SWEET BLACKENED SALMON WITH SHERRY SAUCE



Sweet Blackened Salmon With Sherry Sauce image

This recipe is a crowd pleaser. Sweet and Spicy with a small tartkick from the Sherry sauce. It is a Great entree that goes with almost any side dish. It's something I made for my mom years ago and been serving it at my restaurants and for guests for years.

4 (5 -6 ounce) portions fresh salmon (ask Fishmonger what was cut that day)
extra virgin olive oil
1 pinch salt and pepper
3/4 cup dry sherry
2 tablespoons lemon juice
3 tablespoons light brown sugar
2 tablespoons balsamic vinegar
1/2 shallot, peeled and then small diced
1/2 cup chef paul's blackening seasoning (Sold in stores, or a favorite blackening seasoning)

Steps:

  • Directions:.
  • Use a cast iron pan or heavy skillet (NON-Aluminum Pan) over medium high heat lightly coat the bottom of the pan with olive oil. Next sprinkle lemon juice over salmon fillets and a pinch of salt and pepper over each fillet. In a bowl mix a ½ cup of blackening seasoning with 1 ½ TBSP of light brown sugar. Press the Salmon Top side down in to the Sweet Blackening Seasoning. Place the salmon in the heat pan top side down. Cook salmon until just cooked through, Careful not to burn the Salmon.... Just blackened the top then turn over, cook about 3-4 minutes on each side.
  • Sauce:.
  • In a non aluminum sauce pan, over medium high heat put in sherry wine, balsamic vinegar, diced shallots and 1 ½ TBSP brown sugar. Bring to a boil over high heat. Reduce glaze 3 or 4 minutes, until thickened. Remove from heat. Add a pinch of salt and pepper then stir together.
  • Drizzle the sauce a little on top of the salmon and then around it in a circler motion.
  • This salmon is great with truffle mashed potatoes or a lemon zested basmati rice.

1 tablespoon paprika
1 tablespoon cayenne
10 sprigs fresh thyme, washed, leaves removed and chopped
1 tablespoon freshly chopped oregano leaves
1 teaspoon kosher salt
4 (6 to 7-ounce) pieces salmon, pin bones removed, skin-on
3 to 4 tablespoons canola oil
2 lemons, zested and juiced

Steps:

  • In a small bowl, add the paprika, cayenne, thyme and oregano and salt and mix to blend. Put the mixture on a plate or other flat surface and coat the portions of salmon, 1 at a time, on the flesh side only.
  • Heat a large heavy-bottomed pan or cast iron skillet over medium heat, and add the oil. When the oil begins to smoke quite heavily shut the heat off under the pan. Add the salmon, 1 at a time, in a single layer, flesh side down, in the oil. Turn the heat back on under the pan and cook for 2 to 3 minutes. Use a spatula to turn the salmon to the other side. Cook the salmon over medium heat, until the skin becomes crispy, about 5 to 6 minutes.
  • Arrange the salmon on a platter, sprinkle with lemon zest and lemon juice and serve immediately.

6 (4 ounce) skin-on salmon fillets
2 tablespoons unsalted butter, melted
1 ½ tablespoons ground paprika
1 teaspoon brown sugar
1 teaspoon cayenne pepper
1 teaspoon sea salt
¾ teaspoon garlic powder
¾ teaspoon onion powder
½ teaspoon dried oregano
½ teaspoon ground black pepper
¼ teaspoon ground white pepper
¼ teaspoon dried basil
¼ teaspoon dried thyme
1 (16 ounce) package linguine pasta
1 tablespoon olive oil, or as needed
8 tablespoons unsalted butter, divided
1 (8 ounce) package baby bella mushrooms, sliced
1 medium red bell pepper, sliced
1 medium green bell pepper, sliced
½ cup finely chopped onion
2 cloves garlic, minced
2 cups half-and-half
1 teaspoon Cajun seasoning
½ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon garlic powder
¾ cup grated Parmesan cheese
1 cup cherry or grape tomatoes, halved
1 tablespoon chopped fresh parsley, or to taste

Steps:

  • Set salmon fillets on a plate with flesh-sides up; brush the tops with melted butter.
  • Combine paprika, brown sugar, cayenne pepper, salt, garlic powder, onion powder, oregano, black pepper, white pepper, basil, and thyme for seasoning in a small bowl. Sprinkle seasoning evenly over top of the salmon fillets, then lightly press the spices down onto the fish.
  • Heat a cast iron skillet over medium heat. When the pan is hot, place salmon, flesh-side down, into the skillet. Cook for 2 to 3 minutes, then carefully flip. Continue to cook until salmon flakes easily with a fork, 5 to 6 more minutes. Remove to a plate and keep warm.
  • Meanwhile, bring a large pot of lightly salted water to a boil. Cook linguine at a boil until tender yet firm to the bite, about 11 minutes. Drain and transfer to a large bowl. Toss with olive oil to keep it from sticking together.
  • Melt 2 tablespoons butter in a large saucepan over medium-high heat. Add mushrooms, bell peppers, onion, and garlic; saute until vegetables are soft, about 5 minutes. Use a slotted spoon to remove vegetable mixture from the pan and add it to the bowl with the linguine.
  • Drain the excess liquid from the saucepan. Add remaining 6 tablespoons butter to the pan and reduce heat to medium. Stir in half-and-half, Cajun seasoning, salt, pepper, and garlic powder. Cook, stirring occasionally, until thick and bubbly, about 10 minutes. Gradually stir in Parmesan cheese until melted and sauce has thickened.
  • Pour sauce over the linguine and vegetable mixture. Add tomatoes and toss to combine.
  • Serve pasta in bowls topped with blackened salmon, removing the skin, if desired. Garnish with parsley.
