SURPRISE BARS
This recipe is soooo easy and so yummy. Nobody ever believes that that base has Ritz crackers in it! I have also made this recipe using sliced almonds instead of the skor chips. (I saved some almonds to sprinkle over the chocolate layer.)

Steps:
- Heat oven to 350.
- Crush crackers to small pieces but not crumbs.
- Add Skor bits and mix.
- Pour in Condensed milk, mix thoroughly.
- Pat into 9 x 13 pan lined with parchment paper.
- Bake approx 15 minutess.
- Sprinkle chocolate chips over base.
- Return to the oven for about 2 minutes.
- Remove from oven,.
- Spread melted chocolate evenly over the top.
- Cool, cut into bars.

Steps:
- Mix first 5 ingredients with spoon.
- Stir in flour and one cup of the chocolate chips.
- Press dough into an ungreased 13x9x2 baking pan.
- Bake at 350 for 25-30 minutes.
- While dough is baking, mix remaining chocolate chips, raisins, peanuts and peanut butter in a 2 quart sauce pan.
- Heat over medium-low heat, stirring constantly until chocolate chips are melted.
- Spread over crust in pan.
- Refrigerate at least 2 hours.
- cut into bars about 2"x1".

SUPRISE BARS
I called these Suprise Bars because of the fact most people are surprised when they find out there is Zucchini in here and these are also Gluten Free! (Bet you can't eat just one!)

Steps:
- Preheat oven to 350 degrees.
- Cream butter with brown sugar and honey. Add the eggs and then the vanilla. Mix well.
- Combine all the dry ingredients together in a bowl, stir into batter. Stir in the zucchini, coconut, walnuts and chocolate chips.
- Grease a 12 x 9 pan, pour in batter and bake 35 0 45 minutes.
- Cool and enjoy!

MARS BAR SURPRISE COOKIES
This is a recipe my aunt gave me a few years ago. She sold these at a bake sale and they were gone in a few minutes. I use lard in the recipe because it makes for a more moist cookie - you can use butter if you prefer but margarine doesn't work in this recipe at all.

Steps:
- Preheat the oven to 350 degrees.
- In a large bowl beat the brown sugar and 3/4 cups of the white sugar with the lard (save the other 1/4 cup of white sugar). Add the eggs and vanilla. Add the cocoa powder and baking powder. Mix in the flour until you have formed the dough.
- Cut the mars bars into one inch cubes. Take a chunk of the dough and form it into a small cup shape in your hand. Put in a cube of the mars bar and roll the dough around it to form a ball. Roll the ball into the 1/4 cup of white sugar. Place on parchment paper on a baking sheet.
- Once you have all the cookies formed and on the baking sheet - bake for 12 minutes. Let them cool before you eat them as the melted caramel middle can burn!

PECAN PIE SURPRISE BARS (PILLSBURY BAKE-OFF WINNER)
This is the 1971 winner of the Pillsbury Bake-Off. It was created by Pearl Hall of Washington. It's described as "delicious as pecan pie" only easier to make and much more portable to eat in bar form.

Steps:
- Heat oven to 350.
- Grease 13 x 9 inch pan.
- Reserve 2/3 cup of the dry cake mix for filling.
- In a large bowl, combine remaining dry cake mix, margarine and 1 egg at low speed until well blended.
- Press in bottom of greased pan.
- Bake at 350 for 15-20 minutes or until light golden brown.
- In large bowl, combine reserved 2/3 cup dry cake mix, brown sugar, corn syrup, vanilla and 3 eggs at low speed until moistened.
- Beat 1 minute at medium speed or until well blended.
- Pour filling mixture over warm base; sprinkle with pecans.
- Bake an additional 30-35 minutes or until filling is set.
- Cool completely.
- Cut into 36 bars.
- Store in refrigerator.
