1/2 cup dry sherry
3/4 cup whole milk, warm
3/4 cup half and half, warm
1 tsp worcestershire
2 14.5 oz cans green beans, no salt added, drained and shaken of all excess moisture
2 cups French fried onions
2 small onions, sliced thin
1 cup milk
1 cup all-purpose flour
2 tsp kosher salt
1/4 tsp black pepper

Steps:

  • Preheat oven to 350 degrees. Grease a square baking dish (8x8 or 9x9 is fine).
  • For the casserole: In a large skillet, melt butter over a medium heat. Add onions, garlic and mushrooms. Sauté until softened, about 3-4 minutes. Add ½ teaspoon salt. Stir. Reduce heat to low and whisk in flour. Cook one minute. Slowly whisk in sherry. Cook 30 seconds.
  • Slowly whisk in whole milk and half half making sure to get all lumps out. Bring to a boil and then reduce to a simmer. Simmer until thickened, about five minutes. Add in remaining salt and Worcestershire sauce. Remove from heat.
  • Stir in green beans, mix until combined. Stir in 1/2 cup of fried onions. Transfer to baking dish and top with remaining fried onions. Bake until onions are golden brown and filling is hot and bubbly.

1 onion
2 cloves of garlic
3/4 cup soy cream (unsweetened)
1 teaspoon soy sauce
1 teaspoon corn starch (plus two teaspoons of water)
salt, to taste

14 oz frozen green beans
1/4 cup vegan cheese shreds
3 tablespoons whole wheat bread crumbs
1/2 teaspoon paprika powder
1/2 teaspoon garlic powder
1/4 cup freshly chopped parsley

Steps:

  • Finely chop the onion and slice the mushrooms.
  • Heat some oil in a large pan and sauté the chopped onion for about 2 minutes on high heat. Then add the mushrooms and the garlic and cook them for another 3 minutes.
  • Stir in the soy or oat cream. If you can't find soy or oat cream, you could also use thick full-fat coconut milk.
  • Combine the corn starch with the water and add to the mushrooms together with the soy sauce. Season with salt and pepper.
  • Cook the frozen beans for about 5 minutes. Drain and put them in a casserole dish.
  • Pour the mushroom sauce over the green beans. Sprinkle the vegan cheese on top.

The difference is, this recipe uses cheddar cheese soup, not cream of mushroom. I first ate it in 1973 at the home of a (then) middle-aged couple who invited my husband and me to dinner shortly after we were married.

2 bags (16 oz.) french-cut frozen green beans, cooked according to package instructions and drained very well
5 to 6 slices center cut bacon, cut into ½-inch or smaller pieces
8 ounces white or button mushrooms, finely chopped
1 medium yellow onion, finely diced
1 tablespoon butter
1 large clove garlic, minced ((or 2 small cloves))
3 tablespoons all-purpose flour
1 ½ cups whole milk
1 teaspoon fresh thyme leaves, roughly chopped ((or ¼ teaspoon dried thyme))
¼ teaspoon freshly ground black pepper, more to taste
1 cup shredded sharp white cheddar cheese
3 cups french fried onions, or to taste

Steps:

  • Preheat oven to 350ºF. Spray a 9x13-inch pan with nonstick cooking spray.
  • Place cooked green beans in a large bowl.
  • In a deep sauté pan, cook bacon over medium heat until crispy. Remove to a paper-towel lined plate, reserving the grease in the pan.
  • Over medium heat, sauté the onions in the bacon grease for 2 to 3 minutes, or until starting to become translucent. Add mushrooms and continue to sauté until cooked. Use a slotted spoon to remove mushrooms and onions from the pan and put them in the bowl with the green beans.
