HOUSEMADE HABANERO PICKLES



Housemade Habanero Pickles image

10 pounds pickling cucumbers, sliced into pickle-sized rounds
6 habaneros, sliced
1/2 cup chopped garlic
2.5 quarts apple cider vinegar
1 cup kosher salt
3 tablespoons pickling spice

Steps:

  • Put cukes, habaneros and garlic in a 5-gallon bucket.
  • Meanwhile, bring vinegar, salt, pickling spice and 2 1/2 quarts water to a simmer in a large pot (do not boil). Pour into bucket.
  • Let cool completely, refrigerated, then cover and continue to refrigerate 2 to 3 days more.

This pepper relish is a sweet and hot condiment that we love. We use it on hot dogs, with our beans and cornbread, in deviled eggs and salads (tuna, egg, chicken) for a kick. When we make this folks start asking for a jar. So delicious.

12 c habanero peppers chopped
6 onions, chopped
10 bell peppers, chopped
4 c apple cider vinegar
2 1/2 c sugar
2 tsp mustard seed
2 tsp celery seed
2 Tbsp pickling spice
1 pinch cinnamon
1 Tbsp turmeric, ground

Steps:

  • 1. Wash and chop peppers. I leave seeds in because we like the heat. Wash and chop bell peppers. Chop onions. I use a food processor to get it all done quickly.
  • 2. In a large pot combine your peppers & onion with apple cider vinegar, seasoning (put pickling spice in cheesecloth). Bring to a boil. I also add a few dashes of a honey lime balsamic vinegar we love. When you take it off the heat, stir in 1 Tbsp. Turmeric.
  • 3. Sterilize jars and lids. Fill jars, wipe sides and put on lids and rings. Hot water bath for 10 minutes. Let set until they all seal.
  • 4. Made 2 half pints, 9 pints and 12 4 oz jars.

MANGO-HABANERO SALSA

This sweet and spicy salsa combines mangoes, habaneros, fresh cilantro and lime.

1 garlic clove
Kosher salt
1/4 cup coarsely chopped fresh cilantro
2 tablespoons extra-virgin olive oil
2 ripe mangoes, peeled, pitted and diced (about 2 1/2 cups)
4 scallions, thinly sliced
1 habanero chile, stemmed, seeded, and finely chopped,
Juice of 2 limes
Tortilla chips, for serving

Steps:

  • Finely chop the garlic, sprinkle with 1 1/4 teaspoon salt, and mash into a coarse paste using flat side of a large knife. Mix the garlic paste with cilantro, oil, mango, scallions, habanero and lime juice. Set aside for at least 15 minutes to allow the flavors to meld. Season with additional salt and serve with tortilla chips for scooping.

Steps:

  • Add all ingredients to a large pan and heat to medium heat. Stir until the sugar dissolves. Bring to a light boil.
  • Reduce heat to low and simmer about 25-30 minutes, or until liquid is reduced and absorbed into the mixture.
  • Add to a jar and allow to cool.
  • Serve!

4 habaneros, stems removed seeds are your choice Cleaning your peppers of all veins and seeds will reduce the bit
1 cup grated carrot
1 lime, zest and juice
12 Thai chiles
10 ounces mango puree
1 onion, rough chopped about 1 cup
4 garlic cloves
1/2 cup vinegar
3/4 cup sugar
1 teaspoon salt

Steps:

  • In the food processors add the first 7 ingredients and pulse till small pieces. Add to pot with remaining ingredients.
  • Then when soft about 10 minutes of cooking add to a blender to puree. Carefully place in blender, place a towel over the top, and start blender at the slowest setting and increase slowly so you`ll have no splatter. You can also run your sauce through a hand crank food mill. If one is not available, a kitchen sieve will also work. The objective is to remove or crush any solid matter left in the sauce and squeeze out every drop. Run the pulp through the blender adding 1 tablespoon vinegar and then press again. I ended up with 1 tablespoon pulp. Which you can refrigerate the pulp and use to add to whatever you want to kick up. Bring sauce back to a boil.
  • Hot Pack Instructions:.
  • To sanitize and prepare your bottles for filling, place the empty bottles in a pot, and cover and fill the bottles with water. Bring the pot of water to a boil and boil the bottles for 5 minutes. Turn off heat; remove the bottles using tongs and hold upside down to remove the water. Do not boil the dropper fitments or caps.
  • Hold the hot bottle with a dry towel and fill it with the hot cooked sauce using the funnel. It may help to first pour the cooked sauce into a clean measuring cup with a spout and then pour into the funnel from the measuring cup. Place the dropper cap on the bottle and screw the cap on tight. Turn the bottle upside down and let set for 5 minutes; this will sanitize the lid. If you choose to use the tamper proof seals, you can use a hairdryer to shrink them in place over the cap. At this point your bottled sauces should be stored refrigerated.
  • If canning, pour hot liquid in hot bottles place in a water bath cover the plastic tops. The plastic restrictors and the liners in the caps cannot be boiled separately.
  • Aging:.
  • The longer the sauce ages, the more complex the flavor will become. Properly packed hot sauce will last six to nine months unopened.
  • Take note on Water Bath Canning:.
  • Thoroughly wash lids and smaller sized jars (Quart size not recommended) in hot sudsy water, then rinse. Heat jars and lids in hot water, approximately 180 degrees, prior to filling. Fill canner with water as indicated below, position rack and begin to heat.
  • Fill hot jars with prepared recipe. Leave recommended headspace according to recipe.
  • Wipe jar rims with a clean damp cloth. Position heated lid on jar and screw it on.
  • Place each jar into canner rack, prior to water reaching a boil and lower rack. Water should be 1 to 2 inches over jar tops. Add additional hot water if needed. Cover canner. Process jars according to your recipe. Start timing when water begins to boil.
  • After processing, lift rack and hook over rim. Remove jars from canner with your jar lifter. Do not carry jars in canner rack. Set jars on a towel to cool for 12 to 24 hours.
  • When jars are cool, test for a seal by pressing down on center of lid. If lid center is flexible, either reprocess immediately or store refrigerated. Label and store in a cool, dry, dark place.

1 Cup Sugar
4 ea. Unripe (green) Mango* (Peeled, Small Diced)
1 ea. Lime, Rind Only (¼" Diced)
1 Tbsp Mustard Seed (Yellow)
¾ Cup Apple Cider Vinegar
4 ea. Garlic Cloves (Smashed)
½ Cup Water
1 ea. Red Fresno Chili (Seeded ⅛" Diced)

Steps:

  • In a large saucepan, combine the onion, mustard seed, salt, vinegar, ginger, garlic, sugar and the water.
  • Mix to combine and bring to a simmer for 5 minutes.
  • Remove the ginger and garlic from the simmering mixture.
  • Add the mangos, Fresno chilies, and lime rinds to the saucepan and simmer for another 10 minutes.
  • Remove from the heat and refrigerate overnight.
  • Taste and adjust the seasoning, as necessary.
  • Cover and store in the refrigerator for up to 2 weeks.

20 habanero peppers (approximately 1/2 pound)
1 cup water
1 cup white vinegar
1 tablespoon sugar
1 tablespoon salt
1 tablespoon garlic (minced)

Steps:

  • Cut the tops off of the habanero peppers. Leave the seeds and membrane in place for hotter pickled habaneros, or remove them to reduce heat.
  • Slice the habaneros into either thin slices or rings, and place the chilies into a mason jar.
  • In a saucepan over medium heat, combine the white vinegar, water, sugar, salt, and garlic. Bring the mix to a quick boil, then remove from the heat.
  • Slowly pour the vinegar mix over the habanero peppers, then let the jar sit at room temperature uncovered until the liquid cools.
  • Once cooled, seal the jar with its lid, then refrigerate.

20-30 habanero chiles (stems removed)
3 cups white vinegar
2 tsp coarse, kosher salt
3 1 pint Mason-style canning jars (sterilized)

Steps:

  • Select habaneros that are fresh, firm, and free of blemishes. Wash in a mild bleach solution (1 teaspoon household bleach to 1 quart of warm water), rinse and allow to dry overnight.
  • Wearing food-safe gloves and using a sharp paring knife, cut two slits in the top of each chile. Tightly pack the chiles into the sterilized jars.
  • In a medium saucepan, combine the vinegar, water and salt. Bring to a boil and pour over the chiles. Seal the jars and store in a cool, dark place for at least 4 weeks before serving.

1 Small Mango, peeled and chopped into large chunks
1/2 cup BBQ Sauce
2 tbsp Habanero Chili Powder, Chili Powder, or Fresh Habanero
1/2 tbsp Garlic Powder
4 tbsp Apple Cider Vinegar
6-8 Bone in skin on chicken wings.
Sliced Green Onion & Fresh Cilantro, for garnish

Steps:

  • Blending ingredients 1-5 in a blender or food processor until a smooth sauce comes together.
  • Transfer the chicken wings to a large bowl then generously cover with the mango habanero sauce and toss to coat.
  • Cover the chicken wings with cling wrap and allow to marinate for a minimum of two hours, or-overnight, in the fridge.
  • Once the wings have marinated, remove them from the fridge and preheat oven to 400°.
  • Transfer the marinated wings to a large baking sheet lined with foil and a little bit of cooking oil, to prevent the wings from sticking.
  • Brush the wings with the additional marinade and bake for 25-30 minutes or until caramelized and brown.
  • Transfer the finished wings to a large tray or platter and garnish with green onion and cilantro if desired.
  • Leftover wings can be covered stored in an airtight container in the fridge for up to 4days.
