This sweet, creamy and delicious macaroni salad will be a hit at your next carry-in or BBQ!

1 box (16 oz.) elbow macaroni
¼ cup carrot, grated
2 cups real mayonnaise
1 (14oz) can sweetened condensed milk
¼ cup white sugar
1/2 cup white vinegar
¼ teaspoon salt
1 cup cheddar cheese, cubed small

Steps:

  • Boil pasta in salted water to al dente or desired tenderness according to the directions on the package. Drain and rinse with cool water then set aside.
  • In a large bowl mix the remaining ingredients until well blended. Add the pasta and stir until pasta is well coated. Cover and refrigerate 2 hours before serving.

1 medium cucumber, finely chopped
1 jar (8 ounces) whole baby corn, drained and cut into 1/2-inch pieces
1 jar (7-1/2 ounces) marinated artichoke hearts, drained
1 cup sliced pimiento-stuffed olives
1 cup sliced ripe olives
1/2 cup finely chopped sweet red pepper
1/4 cup finely chopped onion
DRESSING:
1 cup canola oil
1 cup cider vinegar
1 cup sugar
1/2 teaspoon pepper
2 tablespoons minced fresh parsley

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large bowl, combine the cucumber, corn, artichokes, olives, red pepper and onion. Drain pasta and rinse in cold water; stir into vegetable mixture. , In a small bowl, whisk the dressing ingredients. Pour over salad; toss to coat. Cover and refrigerate for at least 2 hours. Serve with a slotted spoon.

2 ripe tomatoes, chopped
½ green bell pepper, seeded and chopped
¼ cucumber, chopped
1 green onion, chopped
⅔ cup white sugar
½ cup vegetable oil

¼ cup vinegar
1 teaspoon salt
1 teaspoon paprika
¼ teaspoon ground black pepper

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain and rinse in cold water until macaroni is cooled.
  • Place macaroni into a large salad bowl and stir in tomatoes, green bell pepper, cucumber, and green onion.
  • Whisk sugar, vegetable oil, ketchup, vinegar, salt, paprika, and black pepper, stirring in a bowl until sugar has dissolved. Pour dressing over macaroni and vegetables and toss to coat.

1 cup yogurt
1/2 cup fresh cream
1/4 cup mayonnaise
1 tsp salt
1 tbsp black pepper
3 tbsp vinegar
3 tbsp sugar
2 cups uncooked macaroni (small)
1 cup milk
2 cup of finely chopped bell-pepper (ideally a mix of yellow and green)
1 apple finely chopped
1/2 cup corn (optional)

Steps:

  • Boil pasta according to packet instruction with a little salt. Cook pasta fully.
  • Strain the pasta, wash with cold water and transfer into a bowl. Add a cup of cold milk to the pasta and cover. Leave in the fridge to chill for at least an hour.
  • In a bowl, mix salt, sugar, black pepper, vinegar, cream, yogurt and mayo with a whisk.

It was a huge hit with everyone helping themselves to seconds. I think this recipe would also be great with some hard boiled egg added. You could also try different vegetables such as celery or green pepper according to your taste. The result is a sweet and tangy, not overly creamy or mayonnaise tasting macaroni salad. Great with grilled food!
