Swedish Creme image

This thick and creamy dessert is my interpretation of my mother's recipe for Swedish krem. It has just a hint of almond flavor and looks spectacular with bright red berries on top. Serve it in glasses to match the occasion. -Linda Nilsen, Anoka, Minnesota

2 cups heavy whipping cream
1 cup plus 2 teaspoons sugar, divided
1 envelope unflavored gelatin
1 teaspoon vanilla extract
1 teaspoon almond extract
2 cups sour cream
1 cup fresh or frozen raspberries

Steps:

  • In a large saucepan, combine cream and 1 cup sugar; cook and stir over low heat until a thermometer reads 160° (do not allow to boil). Stir in gelatin until completely dissolved., Remove from heat; stir in extracts. Cool 10 minutes. Whisk in sour cream. Pour into 8 dessert dishes. Refrigerate at least 1 hour., Just before serving, lightly crush raspberries; gently stir in remaining sugar. Spoon over tops.

These are crisp and puffy sandwich cookies. The filling can be colored to match any occasion.

1 cup butter, softened
⅓ cup heavy whipping cream
2 cups sifted all-purpose flour
⅓ cup granulated sugar for decoration
¼ cup butter, softened
¾ cup sifted confectioners' sugar
1 egg yolk
1 teaspoon vanilla extract
2 drops red food coloring

Steps:

  • Combine the 1 cup butter, cream and sifted flour. Mix well and chill for at least 1 hour.
  • Preheat oven to 375 degrees F (190 degrees C).
  • On a floured board, roll out 1/3 of the dough to 1/8 inch thick. Cut with 1 1/2 inch round cookie cutter. Transfer rounds to waxed paper heavily covered with white sugar. Turn rounds so that both sides are coated with sugar. Place rounds on ungreased baking sheets and prick each round with a fork about 4 times. Repeat with remaining dough.
  • Bake at 375 degrees F (190 degrees C) for 7 to 9 minutes. Let cookies cool then put 2 cookies together with the filling.
  • To Make Filling: Blend the remaining 1/4 cup of butter, the confectioners' sugar, egg yolk and vanilla together. Tint with food coloring, if desired. You may double the filling for a nicer looking cookie.

For those who make their own preserves or jellies, this is a real opportunity to show them off. This recipe has been handed down four generations, and is a real favorite.

½ cup butter
⅓ cup white sugar
⅓ cup dark corn syrup
1 egg, separated
1 ¼ cups all-purpose flour
1 cup finely chopped walnuts
1 cup any flavor fruit jam

Steps:

  • In a medium bowl, cream together the butter and sugar. Stir in the corn syrup and egg yolk. Gradually stir in the flour until fully incorporated. Cover and chill for at least 1/2 hour.
  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease baking sheets.
  • Roll dough into 1 inch balls, dip them in the egg white, then roll them in the nuts. Place cookies on the prepared cookie sheet 2 inches apart. Using your finger, make an indention in the center of each cookie.
  • Bake for 20 to 25 minutes in the preheated oven, or until golden. Fill each indention with a small amount of jam while cookies are still warm. Allow cookies to cool on the baking sheets.

This is a dish my sister makes for special occasions. It is not too sweet and it's very rich and creamy. If you like a sweeter dish, double the sugar. This makes for a lovely presentation that looks like you went to a lot of effort but didn't.

1 cup heavy cream
3 tablespoons water
½ cup sugar
1 (.25 ounce) envelope unflavored gelatin
1 cup sour cream
½ teaspoon vanilla extract
½ teaspoon almond extract
1 cup frozen lingonberries, thawed

Steps:

  • Combine the cream, water, sugar, and gelatin in a saucepan over low heat. Stir constantly until the gelatin has dissolved. Remove from the heat and let cool slightly until thickened, about 10 minutes; it should be the consistency of beaten eggs. Fold in the sour cream, vanilla extract, and almond extract. Pour into a mold, cover, and refrigerate until set, at least 4 hours, preferably overnight.
  • Loosen from mold by dipping into hot water. Invert onto a serving plate to unmold. Pour lingonberries over top.

1/2 cup butter, softened
1 cup all-purpose flour
3 tablespoons heavy whipping cream
Sugar
FILLING:
1/4 cup butter, softened
3/4 cup confectioners' sugar
1/2 teaspoon vanilla extract
1-1/2 to 2 teaspoons heavy whipping cream
1 drop each red and green food coloring

Steps:

  • In a small bowl, beat butter, flour and cream. Cover and refrigerate 1 hour or until easy to handle. , Preheat oven to 375°. On a lightly floured surface, roll out dough to 1/8-in. thickness. Cut with a floured 1-1/4-in. round cookie cutter. Place 1 in. apart on ungreased baking sheets. Sprinkle with sugar. Prick each cookie 3-4 times with a fork. , Bake 7-9 minutes or until set. Remove to wire racks to cool., In a small bowl, combine butter, confectioners' sugar, vanilla and enough cream to achieve desired consistency. Remove half to another bowl; tint one portion of filling with red food coloring and the other half with green. Carefully spread filling on bottom of half of the cookies; top with remaining cookies.

1 cup margarine
2 cups flour
1/2 cup half-and-half
1/2 cup butter
2 -3 cups powdered sugar
1 egg yolk
1 teaspoon vanilla
food coloring, of choice

Steps:

  • Mix margarine and flour until crumbly.
  • Gradually add half and half.
  • Roll out dough and cut with a 1 1/2 inch cutter. (Simple shapes like circles and stars work easiest).
  • Dip in granulated sugar.
  • Bake at 375 degrees for 7-9 minutes.
  • Meanwhile, melt the butter and mix with the yolk, vanilla, and gradually add in the powdered sugar. You can divide this into separate bowls if you want more than one color of frosting.
  • Spread frosting between cooled cookies.

3 well beaten eggs
1 teaspoon vanilla
1 cup sour cream
5 cups flour
3 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1 tablespoon lemon juice
1 teaspoon lemon extract

Steps:

  • Cream shortening and 2 cups sugar.
  • Add eggs, vanilla, sour cream, lemon juice and lemon extract.
  • Mix well.
  • In separate bowl, mix flour with baking powder, salt and baking soda.
  • Add to creamed mixture.
  • Drop from spoon onto greased cookie sheet.
  • Grease bottom of small glass, dip into sugar and gently press cookie flat.
  • Bake at 350 degrees for 15 minutes.

1 cup granulated sugar
1 cup powdered sugar
1 cup margarine
1 cup oil
2 eggs
1 teaspoon vanilla extract
4 cups flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger
1/2 teaspoon clove

Steps:

  • Cream together sugars, margarine and oil.
  • Add eggs and vanilla.
  • Blend thoroughly.
  • Sift together flour, soda, cream of tartar, salt, and spices.
  • Mix flour and creamed mixtures well. Chill at least 1 hour, but overnight is better.
  • Pinch off bits and roll into balls the size of small walnuts.
  • Roll in sugar.
  • Place on lightly oiled cookie sheet.
  • Flatten with bottom of glass.
  • Bake at 375°F until lightly browned, 10 minutes or so.
  • Do not over bake.

2 cups flour
1 teaspoon baking soda
1 cup butter
1 cup sugar
1 teaspoon vanilla sugar
2 tablespoons golden syrup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Sift together the flour and baking soda.
  • In a separate bowl, cream together the butter, sugar, vanilla sugar, and golden syrup; mix well. Stir in the flour and mix until just incorporated. Form dough into two, 1 inch thick elongated rolls the length of your cookie pan. Place them on the cookie pan with enough space in between for them to spread.
  • Bake in preheated oven until they are light golden brown and have flattened; about 20 to 22 minutes if using margarine, or 13 to 15 minutes if using butter. Remove from oven and let cool slightly for about 3 minutes. Cut diagonally into 1 to 2 inch strips while still warm. Remove individual cookies to cool on a wire rack.

1 envelope active dry yeast
1/4 cup water (115 degrees)
1 1/4 cups evaporated milk
2 eggs, beaten
3 1/3 cups flour
1/4 cup sugar
1 teaspoon salt

Steps:

  • Stir yeast into the warm water to dissolve.
  • In a small bowl, mix well the dissolved yeast, milk, and eggs.
  • Set aside.
  • In a large bowl stir together flour, sugar, and salt.
  • Cut in 1/2 cup butter with pastry blender until it resembles coarse meal.
  • Stir yeast mixture into flour mixture just enough to moisten.
  • Spread dough with light film of butter to prevent from drying.
  • Cover with plastic and refrigerate up to four days.
  • Shape and bake as desired at 350 degrees for 15 to 20 minutes.

  • mix all ingredients chill for 1-2 hours divide in 1/3's and roll out in 1/8 inch thick on a floured board, cut with a 1 1/2 to 1 3/4 cookie cutter or small glass (I use a shots glass).
