TEXAS BBQ SWEET-HOT CHILI
This stick-to-your-ribs chili recipe has a sweetness to it that offsets the hot-but-not-too-hot burn that follows. I started with my step mom's recipe and made it my own. The amounts below are really "guesstimates" which makes it a little different every time!

Steps:
- Sauté onion in a little bit of oil. Add ground beef and minced garlic. Dust with dill, chili powder, cumin and red pepper flakes. Mix and cook covered over medium heat, stirring occasionally, until beef is cooked through. Drain fat.
- Add tomatoes, tomato paste and beans.
- Add picante sauce, barbecue sauce, diced green chilies.
- Add any additional chili powder and/or red pepper flakes.
- Bring to a low boil, reduce heat to low and simmer for 30 minutes or more. I have let this simmer for up to 2 hours and the longer it sits, the yummier it gets. It's great the next day, and the day after, too!
- Serve with sour cream and shredded cheese on top. Eat with the Frito Scoops if you are feeling adventurous enough to dig in without a spoon.
- Optional - Make a box of mac 'n cheese and ring your chili bowl with it before spooning in the chili. Delectable!
JICAMA CHILI STICKS
In Mexico you can buy these on just about every street corner. They are usually round slices heavily laden with chili. Very refreshing. When you buy a Jicama make sure it is very firm and free from mold patches. When you slice it open the flesh must be white otherwise it is too old. This is a very low calorie recipe, it fact it is low everything!

- Peel the jicama, cut into manageable size pieces and cut into pieces about 3"x1/2"x1/2" Arrange on a paper towel, Sprinkle with lime juice, Sprinkle with chili powder Arrange on a platter and serve ice cold.
CHEESE AND BACON STICKS
i was just playing around in my kitchen and came up with these, they taste great and make good lunchbox fillers, snacks or appetisers. It really is best to use puff pastry but the toppings could easily be changed.Prep time does not include thawing pastry(15min)

Steps:
- Lightly sprinkle bacon over pastry, followed by cheese.
- Cut into strips 1/2" wide 2 or 3" long.
- Bake 230deg for approx 5-10 mins, or until golden. (keep an eye on them they will not take long to burn if forgotten!)
- These can be made with any topping you like, i sometimes add olives, but you could just as easily make it a sweet by using choc spread and nuts.

NAT'S RICE STICKS
Easy, different, very flavourful pasta dish. This is good served warm as a side, or cold as a salad. This is perfect for potlucks or picnics, it's very transportable and doesn't need to be reheated.

Steps:
- Boil some water, turn heat off, add Rice Sticks.
- Let sit in water for about 3-4 minutes, or until done and strain.
- Heat wok, add oil and butter until melted.
- Add curry powder, garlic powder and kosher salt.
- Add leeks and toss for about 1 minute.
- Add carrots and toss for about 1 minute.
- Add broccoli and toss for about 1 minute.
- Add wine, (or other liquid) and put the lid on wok or pan.
- Let everything simmer/steam on med.
- heat for 2 minutes.
- Remove lid, add Rice sticks, toss and put in serving bowl.
- Season with salt and pepper to taste, and I also usually add a little extra virgin olive oil at this point, and give it a last toss before serving.
- Enjoy!

Steps:
- Cream the butter.
- Add flour, cayenne, salt and oregano. Mix until butter is completely blended into the flour mixture. May do in food processor.
- Blend in the egg and work dough with hands until it looks like cookie dough. Add the Parmesan cheese and blend in well.
- Divide into quarters. Divide each quarter into halves and roll out to make a long, finger- thick strand on a surface sprinkled with sesame seeds. They should be about 8 inch long.
- Divide each strand into six pieces making a dozen pieces from each quarter of dough. Place on ungreased cookie sheet.
- Bake at 400 deg. for 12-15 minute or until pale golden.
- Great hot or at room temperature
- Makes about 48.

- Preheat oven to 350°F.
- Stir together brown sugar, cayenne, and black pepper in a small bowl.
- Arrange bacon slices in l layer on a large broiler pan and bake in middle of oven (or upper third of oven if baking with eggs) 20 minutes. Turn slices over and sprinkle evenly with spiced sugar. Continue baking until bacon is crisp and brown, 15 to 20 minutes more, then transfer to paper towels to drain.
