1 teaspoon baking powder
Pinch salt

  • In a large bowl, combine all ingredients. Spread into a greased 8-in. square baking pan. , Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

20 graham crackers
1/2 cup granulated sugar
12 tablespoons unsalted butter, melted
1 cup (2 sticks) unsalted butter
1 1/2 cups semisweet chocolate, finely chopped
3 large eggs, beaten
1 tablespoon vanilla extract
1 1/4 cups granulated sugar
3/4 cup all-purpose flour
1/2 tablespoon baking powder
1/2 teaspoon salt
1/2 cup milk chocolate chips
1/2 cup 60 percent cacao bittersweet chips, optional
1 bag marshmallows

Steps:

  • Preheat the oven to 350 degrees F.
  • Put the graham crackers in a large plastic bag. Using a rolling pin or skillet, crush the crackers into fine crumbs.
  • In a bowl, combine the graham cracker crumbs, sugar and melted butter. Press the mixture into the bottom of lightly greased (8- by 8-inch) baking dish. Bake the crust until slightly darkened and firm to touch, approximately 10 to 12 minutes. Remove the crust from the oven and reduce the temperature to 325 degrees F, while preparing the brownie batter.
  • Melt the butter and semisweet chocolate together in a double boiler over simmering water. Allow to cool slightly (but not harden), then add the eggs, vanilla, and sugar. Sift together the flour, baking powder and salt, and add to the chocolate mixture. Add additional chocolate chips, if desired, at the last minute, folding them in to combine.
  • Pour the brownie batter over the graham cracker crust and bake for 35 to 40 minutes, taking care not to overbake. A tester stuck into the brownies will not come out clean when done cooking. The idea is to create a center with a texture close to fudge. Remove the brownies from the oven and allow to cool before topping with marshmallows.
  • To serve, top the brownies with marshmallows and broil until the marshmallows are melted, golden and bubbling. Serve immediately and enjoy.

6 graham crackers
1 ½ cups miniature marshmallows

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Prepare brownie mix according to package directions. Spread into a greased 9x13 inch pan.
  • In a medium bowl, break graham crackers into 1 inch pieces and toss with miniature marshmallows and milk chocolate. Set s'more mixture aside.

1/2 cup firmly packed dark brown sugar
1 cup graham cracker crumbs
1/3 cup chopped pecans

Steps:

  • In a bowl whisk together 2 of the eggs, the granulated sugar, 2 tablespoons of the water, 1/4 teaspoon of the salt, and 1/4 teaspoon of the vanilla until the mixture is smooth and stir in the chocolate wafer crumbs, the chocolate chips, and half the butter. In another bowl whisk together the remaining 2 eggs, the brown sugar, the remaining 2 tablespoons water, the remaining 1/4 teaspoon salt, and the remaining 1/2 teaspoon vanilla until the mixture is smooth and stir in the graham cracker crumbs, the pecans, and the remaining butter. Drop large spoonfuls of each mixture alternately into a greased 8-inch-square baking pan, run a knife blade through the mixtures to marble the batter, and smooth the top. Bake the brownies in the middle of a preheated 350°F. oven for 40 minutes, or until a tester comes out clean, and let them cool in the pan on a rack for 10 minutes. Cut the brownies into squares and let them cool completely.

2 large egg whites
1/3 cup all-purpose flour
1/4 cup cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
flaky sea salt (for garnish)

Steps:

  • Preheat the oven to 375ºF. Line a baking sheet with parchment paper and spray with non-stick cooking spray.
  • Place 1-inch of water in a small saucepan and place over medium heat until simmering. In a medium, heatproof bowl, add the butter, chocolate, sugar, dark brown sugar, and vanilla. Place on top of the simmering water and allow to melt. Stir until smooth. Remove and allow to cool to room temperature, about 5 minutes. Stir in egg whites.
  • In a medium bowl, add the flour, baking soda, cocoa powder and salt and whisk to combine. Add the flour mixture to the wet mixture. Stir until smooth. Pour batter onto the prepared baking sheet and spread to 1/4-inch thick. Sprinkle with sea salt.
  • Place in the oven and bake for 15 minutes until dry and crisp. Remove from the oven and allow to cool completely. Break the brownie brittle into pieces and serve.
  • Tip: Store in a zip-top bag for up to 1 week. Perfect as a snack dipped in milk!

1/2 cup all-purpose flour
1 pinch salt
1 cup finely chopped graham cracker

1 cup coarsely chopped milk chocolate candy bar (two to three 10 to 12 ounce bars)

Steps:

  • Preheat the oven to 350°F.
  • Grease an 8 inch square pan or a 7 by 11 inch pan and line it with parchment paper.
  • Leave an overhang with which to lift the brownies.
  • Line a baking sheet with parchment paper and set aside.
  • For the bottom layer, combine all the ingredients in a small bowl and stir to blend.
