CHEESEY POTATO & HOT SAUSAGE BREAKFEST #SP5
Official Contest Entry: Simply Potatoes 5Fix. I made this one morning camping, I usually make fried potatoes & eggs for everyone, but now I use Simply Potatoes, So much easier Plus you can use the different brands they sell. my favorite is southwest style. no chopping Onions, red, & green bell peppers up :-) I use hot sausage links cooked and browned ahead of time. usually the day before, I slice them like a 1/2 to 3/4 inch thick and save in fridge for the morning.

Steps:
- In a 12" skillet add sausage links, poke holes in the links with a fork or toothpick to release some grease, add 2 cups of water and cook on medium heat turning often until water is gone, about 20 minutes. continue cooking & turning until the links are browned on all sides, remove from pan & slice the links 3/4" inch and save for next step.
- In a 12" Skillet or dutch oven, heat 2 Tbls of oil on Medium heat.
- Add Potatoes and the Pre-cooked, & browned, Hot sausage slices.
- Mix well, flatten,add salt &pepper and cook on medium heat for about 8 minutes.
- add 1 tbls of oil drizzled around on top of potatoes and turn with spatula.
- cook for another 8 minutes or until potatoes are soft and browning.
- turn them again if you want to brown them more. for a few minutes.
- Reduce heat to medium-low. Add eggs. Cook for 3 to 4 minutes, stirring occasionally, until eggs are set.
- Top with Cheese, turn off heat and cover with a lid or foil for a minute or 2.
- so the cheese melts some.
- serve with a cup of OJ and Toast.

- Preheat oven to 350 degrees. Place potatoes in a large bowl. Add half the cheddar, Monterey Jack and Parmesan, reserving the rest for the top. Add heavy cream and stir to combine.
- Transfer the potatoe mixture to a medium buttered casserole dish. Sprinkle remaining cheddar, Monterey Jack and Parmesan cheeses on top. Bake until bubbly and golden brown, 30 to 45 minutes. Remove and cool slightly before serving.

- Heat oven 375 degrees.
- Cut down the center and toast the French bread loaf (14" or so) on nonstick pan and the bag of potatoes on another nonstick pan for about 4-7 minutes until the bread is browned. Flip over the potatoes for another 7-10 minutes or until slightly browned and a few edges.
- In the mean time, cut turkey dogs down center lengthwise but not all the way through and brown in full shape round in nonstick frying pan. Add the can of sauce and let them simmer on low for about 3 minutes. Place the turkey dogs split open along the bottom of the bread, save some sauce, top with potatoes and then the sauce. Place the cheese across the top. The cheese should be sliced or shredded. Put top of bread on.
- Put back in the oven for about 3-5 more minutes. Slice in a little over 3" slices.

Easy, cheesy potatoes to make that are a real crowd pleaser. These are made with frozen shredded hash browns and you can make these in the oven or in the crockpot. Very easy to make and loaded with flavor. You could add cubed ham to this and serve it as an entree with a salad and rolls.

- Preheat oven to 350 degrees.
- In a large bowl, combine hash browns, 1/2 cup melted butter, cheddar cheese soup, sour cream, chopped onion, cheddar cheese, salt and pepper. Place mixture in a 3 quart casserole dish.

- Fill a large pot with 1" water. Place potatoes in a steamer basket and lower into pot. Cover pot and bring to a boil. Steam until potatoes are fork-tender, 25-30 minutes.
- Place an oven rack about 8" from broiler; preheat broiler. Coat a rimmed baking sheet with 1 Tbsp. oil. Arrange potatoes skin side down on prepared pan. Score or lightly mash flesh with a fork; season all over with salt and pepper. Drizzle with remaining 2 Tbsp. oil, then top with cheese (taking care to keep it on the potatoes, not the pan). Broil potatoes, watching carefully to make sure they don't burn, until cheese is bubbling and golden brown, 3-5 minutes.

- 2) spray 9x13 baking casserole dish with non-sticking cooking spray.

- Heat oven to 400 degrees.
- Cook bacon, cool, and crumble. To a 12-cup muffin pan, add equal amounts of bacon grease to each muffin cup.
- To a medium bowl, add the hash browns and gently blend in 1 1/2 cups of the shredded cheese. Press about 2 tablespoons of the hash brown and cheese mixture into each muffin cup. Bake in oven for 18 - 20 minutes or edges are crispy.
- While hash brown cups bake, peel film at corner of mashed potatoes and heat on high for 3 minutes in microwave. Remove from microwave and stir.
