ITALIAN SAUSAGE BURGERS
Grill something different with these Italian Sausage Burgers! They're loaded with roasted red bell peppers, pepper rings, and fresh basil.

Steps:
- Preheat your grill to medium-high heat (about 450 degrees F).
- While the grill preheats, add the ground hot and sweet Italian sausage in a large bowl. Roll up your sleeves and use your hands to combine.
- Form the meat into four balls and lightly press each into 5-inch-wide, 1 ¼ -inch-thick patties.
- In the middle of each burger, use your knuckle or thumb to make a 2-inch indentation (this will keep the burgers from puffing when grilled).
- Place the patties on the preheated grill. Leave them undisturbed until grill marks form on the bottom, about 5-6 minutes.
- Flip the burgers and grill until the burgers feel firm and the other side is marked for about 4-6 minutes.
- Remove the burgers from the grill and top each with a slice of Provolone cheese.
- Move the burgers to the toasted Kaiser rolls and top with roasted bell peppers, pepper rings, and basil leaves.
- Serve and enjoy.

- Gently toss together the chuck and sirloin in a large bowl, making sure not to overwork the mixture.
- Combine the dried parsley, fennel seed, granulated garlic and red pepper flakes in a small bowl. Sprinkle the spice mixture over the beef along, with the Parmesan, and fold gently to combine. Form the beef into four 3/4-inch-thick patties, each about 4 inches in diameter. Sprinkle each generously with salt and a few grinds of black pepper.
- Place the patties in the hot skillet; do not press down with a spatula. When the patties are seared and browned on one side, about 3 1/2 minutes, flip and cook on the other side until browned and the burgers are medium-rare, about 3 1/2 minutes.
- Split the hamburger buns. Arrange some arugula on the bottom buns and top each with a slice of tomato, a burger patty and a dollop of pesto. Top with the top halves of the rolls Serve with giardiniera.

- Heat the oil in a large skillet over medium-high heat. Add the onions and peppers and saute until the onions are translucent and the peppers are tender, 6 to 8 minutes. Stir in the tomato paste and cook for 1 minute longer. Remove from the heat.
- Preheat an outdoor grill to medium high.
- Combine both sausages in a bowl. Form into 4 patties. Grill until cooked through, 4 to 5 minutes per side. Top each burger with some of the onions and peppers and 2 slices of cheese, cover the grill and cook until the cheese melts.
- In a bowl, add the mayo and pesto and stir to combine. Spread the rolls with the pesto mayo, add the burgers and banana peppers and serve immediately.

- Combine sausage, panko, egg, garlic, basil, oregano and cayenne pepper until blended. Shape mixture into 4 patties. Cover and refrigerate for at least 1 hour or up to 2 hours.
- Cook prosciutto in batches in a large non-stick frypan over medium heat until crisp, about 1 - 2 minutes per side.
- Transfer prosciutto to a paper towel-lined plate.
- Grill patties over medium heat on natural gas barbecue until completely cooked.

SWEET ITALIAN BURGERS
This recipe is from Mehungry98 on Allrecipes.com and was titled Chili Burgers. To me, a chili burger is smothered in the bean/meat/chili powder stuff and is almost impossible to eat by hand. This recipe is NOTHING like that, so I renamed it Sweet Italian Burgers. Ground beef and sweet Italian sausage are mixed with the tomato based chili sauce, like the one used to make cocktail sauce. The result is a juicy, mouth watering, savory burger that,omg, is simply amazing. It's way to hard to compare it to any other burger. I don't know just how Italian this is, but the name is now more appropriate.

- cut tomatoes with kitchen shears and soak in olive oil to soften, about 10 minutes.
- shread basil leaves.
- whip egg in small bowl, add drained tomatoes and basil.
- place chicken in medium bowl with suger, grill seasoning and garlic.
