I just recently was given a crock pot. I love it! I made this for dinner last night and it was melt in your mouth good! I used just a 3 pound roast, I am sure any kind of roast will work fine. I also made real gravy with the juice. When I made this, I used vermouth because thats what I had, but red wine, beer or even white wine would work just as well.

4 lbs beef roast
4 medium yukon gold potatoes, cut in 2 inch pieces
1 medium white onion, quartered
2 cups baby carrots
4 celery ribs, cut in 2 inch pieces
1/2 cup dry vermouth
1 1/2 cups water
Lipton French Onion soup mix
3 garlic cloves
2 tablespoons butter
2 tablespoons flour
2 cups stock, from the pot

Steps:

  • Place meat in crock pot.
  • cover with vegetables, garlic, soup mix, vermouth and water.
  • Turn crock pot to low and cook for 7-9 hours.
  • For the gravy:.
  • Melt butter in a sauce pan.
  • add flour and whisk to create roux, cook for one minute.
  • Whisk in desired amount of liquid for you preference of gravy thickness.
  • Add pepper to taste.
  • Serves 4 with leftovers.

I got this recipe from a family friend. It is so simple that my 12 y.o. son will throw it together for me without complaining! Feel free to use any beef or pork roast you prefer. I have been known to use a chuck roast and a pork roast at the same time.

2 -3 lbs arm roast or 2 -3 lbs beef shoulder
1 1/4 ounces dry onion soup mix
3 cups water
4 -5 medium red potatoes, cubed
2 cups baby carrots

Steps:

  • Combine 1st 3 ingredients in crock pot and cook on low for 7 hours or high for 4.5 hours.
  • 45 minutes before serving add last 2 indgredients. The smaller your diced veggies the faster you can serve.

1 pound baby red potatoes, halved
1 (16 ounce) package baby carrots
1 yellow onion, quartered
1 (10 ounce) can condensed cream of celery soup
1 (1.5 ounce) package beef stew seasoning mix
1 (3 pound) beef chuck roast
1 (1 ounce) envelope onion soup mix (such as Lipton® Beefy Onion)

Steps:

  • Arrange potatoes, carrots, and onion around the edges of a 5- to 6-quart slow cooker.
  • Whisk celery soup and beef stew seasoning mix together in a bowl until smooth and creamy.
  • Heat a saucepan over medium-high heat; cook roast until browned and seared, about 3 minutes per side. Sprinkle onion soup mix over entire roast and place roast in the center of the slow cooker, surrounding it with the vegetable mixture. Spread celery soup mixture over roast.
  • Cook on Low, 8 to 10 hours.
  • Remove roast from the slow cooker and place on cutting board; let rest for 10 minutes.
  • Strain remaining liquid in the slow cooker into a bowl and whisk until smooth, about 1 minute.
  • Slice roast and serve alongside vegetables and gravy.

2-4 lb beef roast (cheaper cut like chuck or sirloin)
1 pkg powdered onion soup mix
2 can(s) condensed mushroom soup, 10.5 oz each
1 can(s) sliced mushrooms, 8 oz.
1 tsp garlic powder
1 1/2 c liquid; can combine beef broth, red wine and/or water to make 1.5 cups
salt and pepper, to taste

Steps:

  • 1. In a bowl, combine onion soup mix, mushroom soup, undrained canned mushrooms, and garlic powder. Whisk in liquid.
  • 2. Trim excess fat and bones from the roast. Place meat into bottom of Crock Pot.
  • 3. Pour soup mixture over meat.
  • 4. Cover and set Crock Pot to High. Cook for 6-8 hours until meat falls apart. Salt and pepper to taste.
  • 5. Serve over mashed potatoes or buttered noodles with a veggie on the side.
  • 6. ALTERNATE COOKING METHOD: If you don't want to wait for the Crock Pot, follow all the same steps but put meat in a covered casserole or foil covered metal pan in the oven at 325 degrees for 2.5 to 3 hours.
