MUSHROOM AND WALNUT STUFFED CORNISH HENS
This is a simple and easy recipe for roasted Cornish hens. This changes things up a bit from chicken!

Steps:
- Melt butter in a large skillet over medium-high heat. Add shallot and garlic; cook and stir for 30 seconds. Add mushrooms, 1/2 teaspoon salt, and white pepper. Reduce heat to medium; cook, stirring often, until moisture has evaporated and mushrooms start to brown, about 12 minutes.
- Stir walnuts and white wine into the skillet. Cook, scraping browned bits off the bottom of the skillet, until wine has evaporated, 3 to 5 minutes. Remove from heat and let cool, 10 to 15 minutes.
- Preheat oven to 400 degrees F (200 degrees C).
- Season Cornish hens inside and out with remaining 1 teaspoon salt, paprika, onion powder, garlic powder, and black pepper. Open cavities gently with your fingers; stuff with mushroom mixture. Pull skin back in place to cover stuffing. Place hens breast side-up in a roasting pan.
- Roast in the preheated oven, basting once or twice with juices from the pan, until an instant-read thermometer inserted into the thickest part of the thigh registers 180 degrees F (82 degrees C), about 45 minutes. Garnish with thyme sprigs.

- In a saucepan, cook and stir the rice, onion and almonds in 2 tablespoons butter over medium heat for 5 minutes or until rice is lightly browned. Stir in the water, bouillon, lemon juice and 1/4 teaspoon salt. Bring to a boil. Reduce heat; cover and simmer for 16-20 minutes or until rice is tender. Stir in mushrooms., Sprinkle outside and cavity of hens with pepper and remaining salt. Stuff hens with rice mixture. Place on a rack in a shallow roasting pan coated with cooking spray. Melt remaining butter; brush half over hens., Cover and bake at 400° for 25-35 minutes longer or until juices run clear and a thermometer reads 180° for hens and 165° for stuffing.

This is my fiance's favorite slow cooker meal of mine. I usually serve it with the veggies over wild rice. You can turn this recipe for 2 into 4 by splitting the hens lengthwise after cooking.

Steps:
- Coat the hens with about 1/4 of the mushroom soup.
- Mix the remaining mushroom soup with mushrooms, olives, zucchini, and garlic salt in a bowl. Stuff the mixture inside the hens. Arrange hens, breast sides up, in the slow cooker. Spoon any remaining soup mixture over the hens.
- Cook the hens in the slow cooker on High for 4 hours.

- Preheat oven to 325 degrees F (165 degrees C).
- In a large bowl, mix soy sauce, oyster sauce, garlic, and pepper. Place Cornish game hens in the mixture, and marinate 10 minutes.
- Transfer hens to a medium baking dish, and cover with the marinade mixture. Cover dish, and bake 30 minutes in the preheated oven.
- Remove cover from dish, and place 1/2 the butter on each hen. Increase oven temperature to 350 degrees F (175 degrees C). Basting frequently with the marinade mixture, continue baking 30 minutes, or until exterior of the hens is lightly browned and crisp, the interior is no longer pink, and juices run clear.

- Preheat the oven to 375°F (190°C).
- Rinse and pat dry the cornish hen with paper towels. Make sure the cavity is dry. Add the garlic inside the cavity. Close the cavity by using 3 toothpicks.
- In a small bowl, add the olive oil (butter), honey, sambal oelek and salt together. Stir to mix well. Brush the mixture on the skin evenly.
- Place it on a roasting pan and bake for 30 minutes or until the skin becomes crispy and nicely browned. You may cover it with a sheet of aluminum foil to avoid burning.
- Turn the hen over and bake the other side for another 30 minutes. You may brush the juice seeping out on the skin. Remove from the oven and serve immediately with lemon wedges.

CORNISH HENS WITH CHINESE MUSHROOMS

- Place mushrooms in small bowl, cover with warm water and allow to soak at least 30 minutes. After mushrooms have soaked, drain and dry, reserving 1 cup of liquid. Discard stems and slice caps.
- Melt 2 tablespoons butter in heavy skillet, add shallots and saute until soft but not browned. Add mushrooms and saute a few minutes longer. Add vinegar, stir briefly, then add reserved mushroom liquid. Cook over high heat until reduced by half, then set aside.
- Preheat oven to 450 degrees.
- Rub hens with three tablespoons of butter, dust inside and out with salt and pepper, place in one or two roasting pans and roast for 30 minutes. Remove hens from roasting pan and set aside to rest while finishing sauce.
- Pour excess fat from roasting pan. Add wine, stir to release any browned bits from pan and strain into skillet with mushrooms. Cook over high heat until reduced somewhat, season with salt and pepper and lower heat. Add remaining 4 tablespoons of butter bit by bit, swirling in with spoon or whisk. Do not allow sauce to boil.
- Using poultry shears, split hens in half along breast and backbone, arrange on warm serving platter garnished with watercress, pour sauce on them and serve.

- Preheat the oven to 450 °F.
- Rub 1 tablespoon of olive oil into the hens and season with salt and pepper. Place a sprig of rosemary and a lemon quarter inside the cavity of each hen.
- Place the hens in a roasting pan and arrange the garlic cloves around the hens. Roast for 25 minutes.
- Mix the wine, chicken broth, and the remaining 2 tablespoons of oil together in a large jug or mixing bowl. Pour it over the hens.
- Reduce the temperature to 350°F and continue to roast for 25 minutes more. Baste the hens frequently with pan juices until they are golden brown and the juices run clear.
- Remove hens from the roasting pan and drain the juices from the cavities back into the pan. Place the hens on a large serving plate and cover loosely with foil.
- Pour the pan juices and garlic cloves into a saucepan and boil the mixture for 5-6 minutes until the liquid reduces to the consistency of a sauce.
- Serve the hens halved on a serving plate with the garlic and sauce poured around hens. Garnish with sprigs of fresh rosemary.
