NOODLE KUGEL WITH CHERRIES



Noodle Kugel with Cherries image

This sweet version of classic baked noodle pudding is sprinkled with cinnamon sugar and served warm as a side dish.

1 container (16 oz.) BREAKSTONE'S or KNUDSEN 2% Milkfat Low Fat Cottage Cheese
1 container (16 oz.) BREAKSTONE'S or KNUDSEN Sour Cream
1 cup sugar
5 eggs, beaten
1/2 cup (1 stick) butter or margarine, melted
1 Tbsp. vanilla
1 pkg. (12 oz.) broad egg noodles, cooked, rinsed and drained
1/2 cup dried cherries
1 Tbsp. cinnamon sugar

Steps:

  • Mix all ingredients except noodles, cherries and cinnamon sugar until well blended. Add noodles and cherries; mix lightly.
  • Spoon into 13x9-inch baking dish; sprinkle with cinnamon sugar.
  • Bake at 350°F for 50 minutes to 1 hour or until lightly browned. Cool at least 10 minutes; cut into squares. Serve warm.

1 pound wide egg noodles
3/4 cup dried sour cherries (4 ounces), chopped
2 cups heavy cream
2 cups whole-milk cottage cheese
4 large eggs, beaten, plus 2 large egg yolks
3/4 cup plus 3 tablespoons sugar
1 vanilla bean, seeds scraped
3 cups corn flakes, coarsely crushed
1/2 cup pecan halves, finely chopped
3 tablespoons unsalted butter, melted

Steps:

  • 1. Preheat the oven to 350°. In a large pot of boiling salted water, c egg noodles until al dente. Drain the noodles, reserving 1 cup of the c water. Add the chopped sour cherries to the reserved cooking water stand for 5 minutes. 2. In a large bowl, whisk the heavy cream with the cottage cheese, eggs, egg yolks, 3/4 cup of the sugar and the vanilla seeds. Drain the cherries and add them to the bowl. Stir in the noodles. Pour the noo mixture into a 9-by-13-inch ceramic baking dish. 3. In another bowl, toss the crushed corn flakes with the chopped p melted butter, a pinch of salt and the remaining 3 tablespoons of sug Scatter the corn-flake mixture over the noodles and bake in the cent oven for about 45 minutes, until the noodle kugel is set and the topp golden. Transfer the kugel to a rack and let cool slightly before servi MAKE AHEAD The noodle kugel can be refrigerated for up to 3 days. room temperature and rewarm before serving.

This is the style of kugel we'd get in a New York City area Jewish deli, and that my relatives would make for holidays. There seems to be endless variations of this noodle pudding now, but for me this is the authentic original version. Refrigerate leftovers.

1 (8 ounce) package wide egg noodles
2 cups small curd cottage cheese
1 ½ cups sour cream
½ cup white sugar
½ cup raisins
3 large eggs, beaten
½ teaspoon salt
¼ teaspoon ground cinnamon
⅛ teaspoon ground nutmeg

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking dish.
  • Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain.
  • Mix cottage cheese, sour cream, sugar, raisins, eggs, salt, cinnamon, and nutmeg together in a large bowl. Mix in cooked noodles. Pour into the prepared baking dish.
  • Bake, uncovered, in the preheated oven, until golden brown on top, about 40 minutes.
