SWEET PEPPER PASTA
A sweet pepper pasta dish that's ready in 20 minutes - an ideal veggie supper

Steps:
- Cook the pasta according to pack instructions.
- Meanwhile, heat the oil in a large pan, then fry the onion over a medium-high heat for 5-6 mins, stirring occasionally, until golden and softened. Stir in the garlic and cook for a further 2-3 mins. Drain the peppers, reserving their juice, then stir into the onion. Cook for 2-3 mins to heat through. Blitz the mixture in a food processor, with 75ml/2½fl oz reserved juice from the peppers and 75ml/2½fl oz cooking liquid from the pasta, to make a chunky sauce.
- Drain the pasta and return it to the pan. Add the pepper mixture, then season to taste. Toss with the rocket or watercress while still hot, so it just begins to wilt, then serve.

SUPER SIMPLE PEPPADEW PASTA - A NEW FAMILY FAVE

- The method's easy as anything: 1. Cook your pasta. You don't need me to tell you how to do that, I'm sure. 2. Heat half the oil in a frying pan, then add the aubergines and fry until they're golden and tender. 3. Brush your Peppadews with the remaining oil and add to the pan. Fry them for around one or two minutes. 4. Mix the lemon juice and parsley all together to make a dressing and then pour it over the pasta, along with the salami, olives, asparagus, aubergines and sun-dried tomatoes. 5. Toss it all through and then leave it over the heat until it's all warm. 6. Season with a pinch of salt and pepper and, if you like (as I very much do) a sprinkle of parmesan cheese. Quick, easy and utterly yummy. This is just one of the ways the family and I have been enjoying Peppadews recently. They really are a revelation! Hope you enjoy the pasta, Lottie x

- Meanwhile, add the peeled garlic clove to a mini food processor, along with the Peppadews and fresh parsley. Blitz until roughly chopped.
- Add the lemon juice, cream cheese, Greek yogurt, and a generous amount of salt and pepper. Blitz again to produce a fairly smooth sauce (a few lumps are okay!).
- When the pasta is cooked, drain it, and add the sauce, the watercress, and the pine nuts. Mix well to combine. Place over a low heat for a minute or two, stirring constantly, to heat through, then serve.
