HOLIDAY HERB-CHEESE ROLLS

Steps:
- In a large bowl, combine 1-1/2 cups flour, sugar, potato flakes, yeast, salt, dill and garlic powder. In a small saucepan, bring water and butter just to a boil., In a small bowl, pour boiling liquid over oats. Let stand until mixture cools to 120°-130°, stirring occasionally. Add to dry ingredients; beat just until moistened. Add egg; beat until smooth. Stir in enough remaining flour to form a firm dough (dough will be sticky)., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Knead in mozzarella cheese. Place in a large bowl coated with cooking spray, turning once to coat the top. Cover and let rise in a warm place until doubled, about 1-1/4 hours., Punch dough down. Turn onto a lightly floured surface; divide into 24 pieces. Shape each into a ball. Place in a 13x9-in. baking pan coated with cooking spray; brush milk over rolls., In a small bowl, combine the remaining ingredients; sprinkle over tops. Cover and let rise until nearly doubled, about 45 minutes. , Preheat oven to 375°. Bake 20-25 minutes or until golden brown. Remove from pan to a wire rack. Refrigerate leftovers.

- Combine the cream cheese, dill, and green olives in a bowl and mix well with a fork.
- Spread a thin layer of the cream cheese mixture on each deli meat slice, arrange a pickle down the center of each, and roll them up.
- Refrigerate for 30 minutes to firm; then cut each roll into 3 slices and serve. May be made up to 1 day in advance.

DILLY ROLLS
I have had this recipe a long time. I found it in an old Taste of Home magazine years ago. One of my kids likes to add ham to his roll for a quick sandwich. These have a lot of dill. If you are not a dill fan - feel free to cut back. Cooking time includes rising times for the dough. Prep time is approximate.

Steps:
- In a large saucepan over medium heat, cook cottage cheese and butter until butter is melted.
- Cool slightly.
- In a large mixing bowl, dissolve yeast in water.
- Add eggs, sugar, onion, dill, salt, baking soda and cottage cheese mixture.
- Add 3 cups flour. Beat until smooth.
- Add enough extra flour to form a soft non-sticky dough.
- Place in greased bowl, turning once.
- Cover and let rise until double - about 1 hour.
- Punch dough down. Form into 24 balls. Please on a greased cookie sheet.
- Cover and let rise until doubled - about 45 minutes.
- Bake at 350 degrees for 20-25 minutes.

BEST EVER GARLIC ROLLS
Very simple, quick and great tasting rolls with a mixture of Blessing to lather the rolls for that extra special taste.

Steps:
- Lightly spray oil on a large cookie sheet.
- Roll out the dough on a floured counter and cut into 1 1/2 x 1 1/2 squares.
- Butter the top with soft or melted butter and cover with a clean kitchen towel.
- Let sit for 30 minutes.
- Bake for 12 minutes or until golden on top.
- Blessing mixture is the garlic, salt, onion powder, butter, olive oil.
- Place the "Blessing" mixture into a saucepan and keep it on low to keep warm. DON'T BOIL.
- Immediately after the rolls are done, place the rolls in a bowl and pour the Blessing over them and toss.
- Serve Warm.
- Optional: add 1/4-1/2 teaspoon of chopped rosemary and 1/2 teaspoon sweet basil in with the Blessing.
