TURKEY (OR CHICKEN) MEATBALLS WITH SWEET CHILI SAUCE



Turkey (Or Chicken) Meatballs With Sweet Chili Sauce image

This recipe is something I make often for my toddler who has allergies, so quick and easy! It doesn't require eggs like most meatballs. When making it for my son, I use the smaller amounts of sweet chili and green onion. I also use homemade bread crumbs from French bread, because of his allergies.I have even skipped the breadcrumbs completely and it worked. We make it as a snack or serve with rice and veggies for dinner. This recipe can be frozen. It easily doubles if you want to take it to a potluck or serve as an appy at a party. Serve with a side of sweet chili sauce to dip, or ketchup for crazy kids like my DS. ;)

Number Of Ingredients 4

1 1/4 lbs ground turkey or 1 1/4 lbs chicken
2 -3 green onions, diced
1/2 cup breadcrumbs
1/3-1/2 cup sweet chili sauce

Steps:

  • Combine all ingredients together.
  • In a pan lightly oiled (I use Pam), fry over medium heat until completely brown, about 5-10 minutes.
  • Bake in a preheated 350* oven until cooked through, about 15 minutes.
  • You can also cook them completely in the fry pan.
  • This recipe makes about 30 average size meatballs.
  • Adjust amount of Sweet Chili sauce and bread crumbs if it appears too dry or wet, but these amounts work perfectly for us.
  • You can combine all ingredients and refridge overnight then cook as normal, for a spicier flavor.
  • For OAMC - Flash freeze on a cookie sheet until frozen. Place in a ziploc bag once frozen. Heat in Micro for 45-60 seconds, depending on the size of meatball. I'm sure it can be reheated in the oven, but I haven't tried it yet.

These meatballs have a sweet and spicy combo that I am currently obsessing over, and the sauce is great on everything (trust me, I've been eating it with anything I can all week). These will totally be the crowd favorite on Sunday, and they are definitely going to be a part of my meal prep in the future. The whole recipe comes together in less than 30 minutes, makes 20 meatballs, AND they are 1 WW SP on each plan. Serving 5 meatballs Blue & Purple - 4 WW SP Green - 5 WW SP

3 tbsp. sugar
1/2 tbsp. sambal oelek
2 tbsp. rice vinegar
1/4 cup + 1 tbsp. water
1/2 tbsp. tamari (or soy sauce or coconut aminos)
2 tsp. cornstarch
1 lb. 99% lean ground turkey
3 tbsp. panko bread crumbs
1 tsp. dried parsley
1 tsp. garlic powder
1 tsp. onion powder
1 egg
1/2 tbsp. Worcestershire sauce
1 tsp. kosher salt
1/2 tsp. black pepper

Steps:

  • Preheat oven to 400° F.
  • Combine all turkey meatball ingredients. Portion out 20 1oz. Meatballs using a mini ice cream scoop or scale.
  • Spray a baking sheet with preferred cooking spray and place meatballs on baking sheet. Cook meatballs for 12-15 minutes, flipping halfway through.
  • While meatballs are cooking, assemble sauce.
  • Combine sugar, sambal oelek, rice vinegar, 1/4 c water, and tamari in a pot and bring to a low boil while stirring.
  • When the sauce begins to boil, combine cornstarch with 2 tbsp of water to make a slurry. Add slurry to the sauce.
  • The sauce will begin to thicken and get glossy. Bring sauce back up to a boil while mixing and remove from heat when the sauce is thick and coating the spoon/whisk.
  • Once meatballs are fully cooked, toss meatballs directly in the sauce.
  • Top sweet chili turkey meatballs with sesame seeds and thinly sliced scallions. Serve with toothpicks.

2 pounds ground turkey breast
2 teaspoons salt-free garlic and herb seasoning or poultry seasoning
1 egg white
Salt and ground black pepper
2 (15-ounce) cans tomato sauce
2 cups reduced-sodium chicken broth
1 cup chili sauce
1/2 cup cider vinegar
1/2 cup brown sugar
2 teaspoons dried thyme
Mashed Red Potatoes, recipe follows
Steamed Broccoli, recipe follows
8 medium red potatoes, cut into 1-inch pieces (skin on)
6 whole cloves garlic
1 cup light sour cream
4 tablespoons chopped fresh chives
2 cups broccoli florets
2 tablespoons water
Salt and pepper
Lemon wedges
In a microwaveable bowl, add broccoli florets and water. Cover and cook in microwave 2 to 3 minutes, or until crisp tender. Season with salt and pepper, to taste. Serve with lemon, if desired.

Steps:

  • In a large bowl, combine turkey, garlic and herb seasoning, egg white and 1/2 teaspoon each salt and black pepper. Mix well and shape mixture into about 32 meatballs. Place meatballs in bottom of slow cooker.
  • In a medium bowl, whisk together tomato sauce, broth, chili sauce, vinegar, brown sugar, and thyme. Pour mixture over meatballs.
  • Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours. Season, to taste, with salt and black pepper. Serve half of the Meatballs with Mashed Red Potatoes and Steamed Broccoli. Refrigerate the other half for Turkey-Stuffed Zucchini Boats later in the week.
  • Place potatoes and garlic cloves in a large saucepan and pour over enough water to cover. Set pan over high heat and bring to a boil. Boil 8 minutes until potatoes are fork-tender. Drain and return potatoes and garlic cloves to pan. Mash in sour cream until desired consistency. Fold in chives. Season, to taste, with salt and pepper.

These are equally delicious as an appetizer, over rice or noodles, or in a sandwich. I have also used the sauce recipe with chicken and vegetables. I like to use Italian seasoned bread crumbs in place of the plain to give a bit more flavor and color. This originally came from Shape magazine.

2 tablespoons minced onions
1 egg
1 (16 ounce) can jellied cranberry sauce
1/3 cup ketchup
1/4 cup chili sauce

Steps:

  • Combine turkey, bread crumbs, parsley, onion and egg in a large bowl.
  • Mix well and shape into 24 meatballs.
  • In a 6 quart.
  • slow cooker, mix cranberry sauce, ketchup and chili sauce.
  • Carefully add the meatballs, coating them with the sauce mixture.
  • Put the lid on and cook on low for 8-10 hours.
