1 cauliflower head
1 broccoli head
1 red bell pepper
1 green bell pepper
1/4 cup parsley, coarsely chopped
1/2 cup dry white wine
1/2 cup white wine vinegar
1/2 cup water
1/2 cup extra virgin olive oil
1 clove garlic, mined
2 Tbsp white or cane sugar
1 Tbsp fresh ginger root, minced
1/2 tsp each salt and pepper

Steps:

  • Wash and trim broccoli and cauliflower. Cut each into small bite-sized pieces and place into a large heat-proof bowl.
  • Wash and cut the red and green pepper into small pieces, almost mincing. Set aside.
  • In a small saucepan, stir together all of the dressing ingredients (white wine, white wine vinegar, water, olive oil, garlic, sugar, ginger root, salt and pepper). Bring to a boil, stirring, and boil for 3 minutes. Remove from heat and pour over the cauliflower and broccoli; toss to coat well. Stir often until cooled to room temperature. Then add in the peppers and parsley.
  • Cover and refrigerate at least for a few hours or overnight, tossing often.
  • Transfer to a serving bowl and serve with a slotted spoon.

1 head cauliflower, cored and cut into florets (about 8 cups)
1 bunch broccoli, cut into florets (about 7 cups)
6 slices bacon
1 shallot, diced small
1/4 cup sherry vinegar
Coarse salt and ground pepper

Steps:

  • Set a steamer basket in a saucepan with 2 inches simmering water. Add cauliflower, cover, and steam until tender, 10 minutes. Transfer to a serving dish. Repeat with broccoli.
  • Meanwhile, in a large skillet, cook bacon over medium-high until crisp, about 8 minutes, flipping once. With tongs, transfer bacon to paper towels to drain. Reduce heat to medium, add shallot, and cook until translucent, about 3 minutes. Carefully whisk in sherry vinegar and season with salt and pepper. Immediately pour over vegetables. Crumble bacon and add to vegetables; toss to combine.

2 Tablespoons balsamic vinegar
1 teaspoon dijon mustard
½ teaspoon olive oil
¼ teaspoon ground black pepper
⅛ teaspoon salt
1 Tablespoon sesame seeds (optional, for garnish)

Steps:

  • To make vinaigrette, measure balsamic vinegar, dijon mustard, olive oil, salt and pepper into a small bowl. Use a whisk or a fork to blend ingredients together, until completely blended. Set vinaigrette aside while you steam broccoli.
  • Trim the leaves, and cut off really tough ends of the broccoli. Give broccoli a quick rinse, then cut into spears. Place broccoli spears into a steamer basket or rack, and steam (covered) over boiling water for 5 minutes. When done, the broccoli should be crisp/tender in texture.
  • Immediately transfer the steamed broccoli out of steamer and onto a serving plate. Drizzle the broccoli spears with the balsamic vinaigrette, using all of it. Sprinkle with sesame seeds, if using. Serve hot, and enjoy!

We did not add the panko and cheese, but they would be a great addition. Which I will do today when I am reheating the leftovers.

1 lb cauliflower
1 lb broccoli
3 slices bacon, microwaved until done
5 tablespoons olive oil
1/2 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/3 cup panko bread crumbs and 1/4 cup finely grated parmesan cheese or 1/3 cup sharp cheddar cheese

Steps:

  • Preheat oven to 400°F.
  • Slice cauliflower and broccoli into florets and put in a single layer in an oven-proof baking dish.
  • Drizzle with olive oil and toss with the precooked bacon and spices.
  • Place casserole in the hot oven, uncovered, for 25-30 minutes, or until the vegetables are lightly brown. Test to see if done. Fork tines should be able to easily pierce the cauliflower and broccoli.
  • Remove from oven and if desired sprinkle generously with Parmesan cheese and panko bread crumbs.
  • Serve immediately.

1/2 cup light mayonnaise
1/4 cup honey
2 Tbsp red wine vinegar
1 Tbsp granulated sugar
1/4 tsp salt (, or more to taste)
4 cups small diced broccoli florets
4 cups small diced cauliflower florets
8 oz bacon ((about 8 slices), diced and sauteed until crisp and drained)
1 1/4 cups small cubed Colby Jack cheese ((6 oz))
1/2 cup chopped red onion (, rinsed under water and drained (if it's a mild one you can add a little more))

Steps:

  • In a medium mixing bowl, whisk together all dressing ingredients. Cover and chill until ready to use.
  • Add all salad ingredients to a salad bowl (I like to set aside about 1/4 of the bacon and red onion to sprinkle over the top at the end for more color, that's totally optional).
  • Pour dressing over top then toss to evenly coat. Serve within and hour of adding dressing for best results.

2 bunches broccoli, chopped in small bite size pieces
1/2 of a red onion, finely chopped
2 cups shredded cheddar cheese

1 brunch broccoli, about 1 pound
Salt to taste
1 tablespoon Dijon-style mustard
2 tablespoons red-wine vinegar
1/3 cup olive or vegetable oil
1 tablespoon grated fresh ginger
2 tablespoons finely chopped parsley or coriander
Freshly ground pepper to taste

Steps:

  • Trim away and discard the core of the cauliflower. Break the cauliflower into flowerettes.
  • Cut the broccoli into flowerets. Peel the large stems and cut them into 1 1/2-inch lengths. Rinse and drain.
  • In a saucepan large enough to hold the cauliflower and broccoli, bring enough water to a boil to cover the vegetables. Add salt. Add the cauliflower and simmer 6 minutes, then add the broccoli pieces. When the water returns to a boil, lower the heat and let simmer about 3 minutes.
  • Drain well. Let cool.
  • Put the mustard and vinegar in a bowl and whisk in the oil. Stir in the ginger and parsley or coriander. Add the cauliflower and broccoli, salt and pepper, toss and serve.
