EASY BACON FRIED RICE



Easy Bacon Fried Rice image

Bacon Fried Rice is 1000x better than takeout and has crispy bacon, eggs, peas, carrots and rice that combine to make the best fried rice ever!

Number Of Ingredients 8

8 ounces of bacon (chopped)
1 small white onion (chopped)
1 cup frozen peas and carrots
3 eggs (lightly beaten)
3 cups cooked white rice
2 teaspoons sesame oil
2-3 tablespoons soy sauce (to taste)
green onions (chopped for garnish)

Steps:

  • Add your chopped bacon to a medium sized skillet or work. Cook over medium high heat until it is crisp. Remove with a slotted spoon and drain the grease leaving about 1 tablespoon.
  • Next, add your chopped onion and frozen peas and carrots and sauté for 1-2 minutes until they are tender.
  • Slide your veggies to one side and add the beaten egg to the other side. Scramble the egg until it is cooked through and combine it with the peas and carrots.
  • Add cooked rice and bacon back to the skillet and combine. Add in sesame oil and soy sauce to taste. Let it heat through and garnish with chopped green onions.

2 slices bacon, chopped
1 medium onion, chopped (1/2 cup)
1 cup uncooked long-grain regular rice
2 cups Progresso™ chicken broth (from 32 oz carton)
1 cup frozen sweet peas, thawed
3/4 cup grated Parmesan cheese
1/8 teaspoon pepper

Steps:

  • In 2-quart saucepan, cook bacon over medium heat 3 to 4 minutes, stirring occasionally, until crisp. Stir in onion. Cook about 1 minute, stirring occasionally, until onion is tender.
  • Stir in rice until well coated with bacon drippings. Stir in broth. Heat to boiling; reduce heat to low. Cover and simmer about 20 minutes or until rice is tender and broth is absorbed.
  • Gently stir in peas. Cover and cook 1 to 2 minutes or until peas are hot; remove from heat. Stir in cheese and pepper.

1 teaspoon toasted sesame oil
3 slices thick-cut bacon, thinly sliced
1/2 teaspoon sugar
1 tablespoon low-sodium soy sauce
6 large eggs
Kosher salt
1/2 pint grape tomatoes, halved
1 tablespoon minced peeled ginger
6 ounces snow peas, trimmed and halved
1 orange, yellow or red bell pepper, thinly sliced
1 bunch scallions, thinly sliced
4 cups cooked brown or white rice (thawed if frozen)

Steps:

  • Heat a large nonstick skillet over medium-high heat. Add the sesame oil and bacon; cook, stirring occasionally, until the bacon is almost crisp, 4 minutes. Add the sugar and 1 teaspoon soy sauce; stir-fry until the bacon is glazed, about 1 minute. Transfer to a bowl using a slotted spoon; reserve the drippings in a separate bowl. Wipe out the skillet.
  • Heat 2 teaspoons of the drippings in the skillet over medium heat. Whisk the eggs and 1/2 teaspoon salt in a medium bowl; add to the skillet and cook, undisturbed, until just set, 3 minutes. Transfer to a plate and break up the eggs into large pieces.
  • Heat the remaining drippings in the skillet over medium-high heat. Add the tomatoes and ginger; stir-fry until the tomatoes are softened, 2 to 3 minutes. Add the snow peas, bell pepper and scallions; stir-fry until crisp-tender, about 3 minutes. Add the rice and the remaining 2 teaspoons soy sauce; stir-fry until warmed through, about 2 minutes. Stir in the eggs and cook 1 minute. Top with the bacon.

1 pork tenderloin (1/2 lb.), cut into bite-size pieces
5 slices OSCAR MAYER Bacon, cut into 1-inch pieces
1 small onion, chopped
1/2 cup chopped red peppers
1/2 cup chopped green peppers
2 cloves garlic, minced
2 cups long-grain white rice, uncooked
1 can (15 oz.) pigeon peas, rinsed
1 cup dry white wine
1 Tbsp. chicken bouillon
2 bay leaves
1/2 tsp. ground cumin
2 Tbsp. annatto paste
2 cups hot water
1/2 cup chopped fresh cilantro

Steps:

  • Heat oven to 350°F.
  • Cook tenderloin and bacon in ovenproof Dutch oven or large deep skillet on medium-high heat 5 min. or until tenderloin is golden brown, stirring frequently. Add onions, peppers and garlic; stir. Cook 3 min. or until vegetables are crisp-tender, stirring frequently. Add next 6 ingredients; bring to boil.
  • Dissolve annatto paste in 1 cup hot water. Add to rice mixture; stir in remaining hot water and cilantro. Bring to boil; simmer on medium-low heat 5 min. Remove and discard bay leaves. Cover with lid.
  • Bake 25 to 30 min. or until rice is tender.

A recipe that I got from my grandmother. One of my husbands favorite. It has a very unique flavor with the bacon. Wonderful side dish with chicken or fish.

4 -6 slices bacon, diced.
1 cup long grain rice
7 ounces chicken broth
1/2 teaspoon salt
1/2 medium onion, diced
5 ounces frozen peas
1 cup water
pepper, to taste

Steps:

  • Brown diced bacon, and drain on a paper towel.
  • Drain all but 1/4 c.
  • drippings.
  • Cook onions in drippings till clear (about 5 mins.) Add uncooked rice, peas, broth, and pepper.
  • Cover with lid and bring to boil.
  • Turn burner to simmer for 15-20 minutes or until rice is tender.
  • Add bacon crumbles, stir in and serve immediately.

A light, easy dish for when you're ready to take a break from heavy meals. This recipe is supposed to serve 6 but it didn't go that far at MY table. No reason to stop at half the bell pepper - it could have used more. Also that "dash" of cayenne should be increased by quite a bit!

5 slices bacon, chopped or 1/2 cup chopped Canadian bacon
1 small red onion, chopped
1/2 red bell pepper, chopped
3 cloves garlic, minced
1 cup basmati rice (wash well)
2 cups low sodium chicken broth
2 (15 ounce) cans black-eyed peas, drained,rinsed
1/2 teaspoon salt
1/4 teaspoon dried thyme leaves
1/4 teaspoon fresh ground pepper
1 dash ground red pepper (cayenne)
1/2 cup chopped parsley

Steps:

  • Cook bacon in large, heavy skillet over medium-high heat until crispy.
  • Drain off all but 1 T of the drippings.
  • Add onion; cook, stirring, until lightly browned, 5 minutes.
  • Stir in red pepper and garlic; cook, stirring, 1 minute.
  • Add rice; cook, stirring, until lightly colored, about 3 minutes.
  • Stir in chicken broth, peas, salt, thymeand peppers; heat to a boil.
  • Cover; reduce heat.
  • Cook until rice is tender, about 10 minutes.
  • Stir in parsley.

Number Of Ingredients 6

400g can kidney beans , rinsed and drained
400ml can low-fat coconut milk
½ tsp dried thyme
½ tsp ground allspice
6 spring onions , sliced
200g long grain rice

Steps:

  • Put the beans, coconut milk, thyme, allspice, 4 of the spring onions and 100ml water in a pan, and bring to a simmer. Season with plenty of salt and black pepper.
  • Rinse the rice a few times in a sieve until the water runs clear. Tip into the pan and simmer for 10 mins over a medium heat, stirring occasionally, before lowering the heat. Put the lid on and cook for another 5 mins until the grains are tender and the liquid has been absorbed. Fluff up the rice with a fork before serving and scatter with the reserved spring onions.

Easy risotto with bacon & peas image

Not one for risotto purists - this simple recipe has just a few ingredients and the stock is added all in one go.

1 onion
2 tbsp olive oil
knob of butter
6 rashers streaky bacon, chopped
300g risotto rice
1l hot vegetable stock
100g frozen peas
freshly grated parmesan, to serve

Steps:

  • Finely chop 1 onion. Heat 2 tbsp olive oil and a knob of butter in a pan, add the onions and fry until lightly browned (about 7 minutes).
  • Add 6 chopped rashers streaky bacon and fry for a further 5 minutes, until it starts to crisp.
  • Add 300g risotto rice and 1l hot vegetable stock, and bring to the boil. Stir well, then reduce the heat and cook, covered, for 15-20 minutes until the rice is almost tender.
  • Stir in 100g frozen peas, add a little salt and pepper and cook for a further 3 minutes, until the peas are cooked.
  • Serve sprinkled with freshly grated parmesan and freshly ground black pepper.
