SLOW COOKER SWEET AND SPICY CHICKEN WITH VEGGIES

Sweet and spicy chicken thighs with veggies.

2 lbs. boneless skinless chicken thighs
1 cup barbecue sauce
2 Tbsp. brown sugar
1/2 tsp. red pepper flakes
1/4 tsp. black pepper
2 tsp. minced garlic
1 1/2 tsp. dried cilantro or 1 Tbsp. minced fresh
1/2 cup Italian salad dressing
3 cups sugar snap peas
3 cups sliced yellow squash
Steamed white or brown rice for serving

Steps:

  • Start by laying the chicken thighs in the bottom of the slow cooker. Spread over the barbecue sauce. Sprinkle over the brown sugar, red pepper flakes, black pepper, garlic and cilantro over the chicken and barbecue sauce. Pour over the Italian dressing.
  • Cover and cook on HIGH for 4 hours. Don't open the lid during the cooking time.
  • After the cooking time is up. Add the sugar snap peas and squash.
  • Cover the slow cooker again, and cook for an additional hour on HIGH.
  • Serve over rice and enjoy!

2 teaspoons ground cumin
1/2 teaspoon ground cinnamon
Coarse salt and ground pepper
4 chicken leg quarters (2 1/2 pounds total)
1 tablespoon extra-virgin olive oil
1 medium yellow onion, cut into 1/2-inch wedges (root end left intact)
3 garlic cloves, minced
3-inch piece peeled fresh ginger, sliced into rounds
1 can (28 ounces) diced tomatoes
1/2 cup raisins

Steps:

  • In a large zip-top bag, combine cumin, cinnamon, 3/4 teaspoon salt, and 1/2 teaspoon pepper; add chicken and toss to coat. In a large skillet, heat oil over medium-high. Cook chicken, skin side down, until golden, about 4 minutes; flip and cook 2 minutes.
  • In a 5-to-6-quart slow cooker, place onion, garlic, and ginger. Add chicken, skin side up, then top with tomatoes and their liquid and raisins. Cover and cook on high until chicken is tender, 3 1/2 hours (or 6 hours on low).

1 pound boneless skinless chicken breasts
1 (14.5-ounce) can petite or regular diced tomatoes (undrained)
1/3 cup brown sugar
1/4 teaspoon crushed red pepper flakes (see note)

Steps:

  • Place the chicken in the bottom of the slow cooker. In a small bowl, combine the tomatoes, brown sugar and red pepper flakes. Pour over the chicken. Cover the slow cooker and cook on high for 4-6 hours or on low for 8-9 hours.
  • Remove the chicken to a cutting board and shred with two forks. Return to the slow cooker and mix the chicken with the juices from the tomato/brown sugar sauce. Season with salt and pepper to taste.
  • Serve in flour tortillas with toppings of choice: lettuce, sour cream, cheese, avocados, etc.

2 pounds boneless, skinless chicken thighs (sliced into strips)
3 cloves garlic (minced)
1 onion (chopped)
1 cup purchased sweet and sour sauce
3/4 cup purchased barbecue sauce
1 to 2 tablespoons cornstarch (if needed)
2 tablespoons water (if needed)

Steps:

  • Combine the chicken, garlic, onion, sweet and sour sauce, and barbecue sauce in a 3 to 4-quart slow cooker and stir gently.
  • Cover the slow cooker and cook on low for 7 to 9 hours until chicken is thoroughly cooked to 165 F.
  • If you'd like a thicker sauce, mix the cornstarch and water in a small bowl and add to the liquid in the crockpot; cover and cook 10 to 15 minutes until thickened. Serve over hot cooked rice or couscous.

1 tablespoon cooking oil
6 boneless skinless chicken breast halves
4 garlic cloves, minced
1/2 cup brown sugar
1 cup low sodium soy sauce
1 cup low sodium chicken broth
2 tablespoons fresh lemon juice
1 teaspoon cayenne pepper, to taste
salt and pepper
1/4 cup cornstarch
1/4 cup water

Steps:

  • Heat oil in skillet.
  • Add chicken and brown on all sides.
  • While chicken is browning, make sauce by combining garlic, brown sugar, soy sauce, chicken broth, lemon juice, and cayenne in a mixing bowl.
  • Remove browned chicken from skillet and season to taste with salt and pepper.
  • Place chicken into crock pot and cover with sauce.
  • Cover and cook on low for 4-8 hours or until chicken is done, depending on your crock pot.
  • Remove chicken from crock pot and turn crock pot to High.
  • Mix corn starch and water thoroughly together, then add to crock pot liquid.
  • Place cover on crock pot so that the lid is slightly ajar.
  • Cook until sauce thickens, about 20-30 minutes.
  • Return chicken to crock pot to coat, then serve either alone or over a bed of rice and topped with sauce.

¼ cup soy sauce

4 skinless, boneless chicken breast halves - cut into 1/2 inch strips
1 tablespoon vegetable oil

Steps:

  • Mix together brown sugar, honey, soy sauce, ginger, garlic and hot sauce in a small bowl.
  • Lightly salt and pepper the chicken strips.
  • Heat oil in a large skillet over medium heat. Add chicken strips and brown on both sides, about 1 minute per side. Pour the sauce over the chicken. Simmer uncovered until the sauce thickens, 8 to 10 minutes.
