Sweet Garlic-Chili Hot Sauce - Recipe image

A quick and easy hot sauce recipe that is tangy and garlicky and tart-sweet, more about the flavors of sweet chili and garlic than the heat of your typical hot sauce. Perfect for adding some zing to anything.

2 ounces sweet peppers (chopped - I used 5 Frontera Sweet Peppers)
6 garlic cloves (chopped)
1 teaspoon honey
1 teaspoon salt
2/3 cup white wine vinegar

Steps:

  • Add all of the ingredients to a small pot and simmer for about 15 minutes to soften everything up. Some of the vinegar will evaporate.
  • Cool, then transfer to a food processor. Process until nice and smooth.
  • Strain out the solids, then pour the hot sauce into a bottle.
  • Enjoy!

1 cup sugar
2 tablespoons finely minced garlic
1/2 cup water
1 teaspoon salt
1/2 cup white vinegar
1 tablespoon chili-garlic sauce

Steps:

  • In a small, heavy saucepan, combine the sugar, water, vinegar, garlic and salt.
  • Bring to a rolling boil over medium heat.
  • Stir to dissolve the sugar and salt and reduce the heat to low.
  • Simmer until the liquid reduces slightly and thickens to a light syrup. Remove from the heat and stir in the garlic chili sauce.
  • Cool to room temperature before serving.
  • Transfer the cooled sauce to a tightly sealed jar and store at room temperature for 2 to 3 days. .

2 tablespoons vegetable or canola oil
2 tablespoons minced garlic
1 tablespoon minced ginger
1 teaspoon finely chopped fresh green chiles
2/3 cup low sodium soy sauce
1/2 cup chicken broth
1/3 cup rice wine vinegar
1/4 cup light brown sugar
1 tablespoon sesame oil
1 tablespoon red pepper flakes
1/4 cup water
2 tablespoons cornstarch

Steps:

  • Heat the vegetable oil in a medium saucepan over high heat. Add the garlic, ginger, and chilis. Cook, stirring constantly until fragrant, about 15 seconds.
  • Stir in the soy sauce, chicken broth, vinegar, brown sugar, sesame oil, red pepper flakes. Bring to a boil then reduce heat to medium and cook for 1 minute.
  • Stir the water and cornstarch together until fully dissolved and pour it into the sauce. Cook, stirring constantly until the sauce thickens.
  • Allow the sauce to cool for 1 hour then transfer to an airtight container and refrigerate for up to 4 days. Reheat the sauce by warming it over low heat.

½ cup rice vinegar (unseasonsed)
3/4 cup water
4 oz white sugar ((1/2 cup + 2 tbsp))
5 garlic cloves (chopped finely)
1 tbsp soy sauce (gluten free soy sauce or salt if you'd like to keep the recipe gluten free or soy free, OR 1/2 tbsp fish sauce)
1/2 tsp cayenne pepper (optional - halve it or leave it out if you like it less spicy)
2.8 oz sambal oelek (a generous 2 1/2 tbsp (please see recipe notes))
4 tsp cornflour / cornstarch ((see recipe notes))
2 tbsp water

Steps:

  • Add the vinegar, water, sugar, garlic cloves, soy sauce, and cayenne pepper (if using) in to a non-stick pan. If you're using dried chili instead of sambal oelek, add it to the pan at the same time.
  • Heat over medium heat while stirring, to dissolve the sugar. Increase the heat to medium-high and bring it to a boil. Let it simmer for about 2 minutes.
  • Add the sambal oelek and mix through. Let it cook for a few minutes until it's slightly thickened (2- 5 minutes)
  • Mix the cornstarch and water into a smooth slurry and add this to the sauce as well.
  • While stirring frequently (to prevent the sauce from burning at the bottom), simmer the sauce for a further 2 - 5 minutes or until it reaches a desired thickness. Remember, the sauce thickens as it cools as well. If it thickens too much, add a little extra water to thin it out. If you're using Clear Jel, the sauce will thicken mostly only as it cools down.
  • Pour into glass jars with air-tight lids (OR heated and sterilized jars to store for longer).
  • Cool to room temperature and store in the fridge.

1/2 cup water
1/2 cup white vinegar
2 tablespoons minced garlic
1 teaspoon salt
1 tablespoon hot chili sauce (you can find this at any asian market; usually it's the korean brand with the bright green top. If y)

Steps:

  • In a saucepan, comine the sugar, water, vinegar, garlic and salt.
  • Bring to a boil over medium heat until the sugar is dissolved.
  • Turn to medium-low and keep cooking until the sauce is a little syrupy (18-25 min).
  • Remove from heat and add the chili sauce--mix well; it will turn a nice amber-orange.
  • Let cool to room temperature, then keep refrigerate in an airtight jar for up to three weeks.
  • When using, heat a little bit until it thins to a slightly syrupy consistency.

  • Prepare the jars and rings by washing on the hot cycle of your dishwasher. Wash the lids in hot soapy water and rinse well. Place in a bowl covered by two or three inches of very hot tap water. Set aside.
  • Prepare your canner (or stockpot) by putting a rack in the bottom to hold the jars away from the base of the pan. If you do not have a rack, use a fully opened vegetable steamer basket or extra rings from 'regular-mouth' or 'narrow-mouth' canning jars placed facing down with the sides touching. Set aside.
  • Sprinkle salt over the minced garlic in a metal or glass bowl (don't use plastic here unless you want a perma-garlic bowl!) Stir together, cover tightly with plastic wrap and let it mellow at room temperature for an hour. The salt will help pull some of the moisture from the garlic, so don't skip this step!
  • In a saucepan, bring the vinegar to a rolling boil. Add the sugar all at once and stir well until the sugar is dissolved. Return to a full boil. Lower heat just slightly so that it boils steadily but not really hard. Boil steadily, uncovered, for 10 minutes. Remove the pan from the hot burner, stir in the garlic mixture and the crushed red pepper flakes. Take care not to hold your face directly over the pan when adding in the pepper flakes as that can trigger some serious coughing and eye-watering, depending on the strength of the pepper flakes.
