- Preheat oven to 350 degrees. Grease a square baking dish (8x8 or 9x9 is fine).
- For the casserole: In a large skillet, melt butter over a medium heat. Add onions, garlic and mushrooms. Sauté until softened, about 3-4 minutes. Add ½ teaspoon salt. Stir. Reduce heat to low and whisk in flour. Cook one minute. Slowly whisk in sherry. Cook 30 seconds.
- Slowly whisk in whole milk and half half making sure to get all lumps out. Bring to a boil and then reduce to a simmer. Simmer until thickened, about five minutes. Add in remaining salt and Worcestershire sauce. Remove from heat.

- Finely chop the onion and slice the mushrooms.
- Heat some oil in a large pan and sauté the chopped onion for about 2 minutes on high heat. Then add the mushrooms and the garlic and cook them for another 3 minutes.
- Stir in the soy or oat cream. If you can't find soy or oat cream, you could also use thick full-fat coconut milk.

The difference is, this recipe uses cheddar cheese soup, not cream of mushroom. - Place cooked green beans in a large bowl.
- In a deep sauté pan, cook bacon over medium heat until crispy. Remove to a paper-towel lined plate, reserving the grease in the pan.
- Over medium heat, sauté the onions in the bacon grease for 2 to 3 minutes, or until starting to become translucent. Add mushrooms and continue to sauté until cooked. Use a slotted spoon to remove mushrooms and onions from the pan and put them in the bowl with the green beans.
