SLOW COOKER SWEET AND SPICY CHICKEN WITH VEGGIES
Sweet and spicy chicken thighs with veggies.

Steps:
- Start by laying the chicken thighs in the bottom of the slow cooker. Spread over the barbecue sauce. Sprinkle over the brown sugar, red pepper flakes, black pepper, garlic and cilantro over the chicken and barbecue sauce. Pour over the Italian dressing.
- Cover and cook on HIGH for 4 hours. Don't open the lid during the cooking time.
- After the cooking time is up. Add the sugar snap peas and squash.
- Cover the slow cooker again, and cook for an additional hour on HIGH.
- Serve over rice and enjoy!

- In a large zip-top bag, combine cumin, cinnamon, 3/4 teaspoon salt, and 1/2 teaspoon pepper; add chicken and toss to coat. In a large skillet, heat oil over medium-high. Cook chicken, skin side down, until golden, about 4 minutes; flip and cook 2 minutes.
- In a 5-to-6-quart slow cooker, place onion, garlic, and ginger. Add chicken, skin side up, then top with tomatoes and their liquid and raisins. Cover and cook on high until chicken is tender, 3 1/2 hours (or 6 hours on low).

SWEET AND SPICY SLOW COOKER CHICKEN

- Place the chicken in the bottom of the slow cooker. In a small bowl, combine the tomatoes, brown sugar and red pepper flakes. Pour over the chicken. Cover the slow cooker and cook on high for 4-6 hours or on low for 8-9 hours.
- Remove the chicken to a cutting board and shred with two forks. Return to the slow cooker and mix the chicken with the juices from the tomato/brown sugar sauce. Season with salt and pepper to taste.
- Serve in flour tortillas with toppings of choice: lettuce, sour cream, cheese, avocados, etc.

- Combine the chicken, garlic, onion, sweet and sour sauce, and barbecue sauce in a 3 to 4-quart slow cooker and stir gently.
- Cover the slow cooker and cook on low for 7 to 9 hours until chicken is thoroughly cooked to 165 F.
- If you'd like a thicker sauce, mix the cornstarch and water in a small bowl and add to the liquid in the crockpot; cover and cook 10 to 15 minutes until thickened. Serve over hot cooked rice or couscous.

SWEET AND SPICY CROCK POT CHICKEN
An easy-to-make crock pot chicken dish that is sweet and spicy at the same time. Adjusting the cayenne will adjust the heat in this dish (I always add more).

Steps:
- Heat oil in skillet.
- Add chicken and brown on all sides.
- While chicken is browning, make sauce by combining garlic, brown sugar, soy sauce, chicken broth, lemon juice, and cayenne in a mixing bowl.
- Remove browned chicken from skillet and season to taste with salt and pepper.
- Place chicken into crock pot and cover with sauce.
- Cover and cook on low for 4-8 hours or until chicken is done, depending on your crock pot.
- Remove chicken from crock pot and turn crock pot to High.
- Mix corn starch and water thoroughly together, then add to crock pot liquid.
- Place cover on crock pot so that the lid is slightly ajar.
- Cook until sauce thickens, about 20-30 minutes.
- Return chicken to crock pot to coat, then serve either alone or over a bed of rice and topped with sauce.
SWEET, STICKY AND SPICY CHICKEN
