They say that these Swedish chocolate balls, known as chokladbollar, are the first thing a Swedish child learns to make, and for good reason; they're easy to do, there's no baking required, and mixing the "dough" together makes for a fun activity. They sure beat snacking on a candy bar during the afternoon slump, as the fats and whole grain keep you satisfied much longer, while the coffee and cocoa provide the perfect pick-me-up.

1 ½ cups quick-cooking rolled oats
½ cup white sugar
3 ½ tablespoons cocoa powder
1 pinch kosher salt
1 pinch cayenne pepper
¼ cup unsalted butter, softened
¼ cup coconut oil, at room temperature
1 teaspoon vanilla extract
2 tablespoons strong brewed coffee
½ cup unsweetened grated coconut, or as needed

Steps:

  • Heat a pan over medium heat and add oats. Toss and shake until fragrant and lightly toasted, 5 to 7 minutes.
  • Combine sugar, cocoa powder, salt, cayenne, butter, coconut oil, vanilla extract, and coffee in a bowl. Add the oats and mix until thoroughly combined.
  • Portion dough into balls using a sorbet scoop. Roll balls in grated coconut and transfer to a parchment-lined baking pan. Let them firm up in the fridge for 15 to 20 minutes.

2 1/2 cups sugar
1 1/2 cups dark corn syrup
1/4 cup cocoa powder
1 cup heavy cream
1 cup half-and-half
6 tablespoons butter
1 1/2 teaspoons vanilla

Steps:

  • Combine sugar, corn syrup, cocoa, cream, half-half and 3 T butter in 3 qt heavy saucepan.
  • Cook over low heat, stirring until sugar dissolves.
  • Continue cooking, stirring no more than necessary to the hard ball stage (250*).
  • Watch carefully, for mixture may boil to the top of the pan.
  • Remove from heat; stir in remaining 3T butter and vanilla.
  • Pour into 9" buttered square pan to cool.
  • While still warm, mark in 1" squares; when cool, cut with a sharp knife and wrap individually in waxed paper.

This recipe is different than the others posted here as it uses molasses instead of corn syrup, giving it a richer and totally different flavor. I imagine you could add almonds to this and it would be super good!

2 3/4 cups sugar
1 1/4 cups molasses
2 tablespoons cocoa
3 tablespoons butter
2 1/4 cups cream

Steps:

  • Lightly oil an oblong pan.
  • Combine all ingredients in a large heavy saucepan. Cook over low heat until it reaches 250F or soft ball stage (when mixture forms soft balls when dropped into cold water).
  • Pour into the oiled pan and cool slightly, then cut into small squares with a sharp oiled knife. This is not a hard toffee, unlike English toffee.
  • Wrap individual pieces in wax paper.

1 cup brown sugar
1 (15 ounce) bottle barbecue sauce
rye cocktail bread or cracker (or both)

Steps:

  • Remove wrapping from salami and score the entire thing crosswise, into 1/4-inch slices but don't cut all the way through.
  • Place salami in a pan and bake uncovered, in a pre-heated 350° oven for one hour; drain fat.
  • Combine brown sugar and barbecue sauce; pour over drained salami and return to the oven; bake for another hour, basting with pan juices every 15 minutes.
  • To serve, place warm salami on a cutting board along with a serrated knife and let everyone cut through the slices and eat with the cocktail rye and/or crackers.

2 cups nestle toll house semisweet chocolate morsels, divided
3 large eggs
1/2 cup whipping cream
1 -2 teaspoon taster's choice 100% pure instant coffee
2/3 cup powdered sugar

Steps:

  • FOR JAVA BROWNIES: Combine flour, baking powder and salt in small bowl.
  • Combine water, coffee granules, sugar and butter in medium, heavy-duty saucepan. Cook over medium heat, stirring constantly, until mix comes to a boil. Remove from heat; stir in 1 cup morsels until smooth. Stir in eggs one at a time, mixing well after each addition. Stir in flour mixture. Pour into greased 9-inch square baking pan.
  • Bake in preheated 350F oven for 18-25 minutes, or until wooden pick inserted near center comes out slightly sticky. Cool in pan on wire rack,.
  • FOR JAVA FROSTING: Combine cream and coffee granules in small, heavy duty saucepan over low heat, stirring constantly until dissolved. Add remaining morsels; stir until smooth. Remove from heat. Stir in powdered sugar; stir vigorously until smooth. Chill until spreading consistency. Spread over cooled brownies. Sprinkle with cocoa.
