SWEDISH CHICKEN MEATBALLS
Swedish Chicken Meatballs are perfectly flavored baked chicken meatballs smothered in a savory creamy sour cream sauce and served over noodles. Perfect comfort food!

- Start with your chicken meatballs. Preheat your oven to 400 degrees and spray a baking pan with non-stick spray. Once done, add all ingredients to a large mixing bowl. Using your hands, combine well. Using a spoon or just eyeballing it, roll about 20 meatballs and place on your prepared baking sheet. Bake for 25 - 30 minutes.
- While your meatballs are baking, make your sauce. To a large saucepan, melt butter over medium high heat and once melted, whisk in flour. Continue to cook flour while whisking it for the next minute before pouring in beef stock. Whisk to remove any flour lumps. Add in seasonings, soy sauce, Dijon mustard, Parmesan cheese, sour cream and bring gravy sauce to a low boil before reducing heat to low to simmer.
- Once your sauce is simmering, set a large pot of salted water to boil. Cook your noodles according to the packaging instructions.
- When your chicken meatballs are cooked, move them from the baking pan right into the gravy sauce and let simmer for about five minutes. Serve your meatballs over you noodles and garnish with a bit of fresh parsley.

- Preheat oven to 400°F and line a baking sheet with a silicone mat
- In a large bowl combine meatball ingredients by hand
- Measure and roll approximately 40 (1 inch) meatballs and placed on your prepared baking sheet.
- Place baking sheet into preheated oven and cook for 30 minutes.
- In a large sauce pan over medium heat, melt butter and whisk in flour. Cook for about one minute until bubbly. Add chicken broth, pepper, Dijon mustard, sour cream, Parmesan cheese and stir to combine. Once a low boil is reached, reduce heat to low and continue to simmer until meatballs are done.
- Once meatballs are cooked, immediately move them to the sauce pan to simmer for 5 minutes.
- Garnish with parsley and serve with mashed potatoes and cranberry sauce.

- In a large skillet, heat butter over medium-high heat; saute mushrooms until tender, 4-5 minutes. Transfer to a 4-qt. slow cooker. Stir in broth, cream of chicken soup and soup mix. - Mix milk, bread crumbs, 2 tablespoons plus 1 teaspoon cream, egg, garlic, salt, black pepper, white pepper, and allspice together in a large bowl. Set aside to soak until bread crumbs have absorbed the milk, at least 10 minutes.
- Mix in beef, pork, onion, and parsley, using your hands to mix until well combined. Roll into about 24 small meatballs or 16 larger meatballs.
- Heat butter and oil in a pan over medium-high heat. Fry meatballs in small batches until cooked through and browned on all sides, 10 to 12 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C). Transfer to a warm plate and cover with foil.
- Add butter for gravy sauce to the pan juices. Melt over medium heat. Whisk in flour. Cook and whisk until flour dissolves and turns brown, about 5 minutes. Pour in vegetable broth, beef broth, cream, soy sauce, and Dijon. Bring to a simmer. Season with salt and pepper and mix to combine all of the flavors together. Continue to simmer until thickened, 5 to 7 minutes.
- Add meatballs to the gravy. Toss gently to coat and serve.

SWEDISH MEATBALL SANDWICH
For my final exam in one of my culinary classes, we had to create a sandwich that reflected a culture which we had some familiarity with. I'm of Swedish decent, and so decided to make an open faced Swedish meatball sandwich. This is the result, and I passed the exam with full points. I use the meatballs from my recipe #367918, but if you don't feel like making them from scratch, use a Swedish meatball that is easy for you. Don't use an Italian meatball, the flavor profile is entirely different. FYI- The exam I originally made this for required the use of chicken, so I subbed ground chicken thigh for the meats in the recipe I noted above. Feel free to do so if you'd like, it still tasted authentic as the seasonings were true to the original.

Variation of Crock Pot Swedish Meatballs, recipe #103501 by Mindi Bunch. I changed the recipe to suit what I had on hand and my picky family liked it - I'm jotting down the variations so I can duplicate it. Can serve over noodles, rice or potatoes. You can taste the ginger - if you're not a fan of ginger, cut back on the amount or eliminate it.
