When you bite into these delicious cupcakes, you will get a surprise. A small chocolate Easter egg in baked in the middle. Frost and decorate with your favorite icing. Fun to make with the kids.

2/3 cup soft butter
1 cup packed light brown sugar
3/4 cup sugar
2 eggs
1 teaspoon vanilla extract
2 3/4 cups flour
2 1/2 teaspoons baking powder
1 teaspoon salt
1 1/4 cups milk
24 small chocolate eggs, unwrapped

Steps:

  • Heat oven to 350° and insert 24 paper baking cups into muffin tins.
  • Mix together, butter, sugar, eggs and vanilla in large mixing bowl until blended.
  • Beat on high speed for 5 minutes.
  • On low speed, beat in flour, baking powder and salt alternately with milk until well blended.
  • Fill muffin liners 1/3 full and place a chocolate egg in the center of each.
  • Top with remaining batter to 2/3 full.
  • Bake for 18 to 20 minutes or until done.
  • Cool and frost as desired.

1 (18 ounce) package yellow cake mix
3 eggs
1/3 cup oil, for the cake mix
24 paper baking cups
24 vanilla wafers
24 small solid chocolate eggs, unwrapped
2 (16 ounce) cans vanilla frosting (or your own)
food coloring
sugar crystals or candy sprinkles

Steps:

  • Preheat oven according to cake mix package.
  • Line cupcake pans with cupcake liners.
  • Place 1 vanilla wafer in bottom of each.
  • Prepare cake mix according to box.
  • Fill cups halfway with batter.
  • Place chocolate egg in center of each cup.
  • Top with remaining batter.
  • Bake 18 to 22 minutes or until golden.
  • Cool, completely.
  • Tint frosting with food coloring as desired.
  • Frost cupcakes and decorate with sugar or sprinkles.

2 eggs
2 teaspoons vanilla extract
3-1/2 cups all-purpose flour
5 teaspoons baking powder

3/4 cup strawberry or grape jelly
Frosting of your choice
Colored sprinkles, optional

Steps:

  • In a large bowl, cream shortening and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder and salt; add to creamed mixture alternately with milk, beating well after each addition. , Fill 36 paper-lined muffin cups half full. Drop jelly by teaspoonfuls into the center of each. , Bake at 375° for 15-20 minutes or until a toothpick inserted in cupcake comes out clean. Cool for 10 minutes; remove from pans to wire racks to cool completely. Frost cupcakes; decorate with sprinkles if desired.

1 1/3 cups water
3 large eggs
1/3 cup vegetable oil
1 (18 ounce) package refrigerated chocolate chip cookie dough
1 (16 ounce) container prepared chocolate frosting
miniature semisweet chocolate chips

Steps:

  • PREHEAT oven to 350º F. Paper-line 24 muffin cups.
  • BEAT cake mix, water, eggs and oil in large mixer bowl on low speed for 30 seconds. Beat on medium speed for 2 minutes or until smooth. Spoon about 1/4 cup batter into each cup, filling about 2/3 full.
  • CUT cookie dough into 24 pieces; roll each into a ball. Place one ball of dough in each muffin cup, pressing it to the bottom.
  • BAKE for 19 to 22 minutes or until top springs back when gently touched. Let stand for 15 minute Remove to wire rack to cool completely. Spread with frosting and sprinkle with morsels.

2 large eggs
1-1/4 cups sugar
1 cup buttermilk
2/3 cup canola oil
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1/2 cup baking cocoa
1-1/4 teaspoons baking soda
1 teaspoon salt
FROSTING:
2/3 cup butter-flavored shortening
2/3 cup butter, softened
1 cup sugar
1 can (5 ounces) evaporated milk
1 tablespoon water
1/2 teaspoon vanilla extract
2 cups confectioners' sugar

Steps:

  • In a large bowl, beat the eggs, sugar, buttermilk, oil and vanilla until blended. Combine the flour, cocoa, baking soda and salt; gradually add to egg mixture until blended., Fill paper-lined muffin cups two-thirds full. Bake at 350° for 20-22 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely., For frosting, in a large bowl, cream the shortening, butter and sugar until light and fluffy. Stir in the milk, water and vanilla. Gradually beat in confectioners' sugar until smooth., Cut a small hole in the corner of a pastry or resealable plastic bag; insert a small star tip. Fill bag with frosting. Push tip 1 in. into center of cupcake and fill with frosting just until top of cake begins to crack. Pipe frosting over the tops.

1 1/4 c water
1/3 c oil
3 eggs
THE MIDDLE
1 pkg cream cheese softened
3 Tbsp marshmallow cream
3/4 pkg chocolate chips, mini
1/2 c any flavor berries

Steps:

  • 1. Preheat oven to 350. Mix you cupcake batter as directed on your cake mix. Fill cupcake slots 1/3 full add surprise filling then cover the middle with more batter. Bake 19-23 Minutes take out and let cool.
  • 2. Mixing the middle is east breezy, in a small mixing bowl add your softened cream cheese, your 3 dollops of marshmallow cream and mix them well, then add your berries. They will fall apart and break open but that's ok they are in the middle so they won't be seen!
  • 3. Don't forget to save some of the berries because after the cupcakes cool you can frost them and add a couple berries to the top. They look so tasty and pretty too.
