This is a delicious Swedish coffee bread recipe converted for use with a bread maker! My family is Swedish, and ever year we make this recipe just in time for Christmas. We always enjoy it especially on Christmas morning. We used to make a long, drawn out version that was my great-grandmother's recipe, but thanks to modern conveniences like the bread maker it takes much less time and work! I hope your family enjoys this as much as mine has.

1 cup milk
½ teaspoon salt
1 egg yolk
2 tablespoons softened butter
3 cups all-purpose flour
⅓ cup sugar
1 (.25 ounce) envelope active dry yeast
3 teaspoons ground cardamom
2 egg whites, slightly beaten
pearl sugar, or other decorative sugar

Steps:

  • Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start.
  • When the dough cycle has finished, divide into three equal portions. Roll each piece into a rope 12 to 14 inches long. Lay the three ropes side by side, then braid together. Tuck the ends underneath, and place onto a greased baking sheet, cover loosely with a towel, and allow to rise until doubled in bulk.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Brush the braid with beaten egg white and sprinkle with pearl sugar. Bake in preheated oven until golden brown, 20 to 25 minutes.

FINNISH COFFEE BREAD (TRADITIONAL)

Originally this recipe was printed in the Finnish Cookbook but I have been making it every year for Christmas breakfast. Although it is time consuming with three rises this recipe makes three coffee braids, so there is always one for the freezer and to share with friends. Prep time includes approximate rising time.

Yield 3 coffee braids

Number Of Ingredients 10

1 (1/4 ounce) package active dry yeast (original recipe specifies one package but I use 2)
1/2 cup lukewarm water
2 cups milk, scalded and cooled to lukewarm
1 cup sugar
1 teaspoon salt
8 -12 cardamom pods, seeded and crushed, depending on how strong a cardamom flavor you like (I use 10-12)
5 eggs, beaten, divided (1 egg is used for glaze)
8 -10 cups flour
1/2 cup butter or 1/2 cup margarine, melted
1/4 cup sugar, for glazing braids (or less)

Steps:

  • Dissolve yeast in warm water in a large bowl.
  • Stir in milk, sugar, salt, cardamom, 4 eggs, and 2 cups of flour.
  • Stir until dough is smooth.
  • Add 3 cups of flour and stir well.
  • Stir in melted butter or margarine.
  • Stir in 2-3 cups more flour or until you have a stiff dough.
  • Turn dough out onto a floured bread board and cover with inverted bowl.
  • Let rest for 15 minutes.
  • Knead dough until smooth and satiny (8-10 minutes).
  • Place dough in large lightly greased bowl, turning to grease top.
  • Cover with plastic wrap and/or towel.
  • Let dough rise in a warm place until doubled (1-2 hours).
  • Punch dough down.
  • Let dough rise again until almost double (30 minutes- 1 hour).
  • Turn out onto floured board.
  • Divide dough into thirds, working with only one third at a time.
  • Divide (one- third of dough) into three parts.
  • With your hands roll each part into one 18"strand.
  • Braid the three stands together to form one braid, tucking ends under.
  • Place on lightly greased cookie sheet.
  • Let rise 20-30 minutes until puffy.
  • Repeat with other two parts (each one-third of original dough).
  • You will have three braids when finished.
  • Brush braids with beaten egg and sprinkle with sugar.
  • Bake in 400°F oven for 20-30 minutes or until braids are light brown.

Number Of Ingredients 17

2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
2 cups warm milk (110° to 115°)
1/2 cup butter, melted
1-1/4 cups sugar
4 eggs, lightly beaten
1-1/4 teaspoons ground cardamom
1 teaspoon salt
10 to 11 cups all-purpose flour
TOPPING:
2 tablespoons all-purpose flour
2 tablespoons sugar
2 tablespoons cold butter
GLAZE:
1/4 cup water
2 tablespoons sugar
1 egg yolk

Steps:

  • In a large bowl, dissolve yeast in warm water. Stir in milk, butter, sugar, eggs, cardamom and salt; beat until smooth. Gradually add 8 cups of flour; beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a lightly floured surface; divide into nine equal portions. Shape each portion into a 14-in. rope. For each loaf, braid three ropes together on a greased baking sheet; pinch ends to seal. Cover and let rise for 30 minutes. , In a small bowl, combine flour and sugar; cut in butter until mixture is crumbly. Sprinkle over braids. Bake at 325° for 25 minutes or until golden brown. Combine glaze ingredients until smooth; brush some over loaves. Bake for 5 minutes. Brush with remaining glaze; bake 5-10 minutes more. Remove from pans to cool on wire racks.

This is an old Swedish recipe my husband's great grandma had. It is absolutely wonderful and they go very fast.

Yield 2 coffee braids

Number Of Ingredients 15

1 (1/4 ounce) package dry yeast
1/4 cup water
1/2 teaspoon sugar
1 cup scalded milk
1/2 cup sugar
1 teaspoon salt
1/3 cup softened Crisco
1 egg, at room temperature and beaten
4 -5 cups white flour or 4 -5 cups bread flour
chopped walnuts
1 egg, beaten (for brushing over each roll before baking)
melted butter
sugar
cinnamon
walnuts

Steps:

  • Soften yeast with 1/4 cup warm water and 1/2 tsp sugar and set aside.
  • In mixing bowl combine scalded milk, sugar, salt and Crisco, cool to lukewarm, and add yeast and 1 of the eggs.
  • Gradually add flour to form a soft dough.
  • Knead in remaining flour until smooth and satiny, about 5-8 minutes.
  • Cover and let rise until double.
  • Divide dough in two and on a floured surface with a rolling pin roll out each dough to about 12x9 size.
  • Brush with melted butter, and sprinkle with cinnamon, sugar and chopped walnuts.
  • Starting with 12-inch side, roll up jelly roll style seal seams and ends and place each roll seam side down on cookie sheet (greased).
  • Take scissors (or knife) and snip part way through each bread roll one inch apart in a tractor tread style.
  • Cover and let rise again.
  • Brush both bread rolls with another beaten egg and sprinkle nuts over both.
  • Bake at 350°F for about 25 minutes.
  • Allow to cool slightly and if desired ice with favorite icing recipe.

GRANDMA NETT'S SWEDISH COFFEE BREAD

This is from a hand written recipe card from Grandma Nett. Grandma Erickson (her mother-in-law) would make it especially at Christmas time. It was a favorite of the family. They also would freeze it and pull it out for other special occasions as well. The "way to eat it" is to dunk buttered toasted slices in coffee.

3 (1/4 ounce) packages dry yeast
1/2 cup water, lukewarm
2 cups milk
1 cup butter
1 cup sugar
1 teaspoon salt
1 teaspoon ground cardamom
4 eggs
8 cups flour

Steps:

  • Mix yeast and lukewarm water in a large bowl to proof and set aside.
  • Scald milk in a large saucepan. Add butter, sugar, salt, and cardamom to milk and cool to lukewarm. Once milk is lukewarm, add to yeast mixture.
  • Add eggs and mix well.
  • Add half the flour, mix, add remainder, mix and knead on floured board until smooth and satiny.
  • Place in lightly buttered bowl, turning over once to coat with shortening. Cover with thin towel. Let rise in warm place until double.
  • Punch down and form braids on greased baking sheet. (Divide in 2, then each half in 3, then each of these in 3 . Braid 3 portions together. Total 6 short loaves.).
  • Let rise and bake until golden and springs back when thumped.
  • No temp given, but we assume 350 and about 25 minutes to bake.

Editing per my Grandmother to get the story right: This cake recipe was passed down to my great Grandmother Helen from my Swedish great great Grandmother Maria. It is over 100 years old...possibly 150 or more! Some of my Swedish relatives started the famous Svenhards bakery here in California. They no longer own it but their original packages have my great great Aunt Tilda's (Maria's sister) photo on them! *My Grandmother also says to please beat the egg whites...they make the cake lighter and fluffier.

1/4 lb butter, softened (1 stick)
1 1/2 cups sugar
2 egg yolks
2 1/2 cups flour
3 teaspoons baking powder
1 dash salt

1 teaspoon vanilla
1 lemon, juice and zest of (My Grandmother says to only squeeze the juice out of half a lemon and only use a few pinches of zest)
2 egg whites, stiffly beaten
1 cup flour
3/4 cup light brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 lb butter, softened (1 stick)

Steps:

  • Cake:.
  • Preheat oven to 350 degrees Fahrenheit.
  • Cream together butter and sugar, add egg yolks gradually.
  • Sift the flour, baking powder and salt into the batter. Stir.
  • Add milk, vanilla, lemon juice and lemon rind. Stir.
  • Beat egg whites until stiff. Fold into batter.
  • Pour into 13x9 baking pan.
  • Top with crumb topping and bake for 40 minutes or until tester comes out clean.

  • Cut in the butter with a pastry blender or the back of a fork until it resembles crumbs.
  • Scatter crumbs over unbaked cake.
