Provided by Recipe Garden

Categories     Breakfast     Side Dish     Snack

Time 45m

Number Of Ingredients 9

1 cup yellow cornmeal
1.5 cups all purpose flour
3 teaspoons baking powder
1/2 teaspoon salt (may adjust a little for your preference)
1/4 cup sugar (add little more if you want more sweetness)
1/2 cup butter (melted (at room temperature))
1/2 cup yogurt (or applesauce)
1 cup whole milk (at room temperature)
1 teaspoon vanilla extract

Steps:

  • In a large bowl, mix together all dry ingredients - cornmeal, flour, salt and baking powder.
  • In a separate bowl, add melted butter and sugar, mix well until sugar is dissoved.
  • Add the yogurt (or applesauce) and mix well to combine with the butter sugar mixture. It is a good idea to whisk the yogurt well before adding to the butter mixture, so there are no lumps and it is easy to mix.
  • Also add the milk and vanilla extract to the butter mixture and mix everything together until well combined.
  • Now add the prepared butter mixture to the dry flour mixture and mix the contents together without forming any lumps. In case the batter is too thick (as it may depend on the cornmeal and flour you use), you may add a little more milk and mix again( just add one tablespoon of extra milk at a time and then mix and see if you need more). You can use a balloon whisk to mix the ingredients to blend in perfectly.
  • Preheat the oven in 350 degree Fahrenheit.
  • Grease oil or melted butter in a square pan and pour the cornbread batter into it.
  • Bake the cornbread for about 35 to 40 minutes until the top is lightly browned and the inside is cooked. You can check this by inserting a toothpick at the center of the cornbread, which should come out clean. If the inside is not cooked enough, cover the pan with a foil and cook for few more minutes until the cornbread is cooked completely. Covering with the foil helps to prevent the cornbread from drying out.
  • Allow the bread to cool down, then cut and serve the warm cornbread with tea, coffee or milk along with honey or butter or jam or any syrup as you wish.

SWEET MILK CORNBREAD

Sweet Milk Cornbread image

I have used this recipe for thirty years. It is from a 1974 cookbook called "Country Cooking". It was one of Southern Living Magazines books. I have been using oil in place of the butter that was called for in the original recipe for years with good results. The secret to this cornbread is a "screamin' hot" iron skillet, greased only on the bottom, and a hot oven. I serve this with chili, vegetable soups, and tex mex.

EASY BUTTERMILK CORNBREAD

Easy Buttermilk Cornbread image

Easy Buttermilk Cornbread with a hint of honey is the perfect side to chili's, soups or stews! Crunchy buttery edges with a soft and fluffy centre!

Provided by Karina

Categories     Side Dish

Time 30m

Number Of Ingredients 10

1/2 cup unsalted butter (melted and cooled slightly)
1 cup all-purpose flour
1 cup yellow cornmeal ((or polenta))
1/4 cup brown sugar ((or white granulated sugar))
1 teaspoon baking powder ((optional: yields a fluffier cornbread))
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup buttermilk (shake before measuring)
1/4 cup honey
2 large eggs

Steps:

  • Preheat the oven to 200C | 400F and position a rack in the middle. Lightly grease a 9-inch cast iron skillet or 9-inch square baking dish with butter and place skillet/dish into the oven to heat up. (Alternatively for cast iron skillets: heat 1/2 cup of unmelted butter in your cast iron over stove top on medium heat until melted, turn heat off then allow the butter to cool slightly before adding to the batter.)
  • In a large bowl, whisk together the flour, cornmeal, sugar, baking powder (If using), baking soda and salt.
  • Make a well in the centre and add the buttermilk, honey and eggs. Mix together well to combine, then add in the slightly cooled melted butter. Mix again until 'just' combined (don't over mix).
  • Carefully remove your 'hot' pan or dish from the oven with oven mitts, and pour the batter into the hot skillet or dish. Listen to that sizzle! That's what you want.
  • Bake until the cornbread begins to brown on top and a toothpick inserted in the centre comes out clean (about 20-23 minutes). Allow to cool for about 10 minutes before slicing and serving.

CRISPY SOUTHERN CORNBREAD RECIPE (5TH GENERATION RECIPE & GLUTEN FREE!)

Crispy Southern Cornbread Recipe (5th Generation Recipe & Gluten Free!) image

The best southern cornbread recipe ever, passed down FIVE generations. This gluten free cornbread is quick, tasty, crispy, and healthy.

Provided by Mary

Categories     Baked Goods & Desserts

Time 30m

Number Of Ingredients 7

1 cup cornmeal
1/2 tsp salt
1 tbsp baking powder
1 pinch baking soda
1 egg
1 ¼ cup buttermilk
2 tbsp high heat oil (like refined coconut), or bacon grease for extra flavor

Steps:

  • Preheat oven to 400 F. Heat a skillet on medium high heat until hot. Add oil to a cast iron skillet and allow to heat. Keep an eye on the skillet to make sure the oil doesn't start to smoke.
  • While the pan/oil is heating, mix the dry ingredients in a bowl. In a large mug or small bowl, whisk egg and buttermilk together. If batter appears too thick, add a little more buttermilk.
  • Add wet ingredients to dry ingredients and mix until smooth.
  • When the oil starts to dance (appears to be moving in the pan), pour batter into the hot skillet and transfer to the oven. You want a super hot skillet with plenty of oil to achieve the best crispy crust. Bake for 20-25 minutes until golden brown.

  • Start preparing your skillet cornbread by greasing your cast iron skillet with a light layering of butter. For the quantities outlined above, a 10-inch skillet works best, but you can use a 12-inch skillet for a thinner cornbread.
  • At the same time, preheat your oven to 400°F and let your cast iron skillet warm up in the center of the oven.
  • Melt the rest of your butter in a pan on the stovetop (you can do this in a separate pan or in the same skillet before you place the skillet in the oven). Set the pan aside and let the butter cool.
