1 pound bulk pork sausage
1 medium onion, chopped
2 medium carrots, grated
1 medium green pepper, chopped
3 cups diced cooked potatoes
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large cast-iron or other heavy skillet, cook the sausage over medium heat until no longer pink; drain. Add the onion, carrots and green pepper; cook until tender. Stir in the potatoes, salt and pepper. Reduce heat; cook and stir until lightly browned and heated through, about 20 minutes.

1 Lb Country Style Ground Pork Sausage
4 Large Yukon Gold Potatoes - cut to cubes equal in size
2-3 Tablespoons Oil
Salt/Pepper - to taste
Favorite Seasoning Blend - to taste

Steps:

  • Brown and crumble sausage in large bottom pot or pan. I use a potato masher to achieve small crumbles. Cook to desired crispness. Remove sausage and set aside. Leave oil in pan.
  • Add potatoes to pan and fry over medium/high heat. Add additional oil as needed. Toss and fry until potatoes are browned and tender.
  • Add sausage back to pan. Season with salt, pepper and seasoning blend. Toss and serve.

2 tablespoon olive oil
3 large potatoes (peeled and cubed)
1/2 teaspoon salt (or to taste)
1/4 teaspoon pepper (or to taste)
1 small onion (chopped)
3/4 pound Italian sausage (mild, casings removed (3 links))
1/2 red bell pepper (chopped)
1/2 green bell pepper (chopped)
3 cloves garlic (minced)
1/4 teaspoon red pepper flakes

Steps:

  • Add the olive oil to a large skillet and heat over medium heat. Add the cubed potatoes, season with salt and pepper and cook for 7 to 10 minutes, until they're about half way cooked through, stirring occasionally.
  • Add the onion and cook for another 3 minutes, stirring occasionally.
  • Add the sausage, bell peppers, garlic and red pepper flakes to the skillet and stir. Reduce the heat, and continue cooking until potatoes are cooked through, another 10 minutes. You can also cover the skillet, this will cook the potatoes a bit faster.
  • Taste for seasoning and adjust with salt and pepper if needed. Serve with fried eggs.

1 russet potato, scrubbed
1 sweet potato, scrubbed
3 tablespoons salted butter
1 cup chopped red bell peppers
1 cup chopped yellow squash
1 cup chopped zucchini
1/2 red onion, chopped
Salt and freshly ground black pepper
4 large eggs

Steps:

  • Pierce both potatoes a few times, put in the microwave and cook on high until cooked through, 5 to 10 minutes. Carefully remove the skin from the sweet potato. Dice both potatoes and set aside.
  • In a medium skillet, melt 2 tablespoons of the butter over medium heat. Add the bell peppers, squash, zucchini and onions and cook for a few minutes. Add the diced potatoes to the veggies and cook until golden brown. Season with salt and pepper.
  • In a separate pan, melt the remaining tablespoon of butter over medium heat and crack in the eggs. Cook until the whites have set, 3 to 4 minutes.
  • Serve up the hash with a fried egg on top of each portion.

Steps:

  • Peel the potatoes (if necessary) and chop into cubes. Chop the bacon and sausage.

  • Add chopped sausage and fry until it's browned slightly, move to the side of the pan.

4 tablespoons canola or vegetable oil, divided
3/4 (1-pound) package Jimmy Dean Premium Pork Sausage
4 cups frozen hash brown potatoes, thawed
½ cup diced white onion
1 cup diced green bell pepper
2 teaspoons salt
1 teaspoon ground black pepper
4 fried eggs
1 avocado, sliced

Steps:

  • In a large skillet, heat 1 tablespoon of oil over medium-high heat for about 30 seconds. Add Jimmy Dean sausage and cook for 8 to 10 minutes until browned, stirring frequently to break up the sausage into small pieces, then drain. Remove the sausage and set aside.
  • In the same skillet, heat the remaining oil for 30 seconds. Carefully add the potatoes and fry until they begin to turn golden brown, 10 to 15 minutes. Stir occasionally so that the potatoes do not stick or burn.

6 plump sausages
6 cooked potatoes , sliced
350g cooked, sliced leeks (or broccoli or cabbage)
1 tbsp creamed horseradish sauce, more if you want to heat things up
100g mature chedder or gruyère , grated

Steps:

  • Heat the oil in a large heavy-based frying pan. Add the sausages and fry for 8-10 minutes until well browned. Remove the sausages, then slice them on the diagonal and set aside.
  • Turn the heat to high, then add the potatoes and leeks and give them a good stir. Continue to cook on a fairly high heat until the potatoes begin to brown and turn crisp. Toss the sausage slices back in along with the creamed horseradish and heat for a further 2-3 minutes. Take the pan off the heat, sprinkle in the cheese, season well and gently stir to combine.
