These truly are the best healthy crunchy chocolate chip cookies I've ever had! They're perfectly crisp, deliciously sweet, and full of rich chocolate morsels. Leftovers will keep for at least five days if stored in an airtight container-if they last that long! (They freeze well, too!)

Yield 12 cookies

Number Of Ingredients 8

1 cup (120g) white whole wheat flour or gluten-free* flour (measured like this)
½ tsp baking soda
¼ tsp salt
2 tbsp (28g) unsalted butter or vegan butter, softened (see Notes)
½ cup (96g) coconut sugar
2 tbsp (30mL) unsweetened cashew milk
2 tsp vanilla extract
3 tbsp (42g) miniature chocolate chips, divided

Steps:

  • In a medium bowl, whisk together the flour, baking soda, and salt. In a separate bowl, beat the butter and coconut sugar with an electric or stand mixer. Beat in the cashew milk and vanilla. Gradually beat in the flour mixture, mixing just until incorporated. Fold in 2 ½ tablespoons of miniature chocolate chips. Chill the cookie dough for 30 minutes.
  • Preheat the oven to 350°F, and line a baking sheet with a silicone baking mat or parchment paper.
  • Drop the cookie dough onto the prepared baking sheet using a spoon and a spatula. Flatten to ½" thick using a spatula. (The cookies should spread some if there isn't too much flour in the dough!) Gently press the remaining miniature chocolate chips into the tops. Bake at 350°F for 20-22 minutes. Cool completely to room temperature on the baking sheet.

2 1/2 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
2 sticks unsalted butter, melted and cooled slightly
1 1/2 cups packed light brown sugar
1/2 cup cocoa powder (not Dutch-process)
2 large eggs, lightly beaten
1 1/2 teaspoons vanilla extract
1/2 cup bittersweet chocolate chips

Steps:

  • 2 cups assorted mix-ins (such as holiday M&Ms, toffee bits, shredded coconut, peanut butter chips and/or white chocolate chunks)
  • Position racks in the upper and lower thirds of the oven and preheat to 375 degrees F. Line 2 baking sheets with parchment paper. Sift the flour, baking soda and salt into a large bowl. In a separate large bowl, whisk the melted butter, brown sugar, cocoa powder, eggs and vanilla until combined. Stir in the flour mixture with a wooden spoon until just incorporated, then stir in the chocolate chips and assorted mix-ins.
  • Drop tablespoonfuls of dough about 3 inches apart on the prepared baking sheets; smooth the tops with damp fingers. Bake, switching the pans halfway through, until puffed and set, about 12 minutes. Let cool 5 minutes on the baking sheets, then transfer to racks to cool completely.

While we love indulging in classic peanut butter cookies, some days we would rather enjoy that same delicious taste with a better-for-you, low-calorie recipe instead! We substituted in a combination of whole wheat flour, honey, brown sugar, and vegetable oil so these low-calorie peanut butter cookies would stay sweet and chewy but have less fat and fewer calories than the original recipe. Don't worry, you don't need to tell anyone, just enjoy them for how delicious they look and taste!

1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup peanut butter
1/4 cup no-trans-fat 68% vegetable oil spread stick, softened
1 egg
2 tablespoons honey
1 1/4 cups Gold Medal™ whole wheat flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
Additional granulated sugar

Steps:

  • Heat oven to 375°F. In large bowl, beat 1/2 cup granulated sugar, the brown sugar, peanut butter and vegetable oil spread with electric mixer on low speed until well mixed. Beat in honey and egg until well blended. Beat in remaining ingredients until dough forms.
  • Shape dough into 1 1/4-inch balls. Place balls about 3 inches apart on ungreased cookie sheets. Flatten in crisscross pattern with fork dipped in additional granulated sugar.
  • Bake 7 to 9 minutes or until light golden brown. Cool 1 minute; remove from cookie sheets to cooling rack. Cool completely, about 15 minutes.

3 tablespoons butter, softened
1 1/2 cups white sugar or 1 1/2 cups sugar substitute, such as splenda
2 egg whites
1 teaspoon lemon juice
2 1/3 cups flour
2 1/2 teaspoons baking powder
2 teaspoons cinnamon
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/2 cup chopped walnuts
1 tablespoon skim milk

Steps:

  • Preheat oven to 375°F
  • In a small bowl combine milk and 1 tsp cinnamon, set aside.
  • Cream butter with the sugar, the egg whites and the lemon juice until fluffy.
  • Combine flour, powder, 1 tsp cinnamon, salt and nutmeg.
  • Add the flour mixture in the creamed mixture, stir in walnuts.
  • Roll dough onto a floured surface.
  • Cut with cookie cutter. It's optional. If I'm in a hurry, I just shape a little balls, then I place them onto baking sheets and then flat them with a fork.
  • Brush with the milk and cinnamon.
  • Bake about 10 minutes.
