BRAIDED EASTER BREAD RECIPE

Steps:
- In the bowl of your stand mixer fit with the whisk attachment, mix sugar, yeast, salt, and 2 cups of flour.
- In the microwave, heat milk and butter to about 120 degrees (if it gets too hot, just let cool before adding). Add to the dry ingredients and mix until they are incorporated. Add 3 of the eggs and vanilla then beat on high for 2 minutes.
- Switch the whisk for the dough hook. Mix in enough remaining flour to form a soft, sticky dough. Knead with the dough hook for about 4-5 minutes or knead by hand for up to 8 minutes.
- Place dough in a greased bowl, turning once to grease the top. Cover the bowl with plastic wrap and let rise in a warm place (85° is ideal) until doubled, about 45 minutes.
- Punch down dough. Turn onto a lightly floured surface; divide into thirds (I weighed my pieces on a kitchen scale to divide evenly).
- Roll each portion into a 24-inch long rope. Place ropes side by side on a parchment-lined baking sheet and braid. Bring ends together to form a ring. Pinch ends together to seal.
- Cover with a tea towel and let rise in a warm place until doubled, about 20 minutes. Preheat oven to 375°.
- In a bowl, whisk the remaining egg and water and carefully brush over the dough.
- Bake 25-30 minutes or until golden brown. (If you'd like, at the halfway point, brush with more glaze to get any areas that have risen up from the heat).

SWEET BRAIDED EASTER BREAD
Delicious egg bread made with eggs, orange zest, and anise egg wash for an "eggstra" special flavor! A slightly sweet bread good by itself or toasted, especially with coffee or tea. You can even use it for French toast or bread pudding. I make this every year for my family at Easter. A special treat they look forward to once a year! The colored eggs are great fun too and add to your holiday decor.

- Combine milk, oil, salt, orange extract, 2 eggs at room temperature, sugar, orange zest, 4 cups of flour, and yeast in a bread machine, in that order. Set to Dough cycle and start the machine; be sure to peek inside while dough is mixing and add additional flour as needed to create a soft, but not wet, dough.
- Transfer dough to an oiled bowl and let rise until doubled in size, about 1 hour.
- Meanwhile, bring a pot of water to a boil over medium-high heat. Reduce heat to a rapid simmer and add 4 whole eggs to soft boil. Continue to simmer for 6 minutes. Remove from heat and transfer eggs to a bowl of ice water to cool quickly.
- Punch risen dough down and turn onto a floured surface. Divide into 3 even pieces. Roll each piece to form about a 1 1/2-inch thick rope that is 12 inches long. Take the pieces and braid them together, pinching the ends. Loop into a circle and pinch the ends to close. Place on a baking sheet lined with parchment paper. Align boiled eggs evenly about the braid and push in gently, about 1/3 of the way down. Cover and let rise again, about 1 hour.
- Preheat the oven to 350 degrees F (175 degrees C).
- Combine remaining room temperature egg, 2 tablespoons water, and anise extract in a bowl for egg wash. Brush braid with the egg wash, being careful not to get any on your boiled eggs or while baking they will have cooked wash on them and won't dye nicely.
- Bake in the preheated oven, switching between another parchment-lined baking sheet every 10 minutes throughout baking time to prevent the bottom from getting too dark, until browned, about 30 minutes. Remove from the oven and let cool thoroughly, 20 to 30 minutes.
- Paint your eggs on the bread with liquid food dye. Be careful not to drip on the bread. Let dry, about 10 minutes. Brush bread with anisette liqueur and let dry before serving, about 5 minutes more.

- Combine milk and water in a heatproof bowl and heat in 30-second increments until mixture reaches a temperature between 105-115F (40-46C). Always stir before temping!
- Pour milk mixture into a large bowl or the bowl of a stand mixer and stir in yeast and one teaspoon granulated sugar. Let sit for 5-10 minutes or until a foam cap has formed on the surface (if mixture does not foam you will need to start over).
- Once foamy, add remaining ⅓ cup sugar, melted butter, egg and egg yolk, salt, and 2 cups (250g) of flour and stir well to combine.
- Gradually add additional flour while stirring (if using a stand mixer use a dough hook on low-speed) until dough clings to itself and forms a ball that is pulling away from the sides of the bowl (scrape bowl as needed). You may not use all of the flour indicated, or you may even need more, go by texture (and see the video if you need visual clues)! When ready, the dough should be slightly tacky to the touch but not so sticky that it cant be managed with your bare hands.
- If using a stand mixer, stir on low speed with dough hook until smooth and elastic, about 5 minutes. If working by hand, transfer dough to a clean surface and knead until smooth and elastic (about 5-10 minutes).
- Lightly oil a large bowl and place dough inside, turning to coat the entire surface lightly with oil. Cover and allow to rise in a warm draft-free place until doubled in size (1-2 hours).
- When dough has doubled, gently deflate and divide into 4 even pieces. Roll each into a 15" rope.

TRADITIONAL ITALIAN EASTER BREAD
This Traditional Italian Easter Bread is a soft sweet brioche dough formed into wreaths or braided then topped with coloured eggs & sprinkles.

- In the bowl of a stand up mixer whisk together the flour, salt, zest and sugar, make a well in the centre and add the milk and yeast, mix together with a fork. Then add the egg. With the dough hook attachment knead for approximately 1 minute just to combine.
- Cover the bowl with plastic and let rise 2 hours, every 30 minutes fold both ends into the middle (repeating 4 times).
- When the time has passed add the butter a little at a time, on medium high speed with the dough hook, knead just to combine all the butter, then let the dough rest 10 minutes. Knead again for 5-6 minutes until smooth and the dough does not stick to the sides of the bowl. Place the dough in a lightly greased bowl, cover with plastic and refrigerate for 1-2 hours.
- Move the dough to a lightly floured flat surface. Divide the dough into 4 parts. Roll each part into 2 ropes (10-12 inches / 25-30cm), join 2 ropes at the top and twist the ends one over the other (see photo), join the ends to form a wreath (circle) repeat with the remaining ropes. Place the wreaths on a parchment paper lined cookie sheet, cover and let rise in a warm draft free area for 1-2 hours or doubled in bulk.
- 15 minutes before rising time has finished pre heat oven to 390F (195C).
- Add a dyed uncooked egg (if desired) to the centre of the wreath then brush the wreaths with the egg wash (be careful not to brush the eggs) and sprinkle with the sprinkles. Bake for approximately 20 minutes or until golden, or when tapped on the bottom and there is a hollow sound. Immediately move the baked buns to a wire rack to cool. Let cool before serving. Enjoy!

- Mix together water, warm milk, and yeast.
- Add melted margarine, sugar, salt and flour.
- Knead dough, place in bowl, cover and let rise in warm place 1 hour.
- Divide dough into 6 parts.
- Shape dough into 6 long pieces (length of baking sheet).
- On baking sheet, braid 3 of the pieces together like you would hair, then braid remaining 3 pieces together.
- Cover and let raise 1 more hour.

SWEET BRAIDED EASTER BREAD WITH RAISINS

- Prep the Raisins: Place 2 cups of raisins into a small bowl. Pour boiling hot water until the water covers the raisins entirely. Let the raisins soak for 15 minutes, then drain the water and rinse the raisins. Set the raisins aside, for now, we'll use them in the recipe later.
- Heat milk and add sugar: Next, heat milk in a small saucepan over a stovetop burner on high heat for about 30 seconds or so until the milk reaches a lukewarm temperature. The milk should be barely warm at this point.
- Now transfer the milk into a small bowl. Add ¼ cup of sugar to it and stir well until the sugar dissolves entirely.
- Add yeast to milk-sugar mixture: Time to add the yeast! Sprinkle the active dry yeast over this milk-sugar mixture. Stir it in and then set it aside in a warm place for 15 minutes to allow the yeast to activate.
- You'll notice bubbles forming on the top once the yeast has activated. You'll also be able to smell the distinctive scent of yeast once it's done.
- Melt butter: Next, melt butter in a bowl in the microwave or on the stovetop. Set it aside to let it cool down.
- Beat eggs and sugar: In the large bowl of a stand mixer, beat eggs and sugar on high for 10 minutes or until it turns foamy and pale yellow in color.
- Add the yeast mixture: Now reduce to a low speed and slowly mix in the yeast mixture.
- Mix in salt and vanilla extract: Continue mixing on low while adding salt and vanilla exact to this combined mixture.
- Add melted butter: Next, add the melted butter that we set aside to cool. Continue mixing the mixture on a low speed.
- Add raisins and flour: Finally, add raisins to this mixture. Now switch o the dough hook attachment on your stand mixer. Add 1 cup of flour at a time until 6 cups of flour have been incorporated.
- Continue mixing until the dough comes together and feels smooth and elastic. This should take approximately 15 minutes.
- Let the dough rise in a warm environment for 2 hours. Cover it with a kitchen towel or plastic wrap to let it rise.
- After the dough has risen and tripled in volume, transfer it onto a floured surface. I used a large cutting board. Split the dough in half.
- Take one-half of the dough and roll it into a log. Then split it into four equal pieces.
- Roll each of the four smaller pieces into thin, long logs (about 1.5-foot-long and 1 inch thick).
- Pinch the ends of all four thin logs together to start shaping them into a braid.
- Braid them into a nice and even braid as is shown in the picture (I have video instructions on my Instagram account under the Easter Bread bubble on how to make and braid this bread).
- Pinch the opposite end of the braided loaf together, then place it on a greased baking sheet.
- Using a hand whisk, whisk egg, and milk together until it's well mixed.
- Brush the egg wash generously over the top of the easter bread challah.
- Repeat the same steps with the second half of the dough by shaping it and brushing egg wash on top of it as we did with the first piece.
- Let the braided challahs rise in a warm place for another 45 minutes to an hour. It will expand nicely and close the gaps.
- Preheat the oven to 350 F. Bake each pan for 25 minutes or both pans for 30 minutes rotating them 10 minutes before the baking time ends.
- Remove from the oven and let them cool for 15 minutes before removing them from the pan.
- Remove from the oven and let them cool for 15 minutes on a wire rack before removing them from the pan.
UKRAINIAN EASTER PASKA
Steps:
- Cover the pan with greased plastic wrap and let rise until almost doubled.
- Bake 15 minutes. Reduce temperature to 350 F and bake an additional 40 minutes, or until an instant-read thermometer registers 190 F. If necessary, cover the top of the bread with aluminum foil to prevent over-browning.

- In a large bowl, dissolve sugar in warm water. Add yeast; let stand for 5 minutes.
- Add the canola oil, egg, salt and enough flour to form a soft dough. Knead for 5 minutes.
- Form dough into a smooth ball. Keeping the dough in the bowl, spray with non-stick spray and cover bowl with plastic wrap. Let rise in a warm place for 15-20 minutes.
- Punch down dough. Knead for 1 minute, then divide the dough into 3 same sized portions.
- Roll each out into long logs and set them up on the counter side by side.
- Braid the three pieces of bread together and then pinch together then end pieces and tuck them under the roll. Carefully place the loaf on the parchment paper lined baking sheet.
- Brush thoroughly with egg mixture and then sprinkle with the turbinado sugar.
- Let the loaf sit while oven is preheating to 350 degrees F, or about 10 minutes.
- Bake for 30-35 minutes, until outside is golden brown and internal temperature of loaf registers 195-200 degrees. Let cool. Slice & enjoy with butter!

ARMENIAN EASTER BREAD
This Armenian Easter Bread, or choereg, is made from a sweet, enriched dough perfumed with mahleb and fennel. It will be a sweet addition to your Easter brunch.

- Combine the water, sugar and yeast and stir to combine.
- Let sit for 10-15 minutes until nice and bubbly.
- Warm the butter and milk together until the butter is melted. Let cool to warm.
- Pour the proofed yeast in the bowl of your stand mixer followed by the flour, the milk mixture, the eggs, sugar, spices and salt.
- Fit your mixer with the paddle attachment and bring the dough together on low speed. Increase speed to medium and knead for about 10 minutes. The dough will be soft and will clear the sides of the bowl to only about halfway down. That's okay.
- When the dough is ready, it will be shiny, smooth, soft, and stretchy.
- Spray the top with pan spray, cover with a lint-free towel, and let rise in a cozy place until doubled. This could take anywhere from 2 to 4 hours, depending on whether you use more or less sugar and/or more or less yeast. See Notes.
- Once the dough has doubled, scrape it out onto a clean, smooth work surface, and gently press out the gases.
- Weigh your dough and divide by 9. If you don't have a scale, I implore you to get one. If you don't want to be so exact, divide the dough into thirds and then divide each third into three pieces.
- Press each of three pieces of dough into a rectangle and then roll up into a tight sausage. Roll out each into a rope about 12" long. Pinch the three ropes together at one end and braid fairly tightly. Pinch the dough together when you reach the other end. Tuck each end under the braid for a nice, polished presentation.
- Form two more braids in the same way.
- Place on a parchment-lined baking tray about 2-3 inches apart. Cover with plastic wrap and let rise i a cozy place until puffy, about 45 minutes.
- While the dough is rising, set a rack in the center of your oven. If you have one, place a baking stone on the rack. Otherwise, don't worry about it.
- Heat the oven to 350F.
- Whisk together the egg white and water.
- Gently brush a thin layer evenly onto each braid. Sprinkle sesame seeds on each braid.
- Bake for 20-30 minutes until lightly golden brown. The internal temperature of the bread should be 200F.
- Remove to a rack to cool completely. Rewarm to serve or serve at room temperature. Butter and jam would not be unwelcome.
