SWEET AND SOUR GLAZED SHRIMP



Sweet and Sour Glazed Shrimp image

Mix Chinese plum sauce, ketchup and rice wine vinegar to get the perfect balance of flavors for this shrimp.

1/4 cup Chinese plum sauce
1/4 cup ketchup
2 teaspoons soy sauce
1/4 teaspoon crushed red pepper flakes
1 1/4 pounds medium shrimp, peeled and deveined and tails removed
Kosher salt and freshly ground black pepper
1 tablespoon peanut oil
2 scallions, thinly sliced (white and green parts kept separate)
1 clove garlic, finely chopped
1 teaspoon finely chopped peeled fresh ginger
3 tablespoons unseasoned rice wine vinegar
Cooked white rice, for serving, optional

Steps:

  • Stir together the plum sauce, ketchup, soy sauce and pepper flakes in a small bowl and set aside.
  • Sprinkle the shrimp with salt and pepper. Heat the oil in a medium skillet over medium-high heat. Add the shrimp to the skillet and cook, stirring occasionally, until just cooked through, 2 to 3 minutes. Transfer to a plate.
  • Add the scallion whites, garlic and ginger to the skillet and cook, stirring constantly, until soft, about 1 minute. Add the vinegar and scrape up any brown bits that cling to the bottom of the skillet. Add the plum-ketchup sauce and bring to a simmer. Return the shrimp to the skillet along with the scallion greens and give the skillet a swirl to bring everything together. Divide among 4 plates and serve with white rice if using.

½ cup honey
⅓ cup rice vinegar
3 tablespoons tomato paste
3 tablespoons pineapple juice
1 tablespoon soy sauce
2 tablespoons water
1 tablespoon cornstarch
1 pound extra-large shrimp - peeled, deveined, and tails removed
½ teaspoon kosher salt
¼ teaspoon ground black pepper
2 tablespoons vegetable oil, divided
½ teaspoon sesame oil
1 cup diced red bell pepper
1 cup sliced zucchini
2 teaspoons minced garlic
1 teaspoon minced fresh ginger
1 cup pineapple chunks
1 tablespoon sliced green onions
¼ teaspoon sesame seeds

Steps:

  • Whisk together honey, rice vinegar, tomato paste, pineapple juice, and soy sauce for sweet and sour sauce in a medium bowl. Whisk together water and cornstarch for thickener in another bowl. Set both aside.
  • Pat shrimp dry with paper towels. Combine shrimp, salt, and pepper in a medium bowl; toss to season.
  • Heat 1 tablespoon vegetable oil and the sesame oil in a wok or large sauté pan over medium-high heat. Add shrimp in a single layer to the hot oil; cook for 1 minute without stirring. Stir and cook for another 30 seconds. Transfer to a clean plate.
  • Add remaining 1 tablespoon vegetable oil to the wok. When heated, add bell pepper and zucchini; stir-fry for 2 minutes. Add garlic and ginger; stir-fry until fragrant, about 30 seconds. Add pineapple; stir-fry for 30 seconds.
  • Pour in the reserved sweet and sour sauce; stir and cook until simmering, about 2 minutes.
  • Whisk the cornstarch mixture again, then gradually add it to the center of the wok; stir constantly until sauce has thickened, about 30 seconds.
  • Return the cooked shrimp to the wok; stir to combine and cook until shrimp are warmed through, about 2 minutes.
  • Garnish each serving with green onions and sesame seeds.

1 lb shrimp
2 teaspoons minced ginger
2 teaspoons minced garlic

1 cup thinly sliced onion
1 cup chunks green bell pepper (1-inch)
1 cup pineapple chunk
12 maraschino cherries
6 tablespoons sliced green onions
hot white fluffy cooked rice, accompaniment

Steps:

  • Sauce:.
  • In a bowl combine 1/4 cup stock, ketchup, sugar, juice, vinegar, soy, and 1/2 teaspoon pepper flakes.
  • Set aside.
  • In a small bowl, combine cornstarch with the remaining 2 Tablespoons of stock and stir to dissolve.
  • Set aside.
  • In a bowl, toss the shrimp with ginger, garlic and the remaining 1/4 teaspoon pepper flakes.
  • Set aside for 10-20 minutes.
  • Heat a large wokk or skillet over high heat.
  • Add the oil, swirling to coat the sides and bottom of the pan. Add the shrimp, garlic and ginger and stir-fry until pink, about 2 minutes.
  • Remove from pan.
  • Add the onions and peppers and stir-fry until crisp tender, about 2 minutes.
  • Add the sauce and cook, stirring until the sugar dissolves.
  • Add the cornstarch mixture and bring to a boil.
  • Return the shrimp to pan and add pineapple, cherries, and green onions.
  • Cook until the sauce is thick, about 1 minute more.
  • Remove from heat and serve over rice.

1 lb spaghetti or 1 lb linguine
1 large onion, halved and sliced
2 cups broccoli florets
1 1/2 lbs medium shrimp, cleaned
1 (11 1/2 ounce) sweet and sour sauce, Kikkoman brand is good
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Bring a large pot of lightly salted water to a boil.
  • Add the pasta and cook as per package directions and drain.
  • Meanwhile, heat 2 tablespoons oil in a 12 inch skillet, over medium-high heat, add onions and cook 2 minutes then add broccoli and continue to cook, stirring, an additional 5 minutes.
  • Add shrimp; season with salt and pepper and cook, stirring, for 3-5 minutes until shrimp are no longer pink.
  • Stir in sweet and sour sauce and the pasta too, tossing with tongs so that ingredients are well blended.
  • Remove from heat; divide onto plates and serve immedietly.

This is my version of sweet & sour shrimp. I've tried and tried to find the exact recipe I was looking for but never found it, so I just made my own! I hope you enjoy it :) I like to use fresh pineapple, but if you cant thats fine. The chunks are optional... I use them sometimes, and othertimes I just leave them out. Dont use a lot of pineapple chunks, because its too overwhelming! :)

1 1/2 tablespoons vegetable oil
1 onion, chopped into large pieces
4 carrots, chopped into large but thin pieces
2 cloves garlic, minced
1/3 cup soy sauce
2 tablespoons brown sugar
1 cup pineapple juice
4 tablespoons rice wine vinegar
1/3 teaspoon cayenne (or more to your tastes)
1/2 lb shrimp, peeled and deveined (about twenty or so 26-30 count shrimp)
1 1/2-2 tablespoons cornstarch
water
10 small pineapple chunks (optional)

Steps:

  • In a large skillet or in a wok, heat your oil to medium heat, and then add the carrot, tossing very frequently.
  • Allow the carrot to cook for about 4 minutes.
  • Then add your onion, and cook for another 4 minutes or so, and then add your garlic, cooking for another minute or so.
  • In a liquid measuring cup, add your soy sauce, brown sugar, juice, vinegar and cayenne.
  • Add your liquid mixture to the skillet and bring to a heavy simmer.
  • Add your shrimp, and cook until your shrimp is done (pink on both sides) approximately 3-4 minutes.
  • Don't overcook your shrimp.
  • At this time, you can throw in your pineapple chunks if you wish to use them.
  • While your shrimp is cooking, mix your cornstarch with approximately 4-5 tablespoons of water (just enough to make it a liquid mixture-you may need a little more or a little less because I never measure the amount of water I use).
  • Add the cornstarch mixture to your pan, and sir constantly until thick- this will not take very long at all.
  • You may turn your heat down to medium-low.
  • Serve with rice.
  • ENJOY!

1/4 cup chicken broth, reduced sodium
1/4 cup Japanese soy sauce
1/4 cup rice vinegar

1/2 teaspoon hot red pepper flakes, crushed
2 tablespoons vegetable oil, divided
1 lb large shrimp, shelled and deveined (21 to 25 count)
1 medium red bell pepper, cored, seeds and ribs removed, and cut into 1 inch cubes
3 garlic cloves, minced

Steps:

  • To make the sauce base, sprinkle the cornstarch over 1/3 cup water in a small bowl and whisk to dissolve the cornstarch. Add the broth, soy sauce, vinegar, sugar, and red pepper flakes and mix well. Set aside.
  • Heat a 12 inch nonstick skillet over high heat. Add 1 tablesppon of the oil and swirl the skillet to slick the bottom with oil. Add the shrimp and stir-fry just until the shrimp turn opaque, about 2 minutes. Using a slotted spoon, transfer to a plate.
  • Add the remaining 1 tablespoon ili to the skillet and heat over medium high heat. Add the red pepper and stir until it begins to soften, about ` minute, Add the scallions and stir until they begin to wilt, about 1 minute. Add the pineapple and cook, stirring occasionally, until heated through, about 2 minutes. Stir in the shrimp and garlic and stir-fry until the garlic gives off its aroma, about 1 minute. Pour in the sauce base and brin to a boil to thicken the sauce stirring occasionally.
  • Serve hot, spooned over rice.
