Steps:
- Heat oven to 160C/fan 140C/gas 3 and lightly butter a 20 x 23 cm shallow baking tin. Sift the flours together, then stir in the sugar, almonds and a pinch of salt. Rub in the butter and vanilla seeds to make fine crumbs, then tip into the tin and press down with the back of a spoon. Put in the freezer for 5 mins, then bake for 35-40 mins. Cool.
- For the caramel, put the sugar and 100ml water in a heavy-based pan, heat gently until the sugar dissolves, then turn up the heat until it turns dark amber. Stir in the cream in four additions until smooth and shiny - take care as it will bubble up. Stir in the butter and ½ tsp salt. Pour over the shortbread and cool.
- For the topping, melt the chocolate and butter over a pan of simmering water, then pour over the caramel and smooth out with the back of a spoon. Chill until firm, at least 30 mins. Cut into quarters, then 16 pieces. Will keep in the fridge for up to 3 days.

CARAMEL BARS
The best caramel bars ever!! I got this recipe from my husband's Grandma Emma years ago and I had forgotten I even had it. Myself and other family members have been trying to come up with a recipe that would come close to Grandma's and as much as we tried, could never quite match up to her recipe. As I was looking through my recipe card box recently I discovered the recipe, hand written by Grandma Emma. My daughters and I had to make them when they were home visiting this summer and they are the best!!

Steps:
- Pre heat oven to 350 degrees.
- Mix the 1st 6 ingredients together in mixer until crumbly -- Grandma says mix like pie crust.
- Pat all but approximately 1 1/2 cups of batter into a 9 X 13 cake pan.
- Bake for 10 minutes.
- While this is baking, melt the caramels with the 3/4 cup whipping cream. A double boiler is recommended, but you could use the microwave if you stop and stir often to make sure the caramels do not burn.
- Spread caramel mix over the 1st layer when it has baked.
- Use the remaining 1 1/2 cups of batter and pat down in small sections over the caramel mix.
- Return to oven and bake for about 15 minutes or longer -- til they are done.
- Remove from oven and cool.
- Enjoy!
- *Pointer-Can use Caramel bites that are now available in the baking aisle at the grocery store rather than having to unwrap all the caramels. Also, Grandma says that 1/2 and 1/2 could be used rather than cream if you would like.

- Preheat the oven to 350°. Line a 9-by-13-inch baking pan with parchment paper, leaving a 2-inch overhang on the short sides. In a large bowl, using a handheld mixer at low speed, cream the butter. Beat in the confectioners' sugar. Add the whole eggs and beat until incorporated, then beat in the flour and salt. Press the pastry into the prepared pan in an even layer, 1/4 inch thick. Freeze until firm, 10 minutes.
- Line the pastry with parchment paper and fill with pie weights. Bake for 35 minutes, until just set. Carefully remove the pie weights and parchment. Brush the shell with the egg white and bake for 20 minutes longer, until golden and cooked through. Let cool.
- In a large, heavy saucepan, stir the sugar into 1/4 cup of water. Simmer over moderate heat, without stirring, until a deep amber caramel forms, 7 minutes.
