Fire up your oven and heat up your skillet to bake this tasty sweet Dutch Baby pancake. It is a great recipe to serve for breakfast, lunch, or even as a dessert. You can add your favorite sweet toppings like fruit, jelly, jam, or sugar.

½ cup all-purpose flour
2 large eggs
½ cup 0% fat milk
2 tablespoons sugar
2 tablespoons real butter
1 teaspoon vanilla extract
½ cup blue berries
½ cup raspberries
¼ teaspoon salt
Icing sugar for serving

Steps:

  • Put the flour, milk, eggs, sugar, vanilla, and salt in a blender. Blend for a couple of seconds. Scrape down the sides and then blend for half a minute in a loose batter
  • Rest the batter while you preheat the oven at 450°F and heat the cast iron skillet in the oven while it heats
  • When the oven is hot remove the skillet from the oven, add the butter and swirl the pan to melt the butter
  • Pour the batter in the skillet and place the skillet back in the oven
  • Bake the Dutch baby until the pancake is puffed and brown in 20 to 25 minutes
  • Decorate with fruit and dust with icing sugar
  • Serve from the pan or cut into wedges

1 large Granny Smith apple
4 tablespoons (1/2 stick) unsalted butter, divided
2 tablespoons granulated sugar, divided
1/4 teaspoon ground cinnamon
1/2 cup whole milk
2 extra-large eggs, at room temperature
1/2 teaspoon pure vanilla extract
1/2 cup all-purpose flour
1/4 teaspoon kosher salt
Confectioners' sugar
Pure maple syrup, for serving

Steps:

  • Preheat the oven to 425 degrees F.
  • Peel, core, and slice the apple 1/8 inch thick. Melt 3 tablespoons of the butter in a 9-inch ovenproof crêpe pan or skillet over medium to medium-high heat. Add the apple, 1 tablespoon of the granulated sugar, and the cinnamon and toss well. Sauté the apple for 5 to 7 minutes until tender, tossing occasionally. Spread the apple out in the pan and keep hot over low heat.
  • Meanwhile, melt the remaining tablespoon of butter in the microwave. In a medium bowl, whisk together the milk, eggs, melted butter, and vanilla. In a small bowl, combine the flour, the remaining tablespoon of granulated sugar, and the salt. Whisk the flour mixture into the milk mixture, whisking until there are no lumps. Pour the batter over the cooked apple in the hot pan and immediately place in the oven.
  • Bake for 12 to 15 minutes, until the pancake is puffed and the edges start to get crispy and browned. Dust lightly with sifted confectioners' sugar, cut in wedges, and serve hot with maple syrup.

3/4 cup cubed peeled sweet potato
1 tablespoon water
1/4 cup butter, cubed
1/2 cup all-purpose flour
1/4 cup grated Parmesan cheese, divided
2 tablespoons sugar
2 teaspoons minced fresh tarragon or 3/4 teaspoon dried tarragon
1 teaspoon kosher salt
1/2 teaspoon pepper
4 large eggs, room temperature
1 cup 2% milk

Steps:

  • Preheat oven to 425°. Place sweet potato and water in a microwave-safe bowl; microwave, covered, on high until potato is tender, 3-4 minutes; drain., Place butter in a 10-in. cast-iron or other ovenproof skillet. Place in oven until butter is melted, 4-5 minutes; carefully swirl to coat evenly. , Meanwhile, in a large bowl, whisk flour, 2 tablespoon Parmesan, sugar, tarragon, kosher salt and pepper. Place eggs, milk and sweet potato in a blender; process until blended. Add flour mixture; pulse until combined. Pour into hot skillet. Bake until puffed and sides are golden brown and crisp, 20-25 minutes. Sprinkle with remaining 2 tablespoons Parmesan. Serve immediately.

I've always been fascinated by how many different breakfast foods you can create using just milk, eggs, and flour; and this is one of the more interesting examples. Especially considering the unusual, and borderline disturbing name. Sometimes called German pancakes, these have very little to do with Germany, and nothing to do with the Dutch. Apparently they were invented by German immigrants who were referred to as Dutch.

⅔ cup milk, room temperature
½ cup packed all-purpose flour
3 large eggs, room temperature
¼ teaspoon vanilla extract
¼ teaspoon salt
3 tablespoons clarified butter
1 tablespoon butter
½ Meyer lemon, juiced
1 tablespoon confectioners' sugar, or to taste

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Blend milk, flour, eggs, vanilla extract, and salt together in a blender until batter is smooth.
  • Melt clarified butter in a 10-inch cast-iron skillet over high heat until bubbling; pour batter into the center of the skillet.

3/4 cup nonfat milk
2 tablespoons granulated sugar
1/4 teaspoon salt

1 tablespoon butter
1 tablespoon powdered sugar
1/4 teaspoon ground cinnamon
1 cup applesauce
1/4 cup light sour cream

Steps:

  • Preheat oven to 450°.
  • Place a 9-inch cast-iron skillet in oven for 10 minutes.
  • Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour, corn, milk, sugar, and salt in a food processor; process until smooth. Add eggs; pulse 5 times to combine.
  • Add butter to preheated pan, tipping to coat bottom and sides of pan. Pour corn mixture into pan. Bake at 450° for 14 minutes or until the mixture is set and lightly browned.
  • Sprinkle with the powdered sugar and the cinnamon. Cut into 4 wedges, and serve with applesauce and sour cream.

Just dump all of the ingredients into a blender, give it a good whirl, pour it into a heated skillet sizzling with butter, and pop it into the oven. Twenty-five minutes later? Bliss.

3 eggs
1/2 cup flour
1/2 cup milk
1 tablespoon sugar
Pinch of nutmeg
4 tablespoons unsalted butter
Syrup, preserves, confectioners' sugar or cinnamon sugar

Steps:

  • Preheat oven to 425 degrees.
  • Combine eggs, flour, milk, sugar and nutmeg in a blender jar and blend until smooth. Batter may also be mixed by hand.
  • Place butter in a heavy 10-inch skillet or baking dish and place in the oven. As soon as the butter has melted (watch it so it does not burn) add the batter to the pan, return pan to the oven and bake for 20 minutes, until the pancake is puffed and golden. Lower oven temperature to 300 degrees and bake five minutes longer.
  • Remove pancake from oven, cut into wedges and serve at once topped with syrup, preserves, confectioners' sugar or cinnamon sugar.
