or sharp knife, slice the potatoes into 1/8-inch-thick rounds.
  • Place 1 layer of potatoes in the pan, slightly overlapping as you go, using about a third of the slices. Sprinkle with 1/4 teaspoon salt and pepper to taste, then pour 1/3 of the egg mixture over potatoes. Top with 1/2 cup Gruyère. Repeat with another layer of potatoes, 1/2 teaspoon of salt, pepper and 1/3 egg mixture. Top with 1/2 cup Gruyère. Top with remaining potatoes, 1/4 teaspoon salt, pepper to taste, and remaining egg mixture (but not the remaining cheese). Press down to compact the potatoes. Cover with foil and bake until potatoes are tender, about 40 minutes, then remove foil, sprinkle top with remaining 2/3 cup Gruyère and bake until browned and bubbling, 25 to 30 minutes. Let cool slightly, then serve.

PARSNIP, POTATO AND LEEK GRATIN

Parsnip, Potato and Leek Gratin image

Number Of Ingredients 13

2 leeks, washed and thinly sliced
3 large cloves garlic, mashed
Baleia Extra Virgin Olive Oil
500g parsnips, peeled and thinly sliced
500g potatoes, peeled and thinly sliced but not as thin as the parsnips
100g Kasselshoop Cheddar Cheese, grated
100g gruyere cheese, grated
750ml pouring cream
1 tbsp flour
1 ¼ tsp salt
¼ tsp ground nutmeg
freshly ground black pepper
fresh thyme leaves

Steps:

  • Preheat the oven to 200 degrees C and grease a baking dish of approx 23cm x 30c in size
  • Fry the leeks and garlic with a good glug of olive oil over a medium heat for about 5 minutes
  • Layer half the parsnips, potatoes and all the leeks in the baking dish and sprinkle with half of the cheese, reserving the bigger slices of parsnips and potatoes for the final layer
  • Press down firmly and place a last layer of parsnip and potato slices in overlapping rows and press down again
  • Using the same pot you used for the leeks, heat the cream and whisk in the flour, salt, nutmeg and black pepper
  • When the cream just comes to a simmer, pour over the layered vegetable, slanting the baking dish to all side to get the cream in all over the slices
  • Sprinkle the remaining cheese over the top, dot with a few leaves of thyme
  • Cover securely with foil and bake for 60 minutes
  • Remove the foil and pierce with a fork. The parsnips should be al dente (If not place back in the oven (covered) for another 15 minutes until al dente)
  • Remove the foil (don't worry if the sauce looks watery and thin) and bake uncovered for 15 minutes until golden and bubbly
  • Let the gratin sit for 15 minutes to set and thicken before serving

SWEET POTATO GRATIN WITH GRUYERE

Sweet Potato Gratin with Gruyere image

I found this recipe last Thanksgiving. Certainly not "traditional" but I am making it one for us. YUMMMMMMM Last year I had to make a second batch to have with other leftovers.

Provided by Lindsey G

Categories     Potatoes

Time 1h45m

Number Of Ingredients 4

2 c heavy cream
1 tsp salt
3 lb sweet potatoes, peeled
1/2 c shredded gruyere cheese

  • 2. Spray baking dish with nonstick spray. Place baking dish on baking sheet.
  • 3. Stir together heavy cream and salt in large bowl. Using mandoline, slice yams into bowl, coating slices with cream mixture as you work.

  • Select potatoes that are as similar in size and as evenly cylindrical as possible. Put them on a baking sheet in a cold oven and turn the oven to 400 degrees. Bake until tender but not soft, about 50 to 55 minutes. The potatoes should be easy to penetrate with a knife, but not mushy.
  • Remove the potatoes and set them aside until they are cool enough to handle. Meanwhile, butter an 8-inch-square earthenware, glass or enameled cast-iron baking dish.
  • Trim away the pointed ends of the potatoes and remove the peel, taking care to keep the flesh intact. Cut in roughly one-fourth-inch to one-third-inch slices and arrange the slices in a single, overlapping layer in the baking dish. Use the smallest slices in the back row (it will be mostly covered) and to fill in spaces. Season with salt and a generous amount of freshly ground black pepper.
  • Beat together the whipping cream and creme fraiche until smooth, about 45 seconds, and drizzle it evenly over the top of the potatoes. There should be enough cream to come halfway up the potatoes, but not so much that they're swimming in it. Scatter the Gruyere over the top and dot with butter.

  • Combine the cream, milk, 1 tablespoon butter, and garlic in small saucepan and place over low heat. Watch the pot to be sure it doesn't boil over while you proceed with the rest of the recipe.
  • Butter a 10-inch round or square baking dish with the remaining ½ tablespoon of butter. Transfer half of potatoes to the prepared baking dish, arranging them so that you are alternating the sweet potato slices with some Yukon Gold potato slices. Sprinkle with half of the salt, pepper to taste, and half of the fresh thyme. Sprinkle with half of the Gruyère and Parmesan cheese. Repeat layering with remaining potatoes, salt, pepper, thyme, and cheese. Use your hands to compact the mixture down into the baking dish and then pour the cream mixture over the top.
  • Select the BAKE function. Turn the temperature to 400 degrees F. and preheat the oven. Cut off a sheet of foil large enough to cover your dish and coat the bottom side with non-stick cooking spray. This will ensure the cheese will not stick to the foil when you remove it. Cover the gratin tightly with the foil and transfer the dish to the oven. Bake for 35 minutes.

  • Add the "Herb Cream" ingredients to a medium saucepan and bring to a gentle simmer. Simmer for 5-10 minutes while you grease a 9x13 casserole dish and peel and slice potatoes into 1/8 inch slices. Transfer potatoes to a large bowl. Discard bay leaves.
  • Spoon just enough of the herb cream that has been simmering to cover the bottom of the casserole dish. Pour the remaining cream over the potatoes and gently toss to coat.
  • Using a slotted spoon, layer the bottom of the casserole dish with 1/3 of the potato/onion slices (the slotted spoon will allow you to leave most of the cream in the bowl). Layer 1 cup of the cheese, 1/3 of the bacon then top with 1/3 of remaining cream. Repeat layers.

  • Preheat your oven to 400 degrees. Using your mandolin slicer, thinly slice all of the peeled sweet potatoes and parsnips. Grease your 13” x 9” baking dish with the butter and sprinkle the minced garlic and 1 teaspoon ground nutmeg on the bottom of the dish.
  • Stacking up a combination of the sweet potatoes and the parsnips up against each other, stack them into the baking dish, with the edges aligned vertically. Continue until all of the sweet potatoes and parsnips are in the baking dish and the baking dish is full. You can create any type of pattern here if desired. Have fun with it!
  • In a small mixing bowl, whisk together the heavy cream, chicken stock, 1 teaspoon kosher salt and 1 teaspoon black pepper and remaining 1 teaspoon of nutmeg and pour evenly over the sweet potatoes and parsnips. Sprinkle the cheese over the top and season again with just a pinch of salt and pepper and fresh thyme leaves.
