A tender, fragrant drop cookie (not rolled). I clipped this from a magazine many, many years ago when I went on a quest to find recipes from the countries of my various ancestors. I have no idea what magazine it was, or who submitted it or even if it's really Swedish!

1 cup granulated sugar
1 cup powdered sugar
1 cup margarine
1 cup oil
2 eggs
1 teaspoon vanilla extract
4 cups flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger
1/2 teaspoon clove

Steps:

  • Cream together sugars, margarine and oil.
  • Add eggs and vanilla.
  • Blend thoroughly.
  • Sift together flour, soda, cream of tartar, salt, and spices.
  • Mix flour and creamed mixtures well. Chill at least 1 hour, but overnight is better.
  • Pinch off bits and roll into balls the size of small walnuts.
  • Roll in sugar.
  • Place on lightly oiled cookie sheet.
  • Flatten with bottom of glass.
  • Bake at 375°F until lightly browned, 10 minutes or so.
  • Do not over bake.

MELTED SNOWMAN PEANUT BUTTER COOKIES

About 8 ounces vanilla candy melting wafers
12 round peanut butter cookies (or sugar cookies)
4 marshmallows, cut crosswise into thirds
24 mini chocolate chips
12 orange sprinkles
6 mini peanut butter cups, halved and trimmed to look like brimmed hats
Assorted other sprinkles for decorating, if desired

Steps:

  • Melt the candy melting wafers according to the package directions. Spoon some of the melted candy on top of a cookie and spread it so it covers most of the cookie but has an irregular border. Place a slice of marshmallow toward the top edge and spoon some more melted candy on top, smoothing it to fully cover the marshmallow and blend it into the candy on the cookie.
  • Decorate the face of the snowman with mini chocolate chips for eyes and an orange sprinkle as a carrot nose. Place a peanut butter cup half on top of the snowman's head like a hat. Use other sprinkles to add a mouth or buttons if desired. Repeat with the remaining candy, cookies and decorations (rewarming the candy melts if necessary). Let the cookies set, about 10 minutes.

1/2 cup shortening
1/2 cup butter
1 cup sifted powdered sugar
1/2 teaspoon salt
2 cups all-purpose flour
1 tablespoon water
1 tablespoon vanilla
1 1/4 cups almonds, ground
powdered sugar, to dredge cookies

Steps:

  • Cream shortening and butter at medium speed of an electric mixer until light and fluffy.
  • Add 1 cup powdered sugar and salt and mix well.
  • Stir in flour.
  • Add water, vanilla, and almonds, stirring well.
  • Shape dough into 1-inch balls (I use small cookie scoop).
  • Place on ungreased cookie sheets.
  • Press down lightly on dough with bottom of glass or measuring cup.
  • Bake at 325° for 12 minutes or until done.
  • (Cookies will still be light).
  • Dredge warm cookies in powdered sugar.

1 pouch (1 lb 1.5 oz) Betty Crocker™ sugar cookie mix
2 tablespoons Gold Medal™ all-purpose flour
1/3 cup butter or margarine, softened
1 egg
21 pretzel sticks, broken in half
1 container (12 oz) Betty Crocker™ Whipped fluffy white frosting
Assorted candies

Steps:

  • Heat oven to 375°F. In medium bowl, stir cookie mix, flour, butter and egg until soft dough forms.
  • Shape dough into 21 (1 1/4-inch) balls, 21 (1-inch) balls and 21 (3/4-inch) balls. For each snowman, place 3 balls in decreasing sizes with edges just touching on ungreased cookie sheet; flatten balls slightly. Place snowmen about 3 inches apart.
  • Bake 7 to 9 minutes or until edges are light golden brown. Remove from oven; immediately insert pretzel sticks into sides of middle balls for arms. Cool 5 minutes; remove from cookie sheet to cooling rack. Cool completely, about 15 minutes.
  • Frost cookies and decorate with candies.

If you're bored with typical sugar cookies, try this melt-in-your-mouth version, which is punched up with ground cardamom and then transformed into cheery, bright-colored Christmas shapes.

3 stick unsalted butter
3/4 c. granulated sugar
1/2 c. packed light-brown sugar
1 tbsp. vanilla extract
2 tsp. ground cardamom
1/2 tsp. salt
1 large egg
4 c. all-purpose flour
Decorating Icing (recipe below)
Decorating Icing
1 lb. confectioners' sugar
1/4 c. Just Whites (see Note)
c. water

Steps:

  • Beat butter, sugars, vanilla, cardamom and salt in a large bowl with mixer on medium speed until creamy. Beat in egg until fluffy, then beat in flour on low speed just until blended.
  • Divide dough in thirds. Shape each third into a 1-in.-thick disk; wrap separately. Refrigerate 1 hour or until firm.
  • Heat oven to 350 degrees F. You'll need a baking sheet(s).
  • On floured surface, roll out 1 disk at a time to 1/4-in. thickness. Using floured cutters, cut out snowmen and doves. For wreaths, cut out 3-in. rounds, then cut out center with 1-in. round. Cut out 8 (1 1/2-in.) holly leaves per wreath; arrange holly leaves on top of round, with stem ends toward the center hole. Score deep veins in leaves. Transfer shapes with a floured spatula 2 in. apart on ungreased baking sheet(s). Reroll and cut scraps only once.
  • Bake 11 to 13 minutes for snowmen and doves, and 16 to 18 minutes for wreaths, until cookies are golden at edges. Cool 1 to 2 minutes on sheet on a wire rack. Remove to rack to cool completely.
  • To make the icing: Beat confectioners' sugar and Just Whites in a large bowl with mixer on low speed until combined. Add water; beat until blended. Increase speed to high; beat 8 minutes or until icing is very thick and white. Makes 2 1/2 cups.
  • Thin icing for spreading by adding drops of water to tinted and white icing until just thin enough to spread. Leave some icing thick if making wreaths.
  • Spread black icing on hats and white icing on rest of cookie, leaving a slim edge of cookie showing all around and between hats and top of snowmen's heads. Let dry 3 hours. Dip paintbrush or a toothpick in black icing and paint on eyes and mouth. Dip a brush or toothpick in orange icing; paint on carrot nose. With dabs of icing, attach red candy sequin for hat flower and large blue for buttons.
  • Spread thinned white icing on cookies, leaving a slim edge of cookie showing all around. While wet, decorate wings and tail with almond slices. Let dry 3 hours. Dip paintbrush or a toothpick in yellow icing and paint on beaks. Dip a toothpick in white icing, apply to bird and add a small blue candy sequin eye.
  • Tint thick decorating icing pale green. Using a fine paintbrush, brush thick lines of icing on holly leaves, following the veins, pulling the icing up and out to resemble pine needles. Paint the exposed areas on the bottom round cookie with thinned green icing. While wet, attach pink dragées or candy balls to the spaces between leaves (see photo).
  • Let cookies dry at least 6 hours.

3 cups all-purpose flour, plus more for dusting
8 ounces unsalted butter
1/2 cup sugar
1 tablespoon vanilla extract
1 teaspoon almond extract
2 eggs
Frosting, optional

Steps:

  • Preheat the oven to 350 degrees F. Line a half-sheet pan with parchment paper.
  • Sift the flour into a medium bowl. In a stand mixer fitted with the paddle attachment, cream together the butter, sugar, vanilla extract and almond extract, 3 to 5 minutes. Add the eggs, one at a time, scraping down the sides of the bowl after each addition. Decrease the speed to low, add the flour and mix to incorporate. Scrape down the sides of the bowl and increase the speed to medium for 30 seconds. Chill the dough for 1 hour in the refrigerator.
  • Lightly dust a clean surface with flour. Using a rolling pin, roll out the dough between 1/4-inch and 1/2-inch thick. Cut the dough with a snowman cookie cutter and place on the prepared sheet pan (about 24 cookies). Refrigerate the dough for 15 minutes. Bake for 10 to 15 minutes. Cool completely, then serve the cookies as-is, or frost the cookies and then serve.

1 pouch each Betty Crocker™ Cookie Icing in white, red, blue, and green

Steps:

  • Follow baking directions on sugar cookie pouch, dividing dough evenly into 12 round cookies.
  • On cooled cookies, draw a "snow puddle" with Betty Crocker™ White Cookie Icing. TIP: Draw the outline of the puddle, then go back and fill in the shape.
  • While the icing is still wet, immediately place a marshmallow to one side of the cookie.
  • MAKE THE ARMS: Once the icing and marshmallow have set, pipe two "branches" onto each cookie using black gel. Add fingers with chocolate sprinkles.
