This is a delicious cake which is very quick and easy to make. If you keep leftover bananas in the freezer, this can be whipped up at a moment's notice. PLEASE NOTE: cooking time indicated is for a bundt pan. The directions also list cooking times for a loaf pan and a layer cake pan.

2 cups all-purpose flour (no need to sift it)
2 cups granulated sugar
1 teaspoon ground cinnamon
1 teaspoon baking soda
3/4 teaspoon salt
3 eggs (extra large)
1 cup mild vegetable oil (e.g., corn oil or canola oil)
1 (8 ounce) can crushed pineapple, drained (about 1 cup)
1 1/2 cups coarsely chopped nuts (pecans or walnuts, about 4-6 ounces)
2 large bananas, peeled and coarsely chopped
1 teaspoon pure vanilla extract
8 tablespoons butter, softened (margarine can be substituted)
1 (8 ounce) package cream cheese, softened
1 (1 lb) package powdered sugar
1 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 350 degrees F.
  • Grease and flour 1 (10-inch) bundt pan, 2 (8x4x2-inch) loaf pans, or 3 (8 inch) layer cake pans. Set aside.
  • Using wire whisk, stir together dry ingredients to simulate sifting. Set aside.
  • Break eggs into large mixing bowl. Beat until thick and lemon-colored.
  • Add all other cake ingredients (oil, pineapple, nuts, banana, and vanilla) Mix well.
  • Gently stir in reserved flour mixture. Mix only until lumps are gone and dry ingredients are moistened.
  • Pour into greased and floured pan(s).
  • Place pan(s) on center shelf of oven.
  • Bake until toothpick inserted in center of cake comes out clean (about 1 hour for bundt pan, 50 minutes for loaf pans, or 25-30 minutes for layer cake pans).
  • Place pan(s) on wire rack for 10 minutes.
  • Invert cake onto rack and allow to cool completely.
  • For frosting, blend together the cream cheese, powdered sugar and vanilla extract.
  • Frost top of cake with cream cheese frosting.
  • This freezes well.

This is such an easy recipe. I don't add any food color to this as I've heard it's not good for the little birds. Do not use honey or other types of sugar, the birds cannot digest them. Also if you have trouble with ants you can now get a little item that has ant repellent in it that doesn't harm the birds. I have one on my hummer feeder.

4 cups filtered water
1 cup regular white sugar (Organic if possible)

Steps:

  • Bring the water to a boil.
  • Take the water off the heat and add the sugar.
  • Stir to dissolve completely.
  • Let the nectar cool.
  • Place in a clean hummingbird feeder and hang outside for the birds.
  • Note:.
  • Change the food at least every three to five days with a new batch to keep it fresh. Remember don't use food coloring.
  • Check the bird feeder regularly and every time you change the food to see if any gray mold has formed inside the feeder base, or, any ants have crawled inside to get at the sugar water.
  • If you see any take the feeder down and throw the bird food away. It's not good for the birds to drink this. Chances are they won't drink it anyway.
  • Clean the hummingbird feeder by rinsing with warm water. Then, put a few drops of bleach into the water inside the feeder and clean with a bottle brush.
  • Once clean, rinse thoroughly with fresh water and let dry.
  • Fill up with new food and place outside.
  • The birds will love you for it!

1 (8 ounce) can crushed pineapple
1/2 cup ripe banana, mashed
1/4 cup milk
2 eggs
1 teaspoon vanilla extract
1/4 cup dark rum (optional)
1 (18 1/2 ounce) package banana cake mix
1 (16 ounce) can vanilla frosting
toasted pecans, chopped

Steps:

  • Beat together first 5 ingredients and rum, if desired, in a large mixing bowl at low speed with an electric mixer until blended. Add cake mix, beat at meadium speed 2 minutes. Pour batter into a greased and floured bundt pan.
  • Bake at 350°F for 50 minutes or until a toothpick inserted in center comes out clearn. Cool in pan on a wire rack 15 minutes; remove cake from pan and cool completely on wire rack.
  • Microwave frosting on high 15 to 20 seconds or until pourable. Let stand one minute before drizzling over cake. Sprinkle pecans over frosting.
