Number Of Ingredients 8

2 cups sour milk
2 granulated yeast (packages)
1/2 cup molasses
1/4 cup lukewarm water
2 cups sifted enriched flour
4 cups unsifted rye meal or 4 cups whole wheat flour
3 teaspoons salt
4 teaspoons caraway seeds

Steps:

  • Heat sour milk. Cool to lukewarm and add to yeast whick has been softened in lukewarm water. Add molasses. Mix dry ingredients and add to the wet ingredients. Mix well.
  • Cover and let rise 10 minutes. Knead 8-10 minutes. Place in a greased bowl, Cover and let rise in a warm place until double in bulk.
  • Knead dough lightly, then let rise 10 minutes. Make two loaves , place in greasede pans. let rise in a warm place until doubled in bulk.
  • Bake at 375F for 30 minutes.

This is excellent bread, so good it melts in your mouth!

1 ½ (0.6 ounce) cakes compressed fresh yeast
1 ½ cups warm water
1 ½ cups warm milk
1 tablespoon salt
6 cups bread flour
¼ cup molasses
1 cup packed brown sugar
⅓ cup melted shortening
3 cups rye flour

Steps:

  • Dissolve yeast in warm water.
  • Scald milk. Transfer milk to a large bowl, and add salt, molasses, brown sugar, and melted shortening. Cool to lukewarm, and add dissolved yeast. Add rye flour, beating with mixer. Gradually beat in white flour. Place dough in a greased bowl, and turn to coat the surface. Cover with a damp towel, and allow to rise till double in bulk in a warm place.
  • Punch down the dough, and place on a lightly floured board. Knead until dough becomes elastic, and does not stick to the board. Allow to rest for 5 minutes. Divide into 3 equal portions, and shape into loaves. Place in greased 9 x 5 inch bread pans. Let rise until double in bulk.
  • Bake at 375 degrees F (190 degrees C) for 35 to 40 minutes.

This bread, which is lightly flavored with aniseed and orange, makes great toast. Rising time is not included in the prep time or cook time. There's about 2 hours 40 minutes of total rising time. This is a good holiday bread.

2 1/4 cups warm water (105 F. to 115 F.)
1 (1/4 ounce) envelope dry yeast
6 1/2 cups about unbleached all-purpose flour
1 cup rye flour
1/2 cup sugar
1/2 cup dark corn syrup
1/4 cup vegetable shortening, plus
2 tablespoons vegetable shortening, melted
2 teaspoons anise seed
1 1/2 teaspoons ground coriander
1 1/2 teaspoons orange zest
1/2 teaspoon salt
melted butter

Steps:

  • Place 1/4 cup warm water in small bowl. Sprinkle yeast over; stir to dissolve. Let stand 5 minutes. Combine remaining 2 cups warm water, 1 cup all purpose flour and 1 cup rye flour in bowl. Add yeast mixture. Mix to blend well. Cover bowl with kitchen towel. Let sponge rise 1 hour.
  • Mix sugar, corn syrup, shortening, aniseed, coriander, orange peel and salt into sponge. Gradually mix in enough all purpose flour, 1/2 cup at a time, to form slightly sticky dough. Knead on floured surface until smooth and elastic, adding more flour if sticky, about 10 minutes.
  • Lightly oil large bowl. Add dough, turning to coat entire surface. Cover bowl with kitchen towel. Let dough rise in warm draft-free area until doubled in volume, about 1 hour.
  • Grease 2 cookie sheets. Punch dough down. Turn out onto lightly floured surface and knead until smooth. Divide dough into 3 parts. Pat each piece into 5-inch-diameter round. Place on prepared sheets. Cover and let rise in warm draft-free area until almost doubled, about 40 minutes.
  • Preheat oven to 350°F Pierce each loaf 5 times with fork. Bake until loaves are brown and sound hollow when tapped on bottom, about 1 hour. Transfer to racks. Brush with butter and cool. Serve warm or at room temperature. (Can be made 1 month ahead. Wrap loaves tightly and freeze. Thaw before serving.).

Betty Crocker Recipe Cards: Recipes Children Can Make/Card #15 It actually took a recipe that CHILDREN can make for me to achieve 100% success with the elusive yeast!!! I followed the recipe with a few exceptions (subbed cardamom for the cinnamon & bumped up the raisins). I held my breath while it was in the 'rising stage', popped it in the oven with a prayer...and out came the most beautiful, amazing, wonderful yeast bread!! This is NOT a quick bread taste and not overly sweet. However, it is cerainly sweet enough to satisfy oneself, especially with a hot cup of coffee. But wait! There's more! If you think it's good the 1st day, it is OUT OF THIS WORLD the second day!!! The yeast bread softens and the spices really are more pronounced; it was sublime heated at Medium in the microwave for a minute and then liberal amounts of fresh butter slathered on the cut edges. I plan to serve this for years to come: as an afternoon snack, for a delicious but not too sweet Brunch addition...or just because! But, I will intentionally make it the day before since the bread is one of those recipes that improves with age.

2 tablespoons butter
1/2 cup sugar
1 teaspoon cinnamon (I used cardamom instead)
1 apple (I used a medium-sized Rome)
1/2 cup raisins (recipe called for "a few". Ha! )
1 (1/4 ounce) package active dry yeast
3/4 cup water (Warm at 105-115 degrees)
1/4 cup sugar
1 teaspoon salt
1 cup flour
1 egg, beaten
1/4 cup shortening (I used very soft butter)
1 1/4 cups flour
1 teaspoon cinnamon (This was NOT in the original recipe. If you're using cinnamon above, then add this to the dough for )

Steps:

  • Heat oven to 375 degrees.
  • Plump 1/2 cup of raisins in either water or apple juice. Set aside.
  • Melt 2 tablespoons of butter in a 9 x 9" or 8 x 8" pan. (I used 8 x 8" with perfect results.).
  • Mix sugar and preferred spice with a fork in a small bowl. Sprinkle sugar mixture over melted butter in pan.
  • Take a medium to large apple and cut into very thin slices. The original photo showed the apple with it's peel left on; I preferred to remove it.
  • Arrange apple slices in rows, over the sugar mixture.
  • Drain raisins and sprinkle over the sliced apples.
  • In a large bowl, stir together the package of yeast and the 3/4 cup of warm water. Stir until completely dissolved.
  • To the yeast, add 1/4 cup sugar, 1 teaspoon salt and 1 cup of flour. Beat by hand 2 minutes or until batter drops from spoon in sheets.
  • Add and beat until smooth 1 egg, 1/4 cup of shortening (I used very soft butter), 1 1/4 cup of flour, and the extra teaspoon of spice, if you prefer.
  • Drop batter by small spoonfuls over the apples and raisins in pan, keeping dough close to each other. Cover pan and allow to rise in warm place until double; 50-60 minutes.
  • Bake in a 375 degree oven for 30-35 minutes or until top is lightly browned.
  • IMMEDIATELY remove the bread from pan by turning it upside down over serving plate. The sugar/butter mixture provides a glaze.
  • Allow to cool. This is nice the first day and spectacular the second!

  • In a small saucepan, combine the milk and sugar; whisk until the sugar is dissolved. Add the butter, and heat over medium low, stirring gently, until the butter is melted. Remove from the heat.
  • Allow the milk mixture to cool to the temperature of a warm bath (not hot!), and stir in the yeast. Allow the mixture to sit for 5 minutes to make sure the yeast is active and alive. You should see bubbles on the surface (don't be alarmed if it's not super foamy), and the mixture should grow in volume.
  • When you are certain the yeast is working, in a large bowl with a wooden spoon or in the bowl of a stand mixer fitted with the dough hook attachment, add the milk mixture. Add 2 cups of the flour, and the salt, cardamom, and 1 of the egg. Mix until combined.
  • Add 3 more cups of the flour and stir until it is completely incorporated. Add the remaining 1 cup of flour a little at a time until the dough forms a ball and is no longer super sticky when lightly touched with your finger. You might not use the entire cup of flour.
