Ingredients

2 tablespoons pomegranate molasses
2 teaspoons champagne vinegar
1 teaspoon Dijon mustard
3 tablespoons extra-virgin olive oil
Kosher salt
2 large sweet potatoes, peeled, halved and cut into 1/3-inch half-moons
One 14-ounce bag frozen pearl onions, thawed and well drained
3 tablespoon olive oil
Kosher salt
1 Honeycrisp or Fuji apple, cut into 1/4-inch half-moons
Half 5-ounce container baby kale
1/4 cup pomegranate seeds

Steps:

Preheat the oven to 425 degrees F.
For the dressing: In a small bowl, whisk together the pomegranate molasses, vinegar and mustard. Pouring in a steady stream, whisk in the olive oil. Season with 1/4 teaspoon salt. (The dressing can be made up to 3 days in advance.)
For the salad: Scatter the sweet potatoes and pearl onions on a rimmed baking sheet. Drizzle with the olive oil and season with 1 teaspoon salt. Roast until the potatoes are tender throughout and beginning to brown, about 35 minutes, tossing halfway through. Transfer to a large bowl to cool slightly.
Add the apples, baby kale and the dressing to the bowl, and season with 1/4 teaspoon salt. Using two wooden spoons, toss gently to combine and coat evenly in the dressing.
Sprinkle the salad with the pomegranate seeds before serving.

I've always loved chilled rice salads in the summertime.I've combined the ingredients that I like to make it sweet, savory and crunchy. This goes great with grilled fish or meat kabobs.

2 1/2 c wild and long grain rice cooked
2/3 c chopped red onion
2/3 c chopped celery
1/2 c dried cranberries and golden raisins (combined)
1/2 c glazed pecan pieces
2/3 c fruity vinegrette (i use "naturally fresh pomagranite and mixed berry vinegrette)

Steps:

1. Combine all ingredients making sure to evenly distribute.
2. Chill for at least two hours before serving.
3. Optional: Can also top salad with blue cheese crumbles

This is my favourite salad for potlucks and barbecues. Don't be turned off by the unusual combination of ingredients - the different flavours and textures make for a delicious, unique, and beautiful salad. The original recipe called for chicken, but I use cashews for a vegetarian dish that's great as a side or main. Almonds, sunflower seeds, or shrimp for those who eat seafood may also be added. This tastes even better on day 2, when the flavours have mingled and mellowed.

Ingredients

1 (6 ounce) box Uncle Bens wild rice, with seasonings (instead, I use 3/4-1 cup of mixed brown and wild rice and add a vegetarian bouillon cube while cook)
3 -4 green onions, sliced (with some of the green leafy part)
3 stalks celery, sliced
1 green pepper, chopped
1 bunch broccoli, separated into small floret pieces
1 cup fresh mushrooms, sliced
cashews
1/2 cup vegetable oil
3 tablespoons soy sauce
2 tablespoons vinegar
1 tablespoon curry powder (or more)

Steps:

Cook the rice according to product directions.
Prepare the dressing.
Mix the rice and vegetables together. Add the dressing and stir gently.
Refrigerate to allow the salad to marinate, stirring 2-3 times. I generally allow several hours for this step and never marinate for less than 1 hour.

1 cup romaine lettuce hearts, ribs removed
1 cup butter lettuce, ribs removed
1/2 cup cilantro
1/2 cup watercress
1 gala apples, diced
1 green onion, thinly sliced
1/2 cucumber, peeled and sliced
1 ripe avocado, diced
1/8 cup glazed walnuts
1/8 cup dried cranberries, for salad
equal parts hidden valley ranch and simply dressed blue cheese dressing
sea salt
fresh ground pepper

Steps:

Wash and rip lettuce, cress, cilantro and green onion, set aside in bowl.
add diced avocado, apple and sliced cucumber.
throw in the walnut pieces and cranberries.
salt and pepper to taste.
add dressings and toss.
Enjoy.
