Sweet Potato and Brie Flat Bread

Number Of Ingredients 10

1 pound frozen pizza dough, thawed
cornmeal for the baking sheet
1 medium sweet potato, peeled, halved, and thinly sliced
2 shallots, thinly sliced
8 sprigs fresh thyme
4 tablespoons olive oil
kosher salt and black pepper
4 ounces Brie, sliced
2 teaspoons red wine vinegar
4 cups mixed greens (about 3 ounces)

Steps:

  • Heat oven to 425°F. Shape the dough into a large oval and place on a cornmeal-dusted baking sheet.
  • In a medium bowl, toss the sweet potato, shallots, thyme, 3 tablespoons of the oil, ½ teaspoon salt, and ¼ teaspoon pepper.
  • Scatter the potato mixture over the dough and top with the Brie. Bake until golden brown and crisp, 20 to 25 minutes.
  • Meanwhile, in a bowl, whisk together the vinegar, remaining tablespoon of oil, and ¼ teaspoon each salt and pepper.
  • Toss the dressing with the greens. Serve with the flat bread.

1/2 sweet potato, peeled and sliced 1/8-inch thick with a mandoline
1/2 small red onion, thinly sliced
2 sprigs fresh rosemary, leaves picked
3 tablespoons olive oil
Flour, for dusting surface
1 pound store-bought pizza dough, at room temperature
6 ounces brie cheese, sliced
Kosher salt and freshly ground pepper

Steps:

  • Adjust the racks to the middle of the oven and preheat to 475 degrees F. Spray a half baking sheet with nonstick spray.
  • Add the sweet potato to a large bowl and toss with the red onion, rosemary, 2 tablespoons olive oil, salt and pepper.
  • Flour your work surface and stretch the dough out to an oblong rectangular shape. (You may need to use a rolling pin.) Place the dough on a sheet tray and top with the sweet potato mixture in an even layer. Drizzle with 1 tablespoon of olive oil and scatter the slices of brie.
  • Bake until golden and crisp, 15 to 17 minutes. Slice into wedges and serve.

  • Blend the flour and salt together in a bowl then stir in the mashed sweet potato until the flour is completely absorbed. If the mixture seems wet and sticky then add a couple tablespoons of flour (some sweet potatoes have more moisture and will require a bit more flour). Allow the dough to rest for 5 to 10 minutes.
  • Dust the counter top with flour and shape the dough into a log then divide the dough into 8 to 10 portions and roll them into small balls.
  • Coat the dough balls well with flour and roll them out until they are about 1/8 of an inch thick (roughly the thickness of 2 quarters stacked on each other). If you want to make tortillas then roll them out a bit thinner.
  • Heat a non-stick pan on medium to medium low heat and cook for 1 to 2 minutes on each side. I like to flip them every 30 seconds to ensure they don't get too brown, if they are browning too fast I turn the skillet down a tad. If the dough puffs up as it cooks, just push the air bubbles out with a spatula.
