- In a saucepan, saute onion and garlic in oil until tender. Add tomatoes and basil. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. , Meanwhile, broil fish 4-6 in. from the heat for 5-6 minutes. Top each fillet with tomato mixture and cheese. Broil 5-7 minutes longer or until fish just begins to flake easily with a fork.

- Place fish fillets in a baking dish and bake for 15 minutes.
- Meanwhile, chop onion.
- Heat oil in a saucepan and add onions and garlic, sauteing until tender.
- Drain tomatoes and add to the pan.
- Add basil and bring to a boil.
- Reduce heat and simmer uncovered for 5 minutes.
- Top each fish fillet with tomato mixture and feta cheese.
- Place under broiler and broil until fish flakes easily with a fork, about 10 minutes.

- Spray oil large broiler baking dish.
- Arrange fish fillets in a single layer in baking dish.
- Scatter onion over fish fillets and season with salt and pepper to taste.
- Scatter tomato over onion and fish.
- Drizzle melted butter over top.
- Broil for 5-7 minutes.
- Sprinkle with feta and continue to broil for 3-5 minutes more or until fish flakes easily and is cooked through.
- Sprinkle with fresh chopped cilantro to serve.

- Place 2 tomato slices on each fish fillet.

- Heat the oven to 180C/160C fan/gas 4. Put the feta in the centre of a baking dish, about 25cm x 20cm, and scatter the cherry tomatoes and red onion around the cheese.
